The coffee itself comes from Finca La Valentina, a four-generation farm in the Montecillos region of Honduras. It is run by Carlos Ernesto Mejía Rodríguez, and the name is no coincidence—it was given in honor of his daughter, Valentina. The farm sits at around 1,600 meters above sea level, where coffee is produced on 22 hectares with care, patience, and deep respect for nature.
During harvest, only perfectly ripe cherries are hand-picked. The honey process preserves natural sweetness, while slow drying on sunny patios gives the coffee a soft, pleasantly balanced character. In the cup, you’ll find notes of dark grapes and berries, rounded out by a cookie-like sweetness. This is a coffee that doesn’t need to shout to be remembered. It’s perfect for shared mornings, long conversations, and moments you’d like to slow down just a little.
