Its natural sweetness and fruit-floral base handle intensive fermentation well, without creating heaviness in the cup. As a result, the banana aroma does not overpower the coffee’s flavor — it enhances and defines its character.First, the cherries undergo 48 hours of fermentation in sealed bags. They are then depulped, with the beans left covered in a layer of mucilage. The next stage is co-fermentation with yeast and natural banana aromas, lasting about five days.
