The producers focus on precise and responsible coffee processing, aiming to express the character of the local terroir while respecting the natural environment. During the harvest season, the farm employs around 15 people and produces approximately 5.5 tons of coffee annually from just under two hectares, cultivating several botanical varieties processed using different methods.Coffee production at this location comes with challenges such as variable weather conditions and rising operating costs. In response, the owners plan new plantings of varieties better adapted to the local climate, as well as a gradual expansion of their cultivation area. Since 2022, the farm has also been investing in the development of controlled fermentation infrastructure, which is used not only by the owners themselves but also by neighboring producers seeking to improve the quality of their coffees. This offering is another coffee from this farm in our portfolio—this time naturally processed Caturra and Red Catuai from the latest harvest in Costa Rica.ABOUT THE COFFEEAt the farm, every stage of the process is closely monitored and documented, allowing for consistent quality improvements from season to season. This lot was prepared using the natural processing method. Cherries of the Red Catuai and Caturra varieties are first placed in a water bath for flotation, during which selection takes place—only healthy, fully ripe cherries continue to the next stage, while defective fruit is removed.The cherries are then disinfected using ozone to limit the development of undesirable microorganisms. The next step is drying the whole fruit on raised beds typical of African coffee farms, under full sun. This process lasted 28 days and required regular turning of the coffee to ensure even moisture evaporation. The beans ultimately reached a moisture content of 10.5%.After drying, the coffee is placed in GrainPro bags, where it rests and stabilizes for at least one month. The final stage takes place at a dry mill, where the coffee is hulled, sorted by size and density, and subjected to electronic color sorting before shipment.Costa Rican coffees are often associated with pronounced sweetness, typically resulting from honey processing. In this case, however, we are dealing with a naturally processed coffee that dried for an extended period in full sun. The result is a very clean and transparent flavor profile, featuring notes of ripe grapefruit, plum, and dark chocolate. La Laguna stands out with an intense sweetness reminiscent of maple syrup. The body is high and almost oily, while the acidity is low and soft, with a subtle grapefruit accent. The beans are then thoroughly washed and transferred to a second fermentation tank for an additional 12–24 hours. After this stage, they pass through washing channels where lighter beans (so-called floaters) are separated, while the heavier beans are cleaned of remaining pulp.Following washing, the beans are soaked in water tanks for up to 24 hours. This stage encourages the development of amino acids and proteins, resulting in higher acidity and greater complexity of fruity notes—hallmark characteristics of Kenyan coffees.At the final stage, the beans are dried on African raised beds. Initially, they are spread in a thin layer to quickly remove about 50% of the moisture within roughly 6 hours. They are then piled more thickly and dried for an additional 5–10 days. The dried parchment coffee is delivered to the dry mill and later stored in ventilated warehouses, where it rests until it reaches a moisture content of approximately 11%.ROASTER’S OPINIONKenya Gitare presents a classic flavor profile characteristic of the Kiambu terroir. The coffee features well-developed, medium and complex acidity, balanced by high sweetness and a full, pronounced body. The aroma reveals notes of currants, candied fruit, and delicate floral accents.On the palate, blackcurrants and oranges dominate, complemented by the sweetness of candied fruits. The cup is harmonious and exceptionally well-balanced, with pleasant medium acidity and clear sweetness. The finish is long, clean, distinctly currant-forward, and deeply satisfying. Situated at a high altitude, surrounded by fertile soils and intense biodiversity, it benefits from ideal conditions for growing high-quality Arabica.Hundreds of smallholder farmers collaborate with the station, cultivating coffee on small plots, often using an agroforestry system in the shade of natural vegetation. Thanks to the high altitudes (frequently above 1,900 m a.s.l.), the cherries ripen more slowly, which translates to greater complexity and intensity of flavor.ABOUT PROCESSINGIn