S. C. Cambraia from Fazenda Mundo Novo in the Campo das Vertentes region of Brazil. He is a producer from a family-run, multi-generational coffee plantation who develops the farm with a high awareness of quality and respect for the terroir. Fazenda Mundo Novo is not just a random address on the map, but a place with a clearly established work standard.Although the farm's name is Mundo Novo (also the name of a botanical variety), the variety of this specific lot is Yellow Catucaí. It is valued for its sweetness, good structure, and a clean, organized sensory profile.This is a natural process managed with great control. The cherries were hand-picked at the optimal moment of ripeness and then spread in a thin layer on the patio that same day to begin drying. These are names that genuinely matter on the competition scene. Coffees from El Diviso have won the World Barista Championship, and lots from Johan Vergara regularly appear in the routines of world-class competitors. In practice, this means one thing: the raw material is predictable, clean, and produced to meet the highest standards.This is a deliberate combination of two varieties. Tabi brings structure and elegance, often expressed as a more tea-like clarity and a stable, citrus-fruit acidity, while Yellow Colombia adds sweetness and juicy, ripe fruit character.Formally, this is a washed coffee, but processed in a way that strongly shapes the flavor profile. First, the fermentation is two-stage: an initial aerobic phase, followed by anaerobic submersion, designed to emphasize stone fruit notes (peach, apricot) rather than heavy, wine-like flavors. Therefore, this lot combines a good origin with processing infrastructure that has a real impact on the quality of the cup.VARIETYRed Bourbon is a variety valued for its high sensory quality and distinct character. Under the right conditions, it yields sweet, complex, and very clean coffees. In this version, it shows a profile based on intense fruit and deep sweetness – with notes of strawberry, blueberry jam, and sweet cherry.This is a natural process coffee with multi-stage, controlled fermentation.Ripe cherries are first harvested and submerged in water to discard lighter, floating beans. The producer is Fernando Vargas, a third-generation coffee farmer. The farm covers 12 hectares, of which 11 hectares are dedicated to coffee.Fernando Vargas purchased the farm in 2011 and gradually developed it towards the production of specialty coffee. Pink Bourbon was introduced to the farm in 2017 and currently makes up about 30% of the crops. Other varieties grown include Colombia Amarillo and Caturra.Pitalito is one of the most highly regarded coffee production areas in Huila. The growing conditions favor coffees with high sweetness, complex acidity, and good structure.ABOUT THE VARIETYPink Bourbon is an Arabica variety particularly associated with Huila. It is valued for its high sweetness, good structure, and a profile that often combines red fruits, tropical fruits, floral notes, and delicate spiciness.In this coffee, the variety delivers a distinctly fruity profile, but it is not one-dimensional. Alongside the fruit, there are notes of caramel, cinnamon, and chocolate, which build a greater depth in the brew.ABOUT THE PROCESSINGRipe coffee cherries are hand-picked and then placed in a water tank. This step allows for the separation of lower-density cherries, which float to the surface. After selection, the coffee undergoes about 12 hours of controlled contact with oxygen.Next, the cherries are depulped, and the beans, with some of the mucilage left on them, undergo 36 hours of dry aerobic fermentation. During this time, the coffee is regularly mixed to reduce the risk of overheating and to maintain a more even process. After fermentation, the coffee is washed and dried for about 15 days in a covered drying house. The farm covers 6 hectares, 5 of which are dedicated to coffee cultivation, and the trees in this lot are around four years old.The farm is managed by Vladimir and his family, and the entire process, from harvesting to drying, takes place on-site and under their direct supervision. The harvest season runs from April to December and is based on selective hand-picking to maintain consistent quality and uniformity of the cherries.ABOUT THE COFFEEGesha is a variety strongly associated with exceptional quality and a very high sensory potential when grown at high altitudes. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions.This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries.After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats.After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. It is then dried on raised beds for 15–17 days and stabilized in GrainPro bags for 10–15 days. Around a decade ago, with the aim of participating in the prestigious Cup of Excellence competition, the farm began experimenting with varieties other than those traditionally grown in the region. For the past seven years, the farm has actively participated in this competition, achieving significant success, including second place in 2021. Don Linarco has been involved in coffee cultivation since his youth, working on the family farm. In 2014, after inheriting the land, he started his independent journey as a coffee producer. With great passion, he developed his skills across the entire production process, from sensory assessment (cupping) to coffee processing methods. Today, Don Linarco produces coffee using various techniques while also managing other farms.ABOUT THE VARIETYBourbon Sidra is an exceptional coffee variety, being a hybrid of two esteemed lineages: