Sinaloa is located in Huila; it is a small region bringing together about 80 farmers. The strawberry co-ferment we have here is made using dried fruit, which, in addition to the flavor—which is not as heavy as in typical co-ferments—gives us a rich aroma.



ROASTER'S OPINION


Colombia Sinaloa is an elegant co-ferment that will appeal to anyone who loves celebrating summer. Liquid strawberry. Extreme sweetness in pour-over, grandma's compote in drip, and strawberries and cream if you decide to brew espresso from these beans and make a flat white. All of this is balanced by chocolate notes in the background and wrapped in a tea-like body, which reveals itself particularly in a medium-long and extremely pleasant aftertaste.



RECIPE: 15g coffee / 250g water at 94°C

  1. Blooming: pour 70g of water for 45 seconds
  2. Add another 60g of water within 30 secondsAdd another 120g of water in under a minuteTotal time: 2:30
