Whole-bean specialty coffee beans from Colombia, roasted by COFFEE PLANT from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of papaya, passionfruit, blackberry and maple sirup.Origin: ColombiaRegion: TolimaProcessing: NaturalVariety: Colombia, Castillo, CaturraAltitude: 1700-2000 m a.s.l.ABOUT THE COFFEEGaitania is an exceptional lot created by smallholder producers from the vicinity of the town of Gaitania, located in the municipality of Planadas in the south of the Tolima region. The coffees come from plantations situated at an altitude of 1,700–2,000 m above sea level, where the Castillo, Caturra, and Colombia varieties are cultivated. Combining beans from several farmers made it possible to create a coffee with a distinct, juicy character that perfectly reflects the potential of this region.ABOUT THE PROCESSINGAfter harvesting, the ripe cherries fermented for 38 hours and then dried for eight days on raised, covered African beds. The slow and controlled drying highlighted the natural sweetness and complexity of flavor. In the cup, you will find juicy papaya and passion fruit, notes of wild berries, and the velvety sweetness of maple syrup. The overall profile is intense, fruity, and slightly funky – full of character, yet perfectly balanced at the same time.ROASTER'S OPINIONGaitania is Colombia without compromise. From the very first sip, it draws attention with its intense character and juicy, fruity profile. It is a natural full of energy, distinct sweetness, and aromas that linger in the memory for a long time.Exotic notes of ripe papaya and juicy passion fruit dominate the cup, offset by a clear accent of wild berries. Everything is tied together by the velvety sweetness of maple syrup, which gives the coffee depth and pleasantly coats the palate. It is a rich, multidimensional, and remarkably satisfying profile. It is precisely the combination of exotic fruits, intense sweetness, and syrupy smoothness that gives this coffee its characteristic, funky style. It is bold, full-bodied, and distinct, with every subsequent sip revealing new nuances of flavor. This is a choice for those seeking coffees with character who are not afraid of intense, fruity taste experiences.Store in a dry and cool place.

It brings a tear to the eye! Willy is a great guy, full of passion, faith, and energy for testing new farming methods. This season, we have two coffees from him from two different lots of his farm: Murundo comes first, and we have Mahembe up our sleeve for you.Willy experimented here with anaerobic fermentation. What is this "anaerobic" thing anyway? In this process, coffee ferments in an oxygen-free environment – in this case, it lasted for 72 hours. Prolonged fermentation adds a lot of sweetness and a characteristic "funk" to the coffee. It's easy to overdo the latter, but Willy keeps an eye on everything, so you won't find any aggressive, lemony, or vinegary notes in the cup. The coffee is clean, elegant, and leaves a very long, pleasant finish!Store in a cool, dry place.
Specialty-grade whole bean coffee from Colombia, roasted by the Warsaw-based roastery HAYB. How did it happen? Hand-picked cherries – nothing unusual. But then – SHOCK. Thermal! The cherries were submerged in water at a temperature of 180°F (80°C) for 30 to 60 seconds. Next, the fruits were washed and underwent ozonation. The seeds were extracted, and the juicy experimenting began. Juice was squeezed from the skins of still-fresh cascara. The juice was mixed with the beans in fermentation barrels. With the help of the necessary microorganisms, the beans underwent lactic fermentation for 220 hours. After that, just 20 days of drying, and there you have it.Reading this description, you might think it would turn into pickled cucumbers, or at least kombucha. Nothing of the sort. It is sweet, juicy, and crisp. Yum.Store in a cold and dry space.

