It goes down like the best dessert and is completely easy on the acidity, because after all that crazy co-fermentation, the beans rested nice and slow on African beds. Manufacturer: HERESY

Roasting date: 07.04.2026

Whole-bean specialty coffee from Colombia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of passion fruit, mango, yogurt, hard candies, flowers and champagne.Origin: ColombiaRegion: TolimaFarm: Elias & Shady BayterVariety: SidraProcessing: Anaerobic Natural + MosstoAltitude: 1500 m a.s.l.Cupping score: 90 / 100 ABOUT THE FARM AND COFFEE PRODUCEREl Vergel is a relatively young farm, as its first harvest took place only 10 years ago. However, the Bayter family has rapidly transformed the plantation into one of the most advanced in the industry in terms of complex processing and the cultivation of a wide range of selected, highly sought-after botanical varieties, such as Geisha, Pink Bourbon, Laurina, and Pacamara.Currently, ongoing research on bacteria and yeast is being conducted at El Vergel to achieve even greater precision in controlling fermentation and, consequently, modulating flavor. In addition to coffee production, the Bayters are the founders of Forest, a company involved in both the export and import of green coffees, which means we were able to purchase this coffee without the involvement of intermediaries.ABOUT COFFEE PROCESSING AT THE FARMSidra variety, hand-picked, fermented as whole cherries for 72 hours with limited air access, with the addition of must from the fermentation of another botanical variety, Java. This must is a liquid that is produced as a byproduct of coffee fermentation and contains a high concentration of microorganisms—bacteria and yeast. Their increased presence lowers the starting barrier of fermentation, making it more intensive and faster. The result? More intensive formation of metabolites, which have a direct impact on the final, more complex and deeper profile in the brew. The coffee is dried in two stages—first mechanically for 4 days in a temperature-controlled environment, then for 18 days on raised beds. It is homogenized for 30 days in plastic bags.ROASTER'S OPINIONOne of those coffees where you take the first sip and specific descriptors come to the tongue faster than you can consciously think of them. In our case: mango-passion fruit yogurt, without a doubt!ROYAL BEANSWhat’s behind the name Royal Beans? If Speciality beans are the pinnacle of coffee, our Royal Beans reach the Himalayas! In this series, we present the very top of the coffee pyramid, the crème de la crème, as precious as crown jewels. Anaerobic, Gesha, Nanolot, Lychee – what does it mean to go beyond the ordinary? – Royal Beans is a selection of coffees chosen by us from various roasters – they share exceptional flavor, limited production, unique processing methods, and the highest quality. A treat for coffee connoisseurs (and those aspiring to be)!

The cherries come from small family farms with an area of less than 1 hectare. These farms are located in parishes—local administrative communities consisting of 7 to 12 villages, often with as few as 200 inhabitants. Farmers typically work in groups led by a designated leader. The harvest of East Ugandan coffee takes place from August to January. In lower-lying areas, the season falls between August and October, while at higher altitudes, it lasts from September to January. Farmers sell their cherries at small collection points or deliver them directly to the washing station. There, the fruit is sorted and then—depending on the method—sent for depulping (washed process) or to the drying yard in Mbale (natural process).ROASTER'S OPINIONSurprisingly sweet, with notes of chocolate and almond, complemented by a light hint of forest and stone fruits. They are constantly improving processes, planting new varieties, and taking care of what they already have. La Soledad and El Lano are coffee farms (the latter also managed by Raul), but also brands trusted by large roasters worldwide, businesses that were already active when we used to call bread "bep." Distinct notes of red fruits blend with honey-like sweetness and a caramel finish.V60 RECIPEWater temperature: 95°CWater amount: 300 gCoffee amount: 21 gGrind size: 7 (Fellow Ode II)Pre-infusion: Pour 75 g of water from 0:00 to 0:10.Second pour: Up to 150 g from 0:30 to 0:40.Third pour: Up to 225 g from 1:00 to 1:10.Fourth pour: Up to 300 g from 1:30 to 1:40.The total drawdown time should finish around 2:10 - 2:20.
Trigger - Kenya Rutuma Sleeping Bag Filter 250 g

Manufacturer: TRIGGER

Roasting date: 17.04.2026

Whole-bean specialty coffee from Kenya, roasted by Trigger roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of nectarine, blackberry, tea and chocolate.Origin: KenyaRegion: RutumaFarm: RutumaVariety: SL28, SL34, Ruiru 11Processing: Anaerobic Natural (Sleeping Bag)Altitude: 1700 - 1720 m a. s. l.Cupping score: 88 / 100 ABOUT THE FARMThe Ndurutu washing station, owned by the Rutuma Cooperative in Nyeri, has been operating for many years and serves as an important hub for local producers who deliver their coffee cherries for processing. The coffee is fermented anaerobically as whole cherries and then sun-dried using the “sleeping bag” method under carefully controlled conditions. This allows for better control of fermentation and the development of aromatic complexity.ROASTER’S OPINIONKenyan coffees processed using the sleeping bag method are still rare, which is why this lot immediately caught my attention. Whole-cherry fermentation combined with controlled drying resulted in an unusual profile that is softer than classic washed Kenyan coffees. In the cup, you’ll find notes of nectarine, blackberry, and tea, with a subtle chocolate accent in the background. The acidity is medium and well-balanced, and the overall profile is very clean and cohesive for a natural process. This coffee shows a different side of Kenya: less aggressive, more juicy and calm, yet still full of character. It performs beautifully in pour-over methods and is very rewarding on the cupping table.BREW RECIPEV60Water temperature: 95°CWater: 300 gCoffee: 21 gGrind size: 7 (Fellow Ode II)1. Bloom: 75 g water, 0:00–0:102. Pour to 150 g, 0:30–0:403. Pour to 225 g, 1:00–1:104. Pour to 300 g, 1:30–1:40All water should finish dripping through at approximately 2:10–2:20.

This lot is an example of a modern approach to the process. Oxidation, anaerobic fermentation, thermal shock – everything is done consciously to build intensity without losing control. In the cup, it is much more expressive than in the Geisha. Tangerine, tropical notes, and a slightly winey character.ROASTER'S OPINIONMore dynamics, more layers, yet still clean. A light and very clean coffee for batch brew, focused on a distinct jasmine character. This is one of the most unique profiles we’ve had in this category – Trigger.A great choice if you are looking for something lighter, more tea-like, and less traditionally coffee-forward. Exceptionally clean, floral, and approachable, especially in batch brew.ROASTER'S OPINIONThe base is co-fermented Indonesian coffee with Jasmine, which we paired with a washed Ethiopia – this provided structure and balance.