the case of washed coffees, the process begins with the selection of ripe, red cherries, which then go to depulpers. After the pulp is removed, the beans undergo fermentation in water — usually for 24–48 hours — which allows the remaining mucilage to break down. Next, the coffee is thoroughly washed and dried on raised beds for about a dozen days until it reaches the appropriate moisture level.The result of this process is coffee with a very clean and clear profile. Banko Gotiti is famous for lots characterized by high acidity, distinct citrus notes (often lemon or lime), floral accents, and a tea-like lightness. Notes of stone fruit and a subtle sweetness also frequently appear, balancing the whole profile.Washed coffees from Banko Gotiti are a classic example of the Ethiopian style — elegant, complex, and very transparent in flavor, perfectly reflecting the character of the Gedeb region.ROASTER'S OPINIONWashed coffees from Banko Gotiti are a classic example of the Gedeb region profile — clean, expressive, and highly aromatic. The cup is usually dominated by citrus (lemon, lime, tangerine) and distinct, juicy acidity. A very characteristic element is the floral notes — ranging from jasmine and orange blossom to more perfumed accents that give the coffee lightness and elegance.Many lots also feature fruit — both stone fruit (apricot, peach) and berries or tropical notes, complemented by a subtle sweetness reminiscent of caramel, honey, or maple syrup. And in this specific coffee, we have everything at once! The body is light and tea-like, distinctly reminiscent of green tea. The aroma is intensely floral, balanced by citrus. In the flavor, besides the floral notes of jasmine and acacia, you will find citrus, apricot, and green tea. This time, we chose the Sarchimor variety.The coffee underwent Black Honey processing, in which cherries are selectively picked and then depulped while leaving the mucilage layer intact. The beans are dried on African beds for about 20 days, regularly turned and moved to maintain maximum cleanliness of the profile and ensure even drying.The result is an espresso with deep sweetness and high body. In the cup you’ll find notes of red fruits and caramel sweetness. The texture is velvety, the acidity lively yet harmoniously balanced—creating a bold, sweet-fruity shot that works beautifully both on its own and with milk.About the farmThe mill began operating in 2012 with a small depulping machine and a few African drying beds, where all the coffee was 100% sun-dried. The first single varieties Marvin experimented with were Caturra and Millennium.The mill, named “Reina Elizabeth,” pays tribute to the farm’s previous owner, Elisa Alfaro Hidalgo (1928–2016), who was Marvin’s mother. Doña Elisa had strikingly blue eyes, which led locals in San Luis to claim that only a queen could have such eyes—hence the nickname “Reina Elizabeth.” In addition to her remarkable eyes, her kindness and the farm’s specialty coffee were also truly royal.Store in a cold and dry space.

The farm was designed not only to produce exceptional coffees, but also to welcome visitors into the natural beauty and traditions of Cauca. Ecological trails wind through the plantation, biodiversity thrives, and comfortable cabins offer guests a quiet place to rest after a day on the farm.Life on the farm follows the rhythms of the coffee trees. Throughout the year, the alleys between rows are trimmed several times to keep competing plants from stealing sunlight, water, and nutrients. Before fertilization, each tree is carefully cleaned to maximize nutrient absorption. The team also practices Re-Re, an old but essential method of collecting ripe, overripe, and fallen cherries after harvest. This keeps pests like the coffee berry borer under control and protects the next crop.Fertilization is guided by annual soil analyses, tree development, and productivity. Weather, especially rainfall shaped by El Niño and La Niña, determines how and when nutrients are applied, but the goal is four fertilizations each year. Alongside these applications, the team spreads organic compost made from coffee byproducts at least once annually to enrich the soil and support long-term sustainability.ABOUT THE COFFEEHarvest begins in May and runs through August, with a smaller mitaca harvest in November and December. Skilled pickers—around seven per hectare at peak—move through the farm every two to three weeks, selecting only the deep red, fully ripe cherries. After picking, the cherries undergo Balceo, a water separation process that removes unripe or defective fruit.From the farm, the cherries travel in a refrigerated truck operated