The lot consists of the Bourbon, Catuai, Pache, and Anacafe 14 varieties grown at an altitude of 1,600–2,000 meters above sea level.Only fully ripe cherries from the highest parts of the plantation are selected for processing. They undergo anaerobic fermentation for 120 hours in sealed bags equipped with a carbon dioxide release valve.
