The natural process of this coffee involves a meticulous selection of cherries, 85% of which are perfectly ripe. After harvesting, the cherries are submerged in water to remove any floating fruit, then soaked for 4 hours. They are then slowly dried on raised beds for 35 days in the shade, allowing for controlled fermentation and the development of an exceptional flavor profile.
