COFFEE



The Karani Factory was established in 1998 on the grounds of a former farm of the same name. The region is known for its fertile clay-loam soils and favorable climate, with views of the snow-capped peaks of Mount Kenya. Farmers hand-sort the cherries before processing, ferment the beans overnight, then wash and dry them on raised tables for 9–15 days. The cooperative brings together around 1,200 farmers who use natural fertilizers made from coffee pulp and manure.




ROASTER’S NOTE



This is a classic example of Kenyan precision in processing and flavor clarity. A distinct citrus acidity meets elegant sweetness and floral notes. Kabare is a coffee that offers a clear, fresh profile in the cup and works wonderfully as an everyday coffee for those who enjoy intense flavor experiences.




RECIPE



AeroPress:



Water: 100–120 ppm, 150 g, 80°C


Grind: Fellow Ode 2, setting 7


Coffee dose: 17 g



Inverted method. Add coffee, pour water, stir 3 times, attach the filter cap with a double filter. Press through at 0:45–1:00.
