These extreme conditions favor slow fruit maturation and the building of a complex flavor profile.The Caturra variety is also not among the most common there — it accounts for about 20% of total coffee production in Peru, which makes lots of this type even more interesting and unique. Peru as an origin is often underestimated and overlooked by consumers, which is why we regularly try to include at least one coffee from this country in our offer. This time, it is the beans from Ismeria Leon.In the aroma, the coffee is fresh and fruity — green apple clearly dominates, complemented by delicate cranberry and caramel sweetness. On the palate, the profile remains very consistent: juicy apple appears in the foreground, enveloped in caramel, with hints of cranberry and grape.The whole has a medium, round body and low, smooth acidity reminiscent of an unripe apple. The sweetness is high and caramelly, and the aftertaste is medium-long, pleasantly sweet, and balanced. This is a coffee with very good balance and a clean profile — definitely an example of how good Peru can be.RECIPEWe recommend brewing this coffee using a dripper — from Hario or Origami. Situated at a high altitude, surrounded by fertile soils and intense biodiversity, it benefits from ideal conditions for growing high-quality Arabica.Hundreds of smallholder farmers collaborate with the station, cultivating coffee on small plots, often using an agroforestry system in the shade of natural vegetation. Thanks to the high altitudes (frequently above 1,900 m a.s.l.), the cherries ripen more slowly, which translates to greater complexity and intensity of flavor.ABOUT PROCESSINGIn the case of washed coffees, the process begins with the selection of ripe, red cherries, which then go to depulpers. After the pulp is removed, the beans undergo fermentation in water — usually for 24–48 hours — which allows the remaining mucilage to break down. Next, the coffee is thoroughly washed and dried on raised beds for about a dozen days until it reaches the appropriate moisture level.The result of this process is coffee with a very clean and clear profile. Banko Gotiti is famous for lots characterized by high acidity, distinct citrus notes (often lemon or lime), floral accents, and a tea-like lightness. A very characteristic element is the floral notes — ranging from jasmine and orange blossom to more perfumed accents that give the coffee lightness and elegance.Many lots also feature fruit — both stone fruit (apricot, peach) and berries or tropical notes, complemented by a subtle sweetness reminiscent of caramel, honey, or maple syrup. And in this specific coffee, we have everything at once! The body is light and tea-like, distinctly reminiscent of green tea. The aroma is intensely floral, balanced by citrus. Located in the Kayanza region, it has been famous for years for Red Bourbon lots from local farmers, which stand out due to their natural, high sweetness, often balanced by caramel and fruit accents. These are profiles with low to medium acidity and a medium to high, pleasantly sticky body.In the case of this specific lot from the current harvest, the character remains very consistent with what we usually expect from Nemba. The aroma is dominated by berries, caramel, and citrus — above all lemon, which gives the whole profile freshness and lightness. In the flavor, distinct blackcurrant, juicy blueberries, and again lemon and sweet caramel appear, building a harmonious, well-balanced structure.The body is medium, but distinctly sticky and oily, which adds fullness and depth to the coffee. The aftertaste remains long, caramelly, and pleasantly sweet, while the acidity is low, smooth, and perfectly highlights the high natural sweetness.RECIPEUse your favorite AeroPress recipe.