Whole-bean specialty coffee beans from Uganda, roasted by COFFEE PLANT from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of ripe mango, balsamico, rum and dark chocolate.Origin: UgandaRegion: Mount ElgonProcessing: NaturalVariety: SL14, SL28Altitude: 1680-1820 m a.s.l.ABOUT THE COFFEEThis natural process coffee comes from 203 farmers in the Kabarole District, near Fort Portal in western Uganda. The coffee grows at an altitude of 1,600–2,100 meters above sea level in fertile volcanic soils and a diverse microclimate. Cherries reach the Rubirizi station through local leaders who coordinate their harvest and ensure quality right from the delivery stage. The combination of high altitude, careful selection, and the experience of local producers yields an intense, fruity-chocolate character. An interesting aspect is how this lot was selected. Beans that, due to their appearance—darker parchment, spots, or pulp residue—would previously have been automatically categorized into a lower grade, were re-evaluated based on cup quality. Those without actual defects were selected and prepared as a separate, more affordably priced lot. The coffee undergoes multi-stage sorting, supported by an optical sorter, followed by intensive natural processing with a short anaerobic fermentation stage. The result is a very sweet, complex, and intense coffee.ROASTER'S OPINIONThe profile of this Ugandan coffee is the result of a long fermentation—ripe mango and dark chocolate combine with notes of balsamico and rum, creating a thick, intense character unusual for coffees from the Mount Elgon area. It is a very fruity and complex coffee with an exceptionally deep profile. In the aroma, ripe, almost caramelized mango dominates, accompanied by a sweet balsamic note and a delicate fermented accent. In flavor, mango builds an intense, syrupy sweetness, while balsamico and rum give depth and a slightly liqueur-like character to the whole profile. The profile finishes with dark chocolate and a long aftertaste. The coffee has a full, thick body and low, mild acidity, keeping it sweet, intense, and remarkably expressive.Store in a cool and dry place.

Whole-bean specialty coffee beans from Tanzania, roasted by COFFEE PLANT from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of stone fruits, flowers, tea and lemon.Origin: TanzaniaRegion: ArushaFarm: Mondul EstateProcessing: Fully WashedVariety: BourbonAltitude: 1550-1900 m a.s.l.ABOUT THE FARMMondul Estate is part of the historic Burka Farm in the Arusha region, founded in 1899 by German settlers. Since 1929, it has been managed by a group of Swiss investors. The coffee trees grow at an altitude of 1,600–1,765 meters above sea level, under the shade of trees, which promotes the slow ripening of the fruit and the development of a complex profile.Over 200 people work permanently on the farm, and during the harvest season, up to 2,000 seasonal workers join them. The farm provides housing, medical care, and education for workers and their families, while focusing on responsible and environmentally friendly farming methods. The name "Mondul" comes from natural springs that have nourished the crops and local communities for generations. Water from these springs is also used for wet processing – after harvesting, ripe cherries are washed and fermented, then dried on raised African beds for about 7 days. This process preserves the clarity of the profile and brings out a delicate floral note, citrus, and tea-like qualities, without unnecessary heaviness or fermented character.ROASTER'S OPINIONIt is rare to come across coffee from a farm that has been operating continuously since 1899. Mondul is precisely such a case – one of the oldest and most recognizable farms in Tanzania, now belonging to Burka Estate at the foot of Mount Meru. The washed process emphasizes the clarity of the profile, allowing delicate florals, citrus, and a tea-like note to shine through. In the aroma, delicate flowers and fresh lemon come to the fore, with a light, tea-like note appearing in the background. In flavor, stone fruits build sweetness, while lemon brings a refreshing, medium acidity that does not dominate the profile. The finish remains gently tea-like. The coffee has a soft, velvety body, making it light and balanced.Store in a cool and dry place.
Specialty-grade whole bean coffee from Honduras, roasted by the Warsaw-based roastery HAYB. Marysabel and her husband Moises have been running the farm for a quarter of a century. Roasteries all over the world buy coffee from them. We had the chance to talk several times during World of Coffee and a few times on calls – you don't meet such warm and wise people every day. This is one of those coffees that, beyond its taste and quality, stands out because of the story behind the farm. If I could, I would choose only coffees for our portfolio where a good, sweet, clean taste goes hand in hand with a spark of passion and wisdom in the eyes of the people running the farm. I wish you that this natural from the La Paz region is sweet for you and helps you get off to a good start to the day. Take care!Store in a cool and dry place.
