And this one is even MORE, because premium means something more, which is why teas from this series have greater complexity and offer more interesting taste sensations - help yourself, you'll feel it! Sencha Fukujyu is a classicJapanese sencha - intense and grassy, something like tea broth. This tea grows on the slopes of the Fujiyama Mountains and is harvested in autumn, the stems are mechanically removed by hand, leaving only the leaves. It is carefully processed and slightly steamed before rolling and drying. The leaf acquires a very smooth and delicate structure. If you like Japanese sencha, this one will be a good choice.The infusion has a shimmering, light olive green color. He sent us samples of several coffees from China, and we chose this one… the most “coffee-like” of them all. It’s a super sweet, dense espresso with spicy notes in the background.We already have one natural from Ethiopia in our espresso lineup. But having just one is like owning a single bicycle. Technically fine… but why limit yourself?This Ethiopia is different from the one in our regular offering because there’s simply more of everything. The acidity might be higher, but the finish is longer and more complex. We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. This doesn't mean they are "small," but rather that they grow coffee on small plots of land (usually less than 2 hectares) and do not process it themselves. The harvested coffee cherries are sent to cooperatives that handle further processing at local washing stations. This is where the cherries are turned into "washed coffee."In this case, the coffee cherries are collected by the Inoi Farmers Cooperative Society, and their processing takes place at the Kaguyu factory, managed by Wilson Wanjohi. The coffee is processed using the washed method. Once delivered, the cherries are pulped to extract the seeds, fermented overnight, then washed, soaked, and dried on raised tables. The mineral-rich, red volcanic soil and the varieties used (SL-34, Ruiru 11, SL-28, Batian) give it a distinctive flavor profile: intense sweetness, high acidity, and blueberry notes.Historical Fact: Coffee arrived in Kenya only at the end of the 19th century, during the colonial era when the British began establishing plantations. Interestingly, for a long time, local farmers were not allowed to grow coffee legally. It wasn't until the 1930s that they were permitted to produce it for themselves, which today forms the foundation of Kenya's specialty coffee scene and remains a major contribution to the country's budget.
