And supposedly new, yet a safe bet.I think we order coffees from Oscar and Francisca Chacon every year. When my season for drinking coffees processed other than washed comes around, it is the Chacon family that shows how to do it best. We have had coffees from them in Alma Negra, Perla Negra, and Yellow Diamond processes – these are different "variations" of theirs on honey and natural processing – and all of them are invariably super clean in flavor. This time is no different, absolutely flawless.ABOUT THE PROCESSPerla Negra is a processing method that goes as follows: after harvesting, the cherries are transferred to the mill for grading, where only the ripest ones are selected. Then, they are moved to the greenhouse patio for drying. During the first week, the cherries are piled on top of each other in a thick layer for aerobic fermentation. After this first week, the coffee is spread across the patio, forming a thin layer until the drying process is complete. Delicious!Store in a cool, dry place.

The flavor profile features notes of strawberry, raspberry and milk chocolate.Country of origin: ColombiaRegion: Bruselas, HuilaVariety: Pink BourbonProcessing method: Chocoberry NaturalCupping score: 88 / 100Altitude: 1600 -2000 m a.s.l.ABOUT THE PROCESSThe farmer himself, Oscar Hernandez, named this processing method this way because the final taste of the brewed coffee reminded him of something right on the borderline between chocolate and currants. How did it happen? Hand-picked cherries – nothing unusual. But then – SHOCK. Thermal! The cherries were submerged in water at a temperature of 180°F (80°C) for 30 to 60 seconds. Next, the fruits were washed and underwent ozonation. The seeds were extracted, and the juicy experimenting began. Juice was squeezed from the skins of still-fresh cascara. The juice was mixed with the beans in fermentation barrels. With the help of the necessary microorganisms, the beans underwent lactic fermentation for 220 hours. After that, just 20 days of drying, and there you have it.Reading this description, you might think it would turn into pickled cucumbers, or at least kombucha. Nothing of the sort. It is sweet, juicy, and crisp. Yum.Store in a cold and dry space.

During processing, it is partially oxidized (it belongs to semi-fermented teas).Drought of heterogeneous color, in shades from olive green to brown; curled leaves. Rooibos infusion by HAYB. Its leaves resemble pine needles. Rooibos is not tea plant, therefore the infusion does not contain caffeine or tannins. The green rooibos comes from the same plant as the red rooibos, it differs only in the way the leaves are processed after harvest. Green rooibos is not fermented, so its infusion is lighter, with hints of citrus.The infusion is golden in colour, with a distinctive and spicy aroma. Thanks to the presence of red and white pepper and ginger, the taste of the brew is slightly spicy, but leaves some sweetness on the tongue. You can infuse it twice, with longer second brewing. The taste of the next infusion becomes milder, with notes of vanilla and lemon.Due to its spicy taste, it works very well in the fall and winter season. Genmaicha is a tea with the addition of roasted rice, a characteristic blend loved by the people of Japan - and in this case, also produced there.It consists of high-quality green Sencha and roasted rice. Historically, it was a product targeted at the poorest - rice was added to the leaves to increase weight. It turned out, however, that the combination of these two ingredients in the infusion is very good and so the green Genmaicha found its way into the line of classic teas.The leaves are long, narrow, olive green, with toasted rice. Light, golden infusion. The taste is refreshing, smooth, with heavier notes reminiscent of popcorn. Perfect to pair with light dishes. Earl Grey tea from HAYB. Classic Ceylon tea with aromatic bergamot oil, no artificial flavors. Where did the name "earl gray" come from? There are two theories on this subject. The first one says that the tea owes its name to Count Gray, who was to receive it as a thank you for saving the drowning son of Mandarin. The second theory, about the origin of the name Earl Gray, had its origin in cargo ships going to England. During the long journey, the green tea crates got wet, the tea began to ferment (green tea began to turn black naturally), with an unpleasant odor as a side effect. And this one is even MORE, because premium means something more, which is why teas from this series have greater complexity and offer more interesting taste sensations - help yourself, you'll feel it! Sencha Fukujyu is a classicJapanese sencha - intense and grassy, something like tea broth. This tea grows on the slopes of the Fujiyama Mountains and is harvested in autumn, the stems are mechanically removed by hand, leaving only the leaves. It is carefully processed and slightly steamed before rolling and drying. The leaf acquires a very smooth and delicate structure. Archetypes of coffees from Ethiopia. A point of reference. Ben - our importer - alongside the name Bench Maji for the farm where this coffee comes from, also uses the name Geisha Farm. This is because local farmers grow mostly this botanical variety. Check out the effect of their effort by brewing this lot. The coffee has an intensely tropical taste thanks to the processing method – anaerobic fermentation with limited oxygen access, which lasted 96 hours. This, combined with a very clean and juicy botanical variety that is geisha, gives a taste so full and fruity that it is hard to stop drinking this coffee. We should include a leaflet here like in a medicine box – you do this at your own risk, do not exceed the recommended daily dose!Store in a cool and dry place.

When Rafał joined the team and sat down with us for his first cupping, he blurted out right away: "Hey, I think you've never had a coffee from Burundi, and I like them so much!" We had, but a long time ago! So we decided to make Rafał's life a little nicer, ordered samples, and chose this (and one more!) great lot.Located in Ngozi Province, the Mubuga processing station collaborates with over 1,900 local farmers who deliver their carefully selected harvests here every year. This place stands out for its impressive technical infrastructure created for the precise processing of only the finest, fully ripe cherries. The station's facilities include as many as 12 fermentation tanks, 3 soaking tanks, over 300 drying beds, and 4 specialized tables for quality sorting.Harvesting in this region usually lasts from April to June, but this coffee's journey to your cup only begins then. Burundi is a completely landlocked country – before these exceptional beans head out into the world and reach our roastery, they must travel an extremely long, demanding, and complex route.Store in a cool and dry place.