Ground specialty coffee from Kenya. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of black currants, grapefruit, red currant, tea and brown sugar.Origin: KenyaRegion: KirinyagaFarm: Kiamutuira Washing Station / Mutira Cooperative SocietyVariety: SL28, SL34, BatianProcessing: WashedAltitude: 1650–1700 m a.s.l.ABOUT THE FARMKiamutuira is a factory (washing station) in the Kirinyaga region, belonging to the Mutira Cooperative Society. The factory itself has been operating since 1996, and the cooperative has been a part of Kenyan coffee history since 1951. The coffee comes from approximately 600 smallholders, with the average farm measuring just 0.1 ha. Small scale. Great precision. The crops are situated at an altitude of 1,650–1,700 meters above sea level, near the forest boundary of Mount Kenya. The soils are volcanic, and macadamia trees appear among the shade trees. Tea is also grown in the region, which reflects the climate of the area well: high, green, humid, with excellent conditions for the slow ripening of cherries. The coffee is processed using the washed method, so we expect cleanliness, high acidity, and classic Kenyan juiciness.ROASTER'S OPINIONThis is Kenya in a good, precise style. High acidity, plenty of juiciness, a clean profile, and that exact character you look for in Kirinyaga. Blackcurrant, citrus, tea. Zero randomness. A coffee like this does not need stories about magic. It needs a good recipe.Store in a dry and cool place.
Whole-bean specialty coffee from Costa Rica roasted at HAYB. Dark roast, perfect for espresso machines and moka pots. In the cup, you can expect hints of dried fig, honey and chocolate.Country of origin: Costa RicaRegion: Central ValleyVariety: San IsidroProcessing method: Perla NegraCupping score: 87 / 100Altitude: 1500 m a.s.l.Always something new. And supposedly new, yet a safe bet.I think we order coffees from Oscar and Francisca Chacon every year. When my season for drinking coffees processed other than washed comes around, it is the Chacon family that shows how to do it best. We have had coffees from them in Alma Negra, Perla Negra, and Yellow Diamond processes – these are different "variations" of theirs on honey and natural processing – and all of them are invariably super clean in flavor. This time is no different, absolutely flawless.ABOUT THE PROCESSPerla Negra is a processing method that goes as follows: after harvesting, the cherries are transferred to the mill for grading, where only the ripest ones are selected. Then, they are moved to the greenhouse patio for drying. During the first week, the cherries are piled on top of each other in a thick layer for aerobic fermentation. After this first week, the coffee is spread across the patio, forming a thin layer until the drying process is complete. Delicious!Store in a cool, dry place.
Whole-bean specialty coffee from Guatemala, roasted by BeMyBean polish roastery. Dark roast, perfect for espresso, coffee machines, and moka pots. You can expect hints of mirabelle plum, almond cookies, cherry jam, nectarine and gooseberry.Country: GuatemalaRegion: Santa RosaFarm: AyarzaProcessing: Anaerobic naturalAltitude: 1600 - 2000 m a.s.l.Variety: Anacafe 14, Bourbon, PacheABOUT THE COFFEEGuatemala Ayarza is an offering for those who enjoy modern, fruity espresso with a distinctly marked sweetness. It comes from the Ayarza region in the Santa Rosa department, where the high altitude of the plantations, volcanic soils, and cool climate favor the creation of beans with great complexity. The cup is dominated by juicy notes of mirabelle plum, nectarine, and gooseberry, which smoothly transition into the sweetness of cherry jam and subtle buttery almond cookies. Medium-high intensity ensures that the coffee remains distinct, yet at the same time remarkably pleasant and balanced.ABOUT THE PROCESSINGThe exceptional character of this coffee is heavily influenced by the anaerobic natural processing method, which requires great precision at every stage. The process begins with meticulous hand-harvesting of only fully ripe cherries. Next, the coffee cherries are thoroughly sorted so that only the finest fruit moves on to further processing. The next stage is the fermentation of whole fruits in an anaerobic environment. The cherries are placed in sealed bags from which oxygen access is removed. For about 120 hours, a controlled fermentation takes place, during which yeast and microorganisms intensively develop complex aromatic compounds while maintaining full control over the process flow. As a result, the coffee gains greater sweetness, depth, and an intensely fruity