ABOUT THE COFFEE


Pink Bourbon is a variety that can be elegant and clean. Its natural sweetness and fruit-floral base handle intensive fermentation well, without creating heaviness in the cup. As a result, the banana aroma does not overpower the coffee’s flavor — it enhances and defines its character.

First, the cherries undergo 48 hours of fermentation in sealed bags. They are then depulped, with the beans left covered in a layer of mucilage. The next stage is co-fermentation with yeast and natural banana aromas, lasting about five days. Finally, the beans are dried to the target moisture level.



RECIPE


Ratio: 60 g of coffee per 1 liter of water


Water temperature: 93°C


Grind size: medium-coarse


Method:


Pour the water in five equal stages (e.g., 5 × 60 g), every 30 seconds.


The water should fully drain through the coffee between pours.


If the flow is too slow or too fast, adjust the grind size accordingly.


Use soft, filtered water for best results.