Bourbon and Typica (or according to some sources, Gesha). It is most commonly cultivated in Ecuador and Colombia. It is characterized by a complex flavor profile, where one can often find notes of tropical fruits, citrus, and florals, complemented by a delicate sweetness. The whole profile is completed by a bright, vibrant acidity and a clean finish. Due to its uniqueness and rarity on the market, this variety is frequently used in barista competitions.THE PROCESS The coffee cherries are hand-picked and carefully selected. They are then subjected to a washing process, during which floating cherries are removed from the surface of the water. The next stage is a 90-hour fermentation in hermetically sealed barrels. After fermentation, the cherries are dried under cover for about 28 days, and the final stabilization lasts for 15 days.A coffee for explorers. Lightly roasted, with dark fruits in the aroma. Its captivating and complex flavor profile is characterized by floral notes, fruitiness, juicy acidity, and honey-like sweetness.This exceptional coffee was produced using a method developed at El Vergel Estate, employing Aspergillus oryzae, a fungus renowned for its ability to enhance flavor profiles. The innovative process involves cultivating the fungus on steamed rice for 3–4 days. Once fully developed, the rice is harvested, dried, and ground into a fine powder. This powder is then evenly spread over coffee cherries placed on raised beds. Ensuring oxygen exposure is crucial, as it enables the fungus to grow and transform the fruit.During a 24–72 hour aerobic fermentation, the koji culture develops, covering most of the cherries and intensifying their flavor complexity. After fermentation, the cherries are dried in two stages: first for 10 days under the sun, followed by 2–4 days of mechanical drying at a controlled temperature not exceeding 38°C to preserve the coffee’s delicate characteristics. It is one of three stations belonging to the Rungeto Farmers’ Cooperative Society, alongside Karimikui and Kiangoi.Approximately 850 smallholders deliver cherries to Kii. The average farm size is around 0.5 ha, meaning production relies on a large number of small family farms. Coffee grows here alongside avocado, macadamia, and banana trees, and farmers also cultivate crops for their own consumption on the same plots, including beans and potatoes.Rungeto has been working with producers for years on agronomy and the quality of delivered cherries. Kii is also among the stations with high farmer loyalty, which has a very practical significance: good cherries are regularly delivered to the same station, rather than being sold wherever a better price happens to appear.ABOUT THE VARIETALThis lot contains SL28, SL34, and Batian. This is a set very characteristic of modern coffee production in Kenya.SL28 and SL34 are strongly tied to the history of the Kenyan coffee sector. Both selections were introduced in the 20th century and remain an important part of cultivation in central Kenya to this day. They yield good results at high altitudes, but are also susceptible to certain coffee diseases.Batian is a much younger varietal. It was introduced in Kenya in 2010 as a response to issues with Coffee Berry Disease and coffee leaf rust. Its goal was to combine strong quality potential with higher resistance and better productivity.The name of this coffee also includes "AA". This is neither a varietal nor a taste grade. AA is the Kenyan designation for bean size—it applies to the largest fraction separated during sorting.ABOUT THE PROCESSINGThis is where this lot deviates most from what Kii is usually associated with. The station's standard production is based on washed processing. Cherries are sorted, depulped, fermented, washed, and then the parchment is dried on raised beds.This lot was prepared as Natural. In this method, the bean dries inside the whole fruit. The skin and pulp remain on the seed for a significant portion of the drying process and are removed only later.This is a completely different way of processing than the classic Kii washed. That is precisely what makes this coffee interesting. Not because Natural in itself is rare—in Brazil or Ethiopia, it is a standard part of production. In Kenya, the situation is different. It is located in the Kirinyaga region, Kagumo area, at the foothills of Mount Kenya. Coffee cherries are delivered to it by over 1,700 small-scale producers who grow coffee mainly on small plots of land.The crops are situated at an altitude of approximately 1,700–1,800 meters above sea level. The region is characterized by red volcanic soils, good access to water, and conditions that favor slower ripening of the fruit. Longer ripening can support the development of sweetness, acidity, and a more complex sensory profile.This is a classic Kenyan production model: small farms, a central washing station, fruit selection, and a consistently managed process. Simple. Effective. Good.ABOUT THE VARIETYThe dominant varieties are SL28 and SL34. These are classic Kenyan Arabica varieties, valued for their high sensory potential, especially in terms of vibrant acidity, fruitiness, and the structure of the brew.Batian and Ruiru 11 may also appear in smaller quantities, which are varieties introduced, among other reasons, for the plants' greater resistance to diseases. However, the character of this coffee is primarily built by SL28 and SL34.ABOUT THE PROCESSINGAfter harvest, the coffee cherries are delivered to the station and sorted. Then, the skin and part of the pulp are removed from the fruit, and the beans undergo fermentation, washing, and drying on raised beds.