character. After fermentation is complete, the fruits are spread out in a very thin layer on the patio to immediately halt the fermentation process and begin even sun-drying. The result of this demanding processing is an espresso with a creamy body, distinct fruitiness, and a long, sweet finish. Guatemala Ayarza perfectly demonstrates how skillfully executed anaerobic fermentation can highlight the natural potential of the beans, creating a coffee full of juicy fruit and dessert-like sweetness. Finally, dessert sweetness, juicy fruit notes, and fruit-derived acidity meet in the cup. The espresso has a silky body and leaves a long, pleasant finish. It works great as a dose of refreshment on its own. When combined with milk, it takes on even greater sweetness, while the fruity accents become gentler, resembling a creamy dessert. Guatemala Ayarza also fits perfectly into a summer lineup – served with tonic and ice cubes, it delights with its refreshing, juicy character.COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. Working directly with the roasteries, we deliver freshly roasted, unique coffee beans – always of the highest quality, at the lowest price you can get. Specialty-grade whole bean coffee from Myanmar, roasted by the Warsaw-based roastery HAYB. It surprised us on the cupping table and it continues to surprise us in a drip and batch brew. We argue whether it is more floral or more nutty – and we agree by saying that it is complex. Whole-bean specialty coffee from Costa Rica roasted at HAYB. Dark roast, perfect for espresso machines and moka pots. In the cup, you can expect hints of milk chocolate, dried fig and raspberry.Country of origin: Costa RicaRegion: TarrazuVariety: CaturraProcessing method: NaturalCupping score: 87 / 100Altitude: 1800-1900 m a.s.l.Natural revolutionYou have already had the opportunity to try a Geisha roasted for espresso from this female farmer – now it is time for Caturra. A sweet shot with notes of milk chocolate, but also plenty of flavor reminiscent of figs and raspberries. Although Caturra was born in Brazil, it made a real career in Colombia, and later precisely in Costa Rica. According to World Coffee Research and Perfect Daily Grind, it is an absolute classic and a benchmark against which other modern botanical varieties are evaluated. What is worth knowing about it?Compact growth: Caturra possesses a dwarfism gene. The shrubs are short and stocky, which allows farmers to plant them more densely and makes harvesting the cherries much easier.A demanding patient: The price for high yield is poor health. Caturra is extremely susceptible to coffee leaf rust (roya) and pests, meaning it requires a great deal of attention, knowledge, and care from the farmer.Cup profile: Grown at the right altitude, it rewards you with brilliant quality. Expect a multi-dimensional, vibrant, and clean citric acidity, a medium body, and a distinct sweetness with notes of chocolate, caramel, and juicy fruits. No genetic modifications in a laboratory – a pure, natural revolution that changed the map of the specialty coffee world. Enjoy!Store in a cold and dry space.

The station is managed by Cherab Betesebu, and the cherries delivered to it come from around 600 local farmers cultivating coffee at altitudes reaching 2,100 meters above sea level. The combination of high altitude, fertile soils, and abundant rainfall creates conditions thanks to which Yirgacheffe has been famous for years for exceptionally valued, aromatic coffees.ABOUT THE PROCESSINGAfter harvesting, ripe cherries are carefully selected and depulped, then fermented for 36–48 hours. After fermentation, the beans are washed, sorted by density, and dried on raised African beds for 12–15 days. Regular turning and protection from intense sun and night moisture help preserve the clarity of the profile, highlighting the clear acidity and delicate florals characteristic of washed coffees from Yirgacheffe.ROASTER'S OPINIONAricha is one of the most valued stations in Yirgacheffe, and its washed lots have been recognized for years as a great example of the region's character. This coffee combines intense jasmine, sweet apricot, and an unusual, hoppy accent that adds originality and complexity. In the aroma, distinct jasmine dominates with a delicate, tea-like note. In flavor, juicy apricot appears, accompanied by a characteristic hoppy accent. As it cools, the profile becomes more tea-like. The coffee has a lively, citrus acidity, fruity sweetness, and a light body, with the overall experience complemented by a medium, slightly citrusy aftertaste.Store in a cool and dry place.
