Coffees from El Diviso have won the World Barista Championship, and lots from Johan Vergara regularly appear in the routines of world-class competitors. In practice, this means one thing: the raw material is predictable, clean, and produced to meet the highest standards.This is a deliberate combination of two varieties. Tabi brings structure and elegance, often expressed as a more tea-like clarity and a stable, citrus-fruit acidity, while Yellow Colombia adds sweetness and juicy, ripe fruit character.Formally, this is a washed coffee, but processed in a way that strongly shapes the flavor profile. First, the fermentation is two-stage: an initial aerobic phase, followed by anaerobic submersion, designed to emphasize stone fruit notes (peach, apricot) rather than heavy, wine-like flavors. He runs a 6.46-hectare farm in Biloya together with his wife and son. The family has owned this land since the 1970s, and since 2019 they have operated under their own export license, allowing them to sell coffee directly without intermediaries.Girma is the only producer in the Operation Cherry Red 2025 project supplying a washed lot, which makes this coffee something of a rare find within the series.The farm grows mixed local heirloom varieties typical of Yirgacheffe, adapted to an altitude of 1,750 meters above sea level and fertile red-brown soils. It is currently run by the second generation of producers, Elias and Shady Bayter, with the support of their mother, Martha. Unlike many small farms in Colombia, which typically cover around 5 hectares, this estate spans over 300 hectares of land, nearly 100 hectares of which are dedicated to coffee cultivation.The Bayter family is currently conducting advanced research on bacteria and yeasts to control fermentation, constantly experimenting with processing methods and achieving an unprecedented level of excellence in their coffees. El Vergel grows more than 28 different coffee varieties and is the first farm in Colombia to develop the Koji fermentation process, a technique that has completely revolutionized green coffee production.Pink Bourbon is a unique coffee variety, known for its unusual pink-colored cherries. Its captivating and complex flavor profile is characterized by floral notes, fruitiness, juicy acidity, and honey-like sweetness.This exceptional coffee was produced using a method developed at El Vergel Estate, employing Aspergillus oryzae, a fungus renowned for its ability to enhance flavor profiles. The innovative process involves cultivating the fungus on steamed rice for 3–4 days. Once fully developed, the rice is harvested, dried, and ground into a fine powder. This powder is then evenly spread over coffee cherries placed on raised beds. Ensuring oxygen exposure is crucial, as it enables the fungus to grow and transform the fruit.During a 24–72 hour aerobic fermentation, the koji culture develops, covering most of the cherries and intensifying their flavor complexity. After fermentation, the cherries are dried in two stages: first for 10 days under the sun, followed by 2–4 days of mechanical drying at a controlled temperature not exceeding 38°C to preserve the coffee’s delicate characteristics. KONKRET BISCUIT is a whole-bean coffee blend created by the Polish roastery Hard Beans. The beans are roasted dark for espresso, making them perfect for espresso machines and moka pots. In the cup, you can expect notes of dark chocolate, walnuts, and sponge cake.  Our Arabica comes from Brazil’s Cerrado region – one of the country’s most famous coffee-growing areas. The region offers ideal climatic conditions and fertile soils, known locally as terra roxa (“red earth”), which are particularly suited to cultivating varieties such as Mundo Novo, Yellow Catuai, and Red Catuai. The coffee trees grow mainly on flat terrain, which allows for mechanical harvesting.The Robusta is sourced from Vietnam, Indonesia, or Uganda. It provides a full-bodied, dense brew that combines bittersweet chocolate with nutty sweetness. The farm covers 6 hectares, 5 of which are dedicated to coffee cultivation, and the trees in this lot are around four years old.The farm is managed by Vladimir and his family, and the entire process, from harvesting to drying, takes place on-site and under their direct supervision. The harvest season runs from April to December and is based on selective hand-picking to maintain consistent quality and uniformity of the cherries.ABOUT THE COFFEEGesha is a variety strongly associated with exceptional quality and a very high sensory potential when grown at high altitudes. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions.This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries.After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats.After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. It is then dried on raised beds for 15–17 days and stabilized in GrainPro bags for 10–15 days.
