Region: Huila

Farm: El Divisio

Processing: Washed Anaerobic

Cupping score: 89 / 100

Variety: Bourbon Aji

ABOUT THE COFFEE

El Diviso is Nestor Lasso's farm, one of the most progressive in Colombia when it comes to working with fermentation. This lot is an example of a modern approach to the process. Oxidation, anaerobic fermentation, thermal shock – everything is done consciously to build intensity without losing control. In the cup, it is much more expressive than in the Geisha. Tangerine, tropical notes, and a slightly winey character.

ROASTER'S OPINION

More dynamics, more layers, yet still clean. This is a competition-grade coffee, but in a different style – more "new school."
