For many Ethiopians, coffee is a symbol, a source of national pride, and a way of life – and Nguisse, a finalist in last year’s Cup of Excellence, is certainly part of this group. His small farm of around 8 hectares is located in Bensa, which we consider one of the best regions in Ethiopia when it comes to quality potential. The farms here rise well above 2000 meters above sea level and are often planted with carefully selected, single botanical varieties.ABOUT THE PROCESSThis is a classic natural process, a method that originated in Ethiopia, where coffee seeds are dried inside the whole cherry. Freshly picked cherries go through an initial selection to remove any with defects. The chosen cherries are then spread out on so-called “African beds” – long raised tables, sometimes stretching dozens of meters, with mesh foundations that allow air to circulate freely. This ensures even airflow throughout the process and results in consistent drying. Depending on the weather, the drying takes between 25 and 30 days.ROASTER’S NOTESThis January marked our second visit to Ethiopia, but it was the first time we purchased coffee directly from Nguisse. Every summer, we eagerly await the arrival of the Ethiopian container, and this year’s lot from Bensa didn’t disappoint. This ultra-sweet coffee tastes just as good now as it did months ago on the cupping table in Addis Ababa – dense and creamy in body, with ripe blueberry, floral, and citrus notes. All wrapped in the winey character so typical of both the process and the region.COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. Only 400 years later (in the 16th century) did the Japanese improve its flavor by shading the tea bushes from the sun for several weeks before harvesting the leaves, which made Matcha much less bitter. The Japanese tea ceremony with Matcha was an essential part of Zen Buddhist monasteries, and over time, the Shogun class also adopted it. The “new” method of Matcha production, still practiced today, was developed in 1738 by Sohen Nagatani. Thanks to his work, tea became popular among other social groups as well. Thanks to fertile volcanic soils, a moderate climate, and regular rainfall, the region offers excellent conditions for the slow ripening of coffee cherries, which translates into a rich flavor and beautiful acidity in the beans. The farms lie at elevations ranging from 1,400 to 1,900 meters above sea level, and farmers apply sustainable practices that care for both soil health and the environment.The production process in Etago is based on precision and attention to detail. Experienced farmers hand-pick only ripe cherries, which are then delivered to the washing station. There, they are sorted, soaked, and undergo a 96-hour fermentation with regular pH monitoring. Afterward, the coffee is dried for 21 days on raised beds until it reaches an optimal moisture content of 12%. Once dried, the beans are stored in a temperature-controlled warehouse until sale.Despite favorable climatic conditions, farmers in Etago face challenges such as unstable market prices, climate change, and pests. To increase crop resilience and improve yields, they have introduced modern methods, including intercropping, new coffee varieties, and irrigation systems. Water conservation also plays a key role — through rainwater harvesting, drip irrigation, and mulching to reduce evaporation.Thanks to the combination of tradition, innovation, and care for the environment, coffee from Etago stands out for its exceptional quality and flavor.ROASTER’S NOTEKenya is probably the only — or one of the very few — countries where anaerobic processing still sparks quite a lot of controversy. First, until just a few years ago, coffees processed in ways other than washed were a true rarity, and often such experiments happened when something went wrong with the washed process. Second, anaerobic or carbonic coffees from Kenya remain extremely uncommon, as farmers are generally not big fans of processing experiments.Etago, however, is unique. On the one hand, despite the anaerobic process, the coffee still preserves the qualities typical of washed Kenyan coffees: a pronounced citrus–apple acidity, noticeable peach and lemon notes, and a subtle blackcurrant vibe. On the other hand, it brings out a distinct chocolatey sweetness and dark malt notes reminiscent of a fizzy, dark Guinness. The whole profile is well-balanced, with a high, round, and syrupy body. This is a very interesting Kenyan coffee, where anaerobic processing has not overwhelmed the terroir-driven character.RECIPEDripper:Kenya Etago is easy to brew, and this recipe allows for proper extraction. Use 19 grams of coffee, ground to 20 clicks on a Comandante grinder, with water at 93–94°C, and pour as follows:0:00 – 50 ml (light swirl)0:30 – 120 ml1:00 – 180 ml1:30 – 240 ml2:00 – 300 mlIf you want to highlight more of the sweet, malty notes and slightly balance out the acidity, grind a little finer and raise the brewing temperature. There’s plenty of caramel and milk chocolate, sure — but it also has a jammy note. Not a sad, bluesy kind of jam, but a juicy, fruity one — packed with ripe red strawberries!A few words about the farm:This coffee comes from a farm that was established in 2017. In 2021, it expanded with two additional estates — Fazenda Buriti and Fazenda Arcos, neighboring Santo Inácio. The effort quickly paid off: in 2021, Marco’s coffee placed 3rd in a competition for the best fermented coffee in the cooperative. In 2023, his coffees were awarded again — 2nd place in the natural category, and 3rd place in the Elas no Café competition in the Cerrado region.But it’s not about the awards — it’s about the hard work of the farmers, which was rightfully recognized through this project. There’s plenty of caramel and milk chocolate, sure — but it also has a jammy note. Not a sad, bluesy kind of jam, but a juicy, fruity one — packed with ripe red strawberries!A few words about the farm:This coffee comes from a farm that was established in 2017. In 2021, it expanded with two additional estates — Fazenda Buriti and Fazenda Arcos, neighboring Santo Inácio. The effort quickly paid off: in 2021, Marco’s coffee placed 3rd in a competition for the best fermented coffee in the cooperative. In 2023, his coffees were awarded again — 2nd place in the natural category, and 3rd place in the Elas no Café competition in the Cerrado region.But it’s not about the awards — it’s about the hard work of the farmers, which was rightfully recognized through this project. I said, “Come on, that’s a bit much.” We cupped it — and I have to admit, it’s a solid 87, maybe even 88. Totally agree.The farm is run by Willy, a young guy we’ve had the pleasure of meeting. We’ve already had other coffees from his farm at HAYB — those previous lots were called Mahembe. Willy also runs a washing station, which means he doesn’t have to transport his cherries elsewhere. Thanks to that, he has full control over the entire process — from harvest all the way to shipping the coffee to us.Why did I say this coffee deserves a solid 87 points? Everything is perfectly in place. The flavor is complex, reminiscent of blueberries or wild berries (honestly, for me, it tastes more like blueberries than many co-fermented coffees). coffeedeskpl 🌿 Skąd się ulągł ten Oolong? Ano z tej krainy, gdzie zielona herbata spotyka czarną, a razem tworzą coś pośrodku - pół na pół, ale wcale nie przeciętnie. Oolong od @haybcoffee to herbaciany złoty środek: delikatny, prażony, lekko orzechowy i z takim charakterem, że po pierwszym łyku masz ochotę nalać drugi (i trzeci… bo serio, z każdym parzeniem robi się ciekawiej). Jego liście są jak jesienne liście na spacerze - trochę zielone, trochę brązowe, zawsze piękne. Napar? Jasny, słomkowo-złoty, czysty i słodkawy. Idealny, żeby zwolnić tempo i zanurzyć się w chwilę.