Whole-bean specialty coffee from Costa Rica, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of cherry liqueur, wild strawberry and grapefruit.Origin: Costa RicaRegion: ChirripóFarm: Corazón de JesúsVariety: PeaberryProcessing: Natural AnaerobicAltitude: 1800 – 1950 m a.s.l.ABOUT THE COFFEECosta Rica Alvarado Fonseca Family is another peaberry* that completely won us over. There is something of cherry liqueur to it: lightly fermented, deep and intense. But instead of drifting into a heavy, boozy ferment, it stays on the light side of the Force: fresh, bright, and grapefruit-leaning.Our first impression? Cherries in a liqueur-like, very sweet form. The grapefruit note is there to show clarity, freshness, and citrusy acidity. During our tests, the brew came out expressive, but not overwhelming. Fruity, clea,n and juicy. Not too light, not too heavy. Just right. The coffee comes from the Chirripó region in Costa Rica, from farms located at 1800–1950 m a.s.l. Behind the lot stands the Alvarado Fonseca Family, a producer family connected with the Corazón de Jesús micro-mill. Jhon Alvarado Abarca, also known as Johny, regularly appears among the top names in Cup of Excellence, and his work shows what you can achieve with experience, ambition, and constant process refinement. This lot was processed as natural anaerobic, which helps build deep, fermented fruitiness without taking away the coffee’s clarity. And that is exactly what we liked most about it: the intensity is clear, but kept in check. A good example of a thoughtful combination of peaberry selection and process. We especially recommend this lot to people who enjoy fruity-fermented intensity, but care just as much about balance. There is energy and depth here. But there is also lightness and freshness.*Peaberry is a natural anomaly: instead of two flat seeds developing inside the coffee cherry, there is one smaller, rounder seed. In practice, it can often give a more concentrated and intense flavour.Store in a cold and dry space.

The plantations stretch between the majestic Mount Kenya and the Aberdare Range – ideal conditions for growing coffee of exceptional clarity and distinct character.Around 800 farmers deliver their crops to the station, each running a small farm with an average of 300 coffee trees. Cooperation within the cooperative allows them to jointly ensure high coffee quality and receive fair compensation for their work.At Gititu, great importance is also attached to environmental protection. Whole-bean specialty coffee from Burundi, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of blackberry, black tea and apricot.Origin: BurundiRegion: MuyingaVariety: BourbonProcessing: WashedAltitude: 1700 m a.s.l.ABOUT THE COFFEEAnother fresh harvest from Luis, and just like every year, it does not disappoint. This season, we went for the Aji variety, already warmly received by you, which struck us with its transparency. We got a proper strawberry punch straight to the taste buds, and we are still recovering from that fruity knockout. In the cup, the strawberry was the main thing: fresh, but also a little more jammy. At times, we had the impression of those yoghurt-and-strawberry chocolates appearing in the flavour too. There is no doubt that a lot is going on here, and sensory boredom is not really an option. We completed the flavour profile with notes of mango and sea buckthorn to highlight the fresh, soft sweetness and intense acidity that stays with us long after the last sip. In truth, the range of associations was almost endless, so we narrowed it down to the notes that stood out the most and best captured this juicy, ripe fruitiness.ABOUT THE VARIETYWe write the variety simply as Aji, though its fuller name is Bourbon Aji. The name comes from… a pepper. Farmers in southern Huila noticed the distinctive aroma of the cherries, reminiscent of a small chilli pepper. Here comes the plot twist, though: genetic testing has shown that it is not a direct descendant of classic Bourbon, but a variety of Ethiopian origin.ABOUT THE PROCESSINGThe coffee and its processing come from Luis Marcelino of Aroma Nativo in Pitalito. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions. This is exactly the process that helps build an equally layered profile: intense, juicy and long-lasting.Store in a cold and dry space.
