To reach this intent, Le Piantagioni opted for a single origin, 100% Mexican and water decaffeinated coffee. The water caffeine removal process is a gentle, 100% chemical free process which preserves all the qualities of the coffee. To remove caffeine, the beans are exposed to steam, soaked in water.

The harvested cherries are dried on the farms for around three weeks. After the removal of the jenfel layer and careful hand sorting, the green beans are transported to a dry processing facility in Addis Ababa, where they undergo the final stages of processing.