by Área 18, arriving at Banexport’s processing facility in Popayán within 24 hours. The crates remain cool and well-ventilated to slow microbial activity and prevent unwanted fermentation.At the mill, each lot is weighed, registered, and sampled. A 1-kg sample undergoes detailed analysis to determine the best processing method; for this particular lot, a Washed process was chosen. After cleaning and sorting, the fruit is pulped and the beans are moved into a stainless-steel bioreactor equipped with full environmental controls-oxygen flow, temperature, pH, °Bx, and pressure. Pink Bourbon thrives here: an oxygen-rich environment encourages the natural yeast strains of the variety to multiply, creating aromatic precursors that bring out its floral and fruity character. After 48 hours, the coffee is washed three times.These controlled microbial shifts shape the sensory profile of the coffee, accentuating the bright, delicate, and complex attributes that Pink Bourbon is known for.Drying is one of Cauca’s greatest challenges. Unlike the long dry seasons of Africa, humidity here often exceeds 60–80%, and annual rainfall can surpass 1,000 mm. To overcome this, Área 18 uses electric dehydrators that combine heat, cold air, and dehumidification. Their intelligent control system runs continuously, allowing the coffee to dry evenly in just two days without compromising flavor.Once dried, the coffee rests in fique bags lined with GrainPro for 15 days, stabilizing moisture and ensuring uniform quality before export.Store in a cold and dry space.

When Alberto Guardia took over the farm in the 1970s, he focused on coffee as the main source of income and began a transformation that forever changed its character.A pivotal moment came in 1999 — during the price crisis, Alberto decided to invest in his own mill and alternative processing methods like natural and honey. That’s when Hacienda Sonora became a pioneer of quality in a country historically known almost exclusively for washed processing.Today, the farm is co-managed by Alberto’s son, Diego Guardia, who blends family traditions with a modern approach to quality, experimentation, and selection. Over 80 hectares are dedicated to more than 20 botanical varieties, each treated as a unique project.ABOUT THE COFFEEThis exceptional batch is SL28 — a legendary variety known for its incredible purity and elegance, especially in Kenya, but under Hacienda Sonora’s conditions, it achieves extraordinary clarity and finesse. Grown at an altitude of about 1300 meters above sea level, it offers a cup full of juiciness, delicate structure, and refined sweetness.The natural processing was carried out with great precision: selectively picked cherries are first separated by floatation, then dried whole on black tarps for about 12 days, with full control over airflow and humidity. After the initial drying, the coffee matures, undergoes final drying at low temperatures (up to 35°C), and then rests for two months before being hulled and hand-sorted.In the cup, the coffee is light, juicy, and incredibly clean for a natural – with dominant notes of raspberry and ripe melon, complemented by a delicate, tea-like tannin of black tea. The finish is long, elegant, and sweet, with no heaviness or excessive fermentation. This is a natural in the Hacienda Sonora style: precise, harmonious, and incredibly drinkable.We always roast the coffee fresh, so when it arrives to you, it’s just a few days old. Lots from this very farm placed 5th in the Cup of Excellence 2019, confirming it as one of the most respected terroirs in the country.The family prioritizes biodiversity, full self-sufficiency, and minimal water usage. The entire production chain — from harvesting and processing to export — is managed by the family themselves, without intermediaries.ABOUT THE COFFEEThis is an exceptional lot of Caturra, processed through anaerobic fermentation and dried in the fruit. The method enhances juicy fruit character and deep sweetness, resulting in a profile full of cherry, dried plum, and praline-like creaminess.The cup is smooth and elegant, with a long, sweet finish — ideal for filter brewing.Cherries are selectively handpicked and then placed in sealed tanks for anaerobic fermentation, where they remain in controlled, oxygen-free conditions. This process gives the coffee deeper color, intensity, and a dessert-like character. The fruit is then naturally dried to concentrate sweetness and aromatics.The result? An intense, juicy, velvety coffee with beautifully developed stone fruit acidity.Our rice paper packaging reflects the Kaizen philosophy of continuous improvement in harmony with nature.