Whole-bean specialty coffee beans from Kenya, roasted by COFFEE PLANT from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of black currants, orange, kiwi and lemon.Origin: KenyaRegion: EmbuFarm: Gikirima FactoryProcessing: Fully WashedVariety: SL28, SL34, Ruiru 11Altitude: 1800 m a.s.l.ABOUT THE COFFEEThe coffee comes from the Gikirima washing station, one of five stations belonging to the Kibugu Farmers Cooperative Society in the Embu region, on the southeastern slopes of Mount Kenya. Cherries are delivered by about 1,050 smallholder farmers growing coffee at altitudes above 1,800 meters above sea level. Volcanic soils and a cool climate promote the slow ripening of the fruit, building the distinct acidity and structure characteristic of Kenyan coffees. The SL28, SL34, and Ruiru 11 varieties are also responsible for the profile.ABOUT THE PROCESSINGAfter selective hand-picking, ripe cherries are thoroughly sorted, including in a water tank, then depulped and fermented for about 24 hours. After fermentation, the beans are washed and dried on raised beds, where they are regularly turned and protected from intense sun and night moisture. Slow, even drying preserves the clarity of the profile and highlights the characteristic, lively acidity of Kenyan coffee.ROASTER'S OPINIONGikirima is a classic, high-altitude Kenya – clear, intense, and full of fruit, with a characteristic, lively acidity and a delicate tomato accent. Blackcurrant and citrus build an energetic profile, while kiwi and tomato add an interesting complexity to it.Intense blackcurrant dominates the aroma, complemented by fresh orange and a subtle, umami tomato note. In flavor, blackcurrant remains at the fore, joined by orange, lemon, and sweet kiwi. Bright, sparkling acidity gives juicy depth to the coffee, while a delicate tomato accent adds character to it. Overall, it has a medium, smooth body and a long, distinct finish.Store in a cool and dry place.

It was founded in 2011 by Ben and Kristy Carlson, who recognized both the huge potential of Burundian coffees and the challenges faced by local farmers following the privatization of the coffee sector. Their goal was to create a collaboration model that would allow farmers to produce better coffee and receive fairer compensation, while providing roasteries around the world with access to exceptional and fully traceable lots.Today, Long Miles works with thousands of smallholder producers and operates its own washing stations, including Bukeye, Heza, and Giku. Every batch of coffee can be traced back not only to a specific station, but often to the specific hill where the cherries were grown. Thanks to this, Long Miles has become one of the pioneers in building transparency and traceability for Burundian coffee. The project's philosophy is based on a simple premise: good coffee starts with people. That is why Long Miles invests not only in infrastructure and processing quality, but also in farmer training, local community development, and long-term relationships with producers. The result is coffees that regularly feature in the offerings of the world's most respected specialty roasteries and have been building Burundi's reputation as one of Africa's most exciting origins for years.ROASTER'S OPINIONCoffees from Burundi are our non-guilty pleasure. We'll take them in the morning, in the afternoon, even early in the evening. Acidity and all the best East Africa has to offer.Store in a cool, dry place.

During this process, green apples were added to the fermentation tanks, enriching the coffee's flavor profile with notes of fruity freshness and distinctness. After fermentation, the beans were separated from the pulp and placed on African beds, where they dried until reaching the ideal moisture level. Or at least that's what the producer says – we weren't there, we're just repeating what they say. Whole-bean specialty coffee beans from Ethiopia, roasted by COFFEE PLANT from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of flowers, strawberry and citrus.Origin: EthiopiaRegion: YirgacheffeFarm: Gotiti Washing StationProcessing: NaturalVariety: HeirloomAltitude: 1890-2100 m a.s.l.ABOUT THE REGION, FARM, AND PROCESSINGThe coffee comes from the Banko Gotiti washing station in Gotiti village, in the Kochere district of the Yirgacheffe region. The station is managed by Alemu Bukato, and the cherries delivered to it come from around 650 local farmers cultivating coffee at altitudes of 1,900–2,100 meters above sea level. High altitude, fertile soils, and regular rainfall create conditions for which Yirgacheffe is famous for exceptionally aromatic coffees with a floral and fruity character.Only ripe cherries enter the processing stage, which, after selection, are dried whole on raised African beds for 12–15 days. During this time, they are regularly turned and protected from intense sun, rain, and night moisture. Slow and controlled drying allows the beans to absorb sugars from the pulp, building the intense sweetness and characteristic floral notes of the finest Ethiopian natural process coffees. After drying, the coffee is hulled, sorted, and hand-picked before packaging.ROASTER'S OPINIONFor years, Yirgacheffe has been famous for some of the most sought-after Ethiopian microlots, and Banko Gotiti is among the most well-known stations in the region. This coffee stands out with an unusual combination of features from two different processes – intense floral notes and citrus acidity typical of washed coffees, alongside clear, sweet strawberry associated with natural process coffees.Intense flowers dominate the aroma, accompanied by delicate citrus and sweet berries. In flavor, floral notes combine with a distinct strawberry note, while refreshing citrus acidity brings lightness to the whole profile. The coffee has a medium body, high sweetness, and a long, pleasant aftertaste where flowers and citrus appear once again. It is an interesting natural process coffee with an unusual character.Store in a cold and dry space.

Specialty-grade whole-bean coffee from Colombia, roasted by the Polish roastery Hard Beans. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of red fruits, mango, cinnamon and caramel.Origin: ColombiaRegion: HuilaFarm: Finca Villa RubielaProcessing method: HoneyVariety: Pink BourbonAltitude: 1700 m a.s.l.ABOUT THE FARMFinca Villa Rubiela is located in Monserrate, in the municipality of Pitalito, in the department of Huila, at an altitude of approximately 1700 meters above sea level. The producer is Fernando Vargas, a third-generation coffee farmer. The farm covers 12 hectares, of which 11 hectares are dedicated to coffee.Fernando Vargas purchased the farm in 2011 and gradually developed it towards the production of specialty coffee. Pink Bourbon was introduced to the farm in 2017 and currently makes up about 30% of the crops. Other varieties grown include Colombia Amarillo and Caturra.Pitalito is one of the most highly regarded coffee production areas in Huila. The growing conditions favor coffees with high sweetness, complex acidity, and good structure.ABOUT THE VARIETYPink Bourbon is an Arabica variety particularly associated with Huila. It is valued for its high sweetness, good structure, and a profile that often combines red fruits, tropical fruits, floral notes, and delicate spiciness. In this coffee, the variety delivers a distinctly fruity profile, but it is not one-dimensional. Alongside the fruit, there are notes of caramel, cinnamon, and chocolate, which build a greater depth in the brew.ABOUT THE PROCESSINGRipe coffee cherries are hand-picked and then placed in a water tank. This step allows for the separation of lower-density cherries, which float to the surface. After selection, the coffee undergoes about 12 hours of controlled contact with oxygen.Next, the cherries are depulped, and the beans, with some of the mucilage left on them, undergo 36 hours of dry aerobic fermentation. During this time, the coffee is regularly mixed to reduce the risk of overheating and to maintain a more even process. After fermentation, the coffee is washed and dried for about 15 days in a covered drying house. After drying, it rests for another 15 days before the next stage. The honey processing influences the perception of sweetness, texture, and the intensity of the fruitiness.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: mediumBrewing time: 3:30 minutesMethod: Pour water over the coffee in 5 equal pours (e.g., 5x 60g) at 30-second intervals. The water should completely drain through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a dry and cool place.
Specialty-grade whole bean coffee from Costa Rica, roasted by the Warsaw-based roastery HAYB. Although it was born in Brazil, it made a real career in Colombia, and later precisely in Costa Rica. No genetic modifications in a laboratory – a pure, natual revolution that changed the map of the specialty coffee world. Enjoy!Store in a cold and dry space.
