Moments later, a note of dark cola appears, the kind you’d find in boutique, craft bottles, where caramel, spices, and fizzy depth create an almost dessert-like shadow. It all finishes with a soft, nostalgic accent of cherry pudding, like a homemade hot mug whose aroma lingers long after the cup is empty.This character is born from dry processing, which on this farm feels more like a slow dance between fruit and sunlight than a technical procedure. Hand-picked cherries first land on sorting tables, where each one undergoes a personal “interrogation.” Only those with perfectly taut skins and a ruby-red color move on, looking like tiny sugar-filled ornaments. They remain intact, unpeeled, unwashed, still wrapped in their juicy skins, as if freshly picked from the tree.Next, they are laid out on African beds, where the sun does its work slowly. Day after day, the cherries gently wilt, wrinkling like dried plums as they pass their sweetness into the beans. Aromas begin to concentrate, the pulp caramelizes from within, and the fruit is turned regularly so fermentation stays even, calm, and elegant.Only when the fruit becomes brittle, almost shell-like, is the bean released from its center: bright, smooth, nourished by weeks of slow drying. It then rests, its flavors settling like wine aging in a barrel. By the time it reaches the roastery, it already holds fullness within it: sweetness, depth, and intensity that later unfold in the cup as grape-like juiciness and a dark, dessert-style cola note.Corazon de Jesus is not a coffee that slips in quietly. This exceptional variety most likely descends from Ethiopian coffee cultivars, placing it among the relatives of the legendary Geisha. Pink Bourbon is known for its larger cherries, ability to thrive at higher altitudes, and — importantly for farmers — greater resistance to disease than traditional Bourbons. Its genetic richness translates into an astounding flavor potential, admired by both coffee professionals and enthusiasts alike.Alonso approaches cultivation with full awareness and dedication — he wants everyone who drinks his coffee to understand how much time and care he invests in it. During harvest, he works with hired pickers who carefully select only fully ripe cherries. The natural processing method involves drying the whole cherries on raised platforms called marquesinas. The cherries are turned regularly to ensure even drying, allowing them to ferment slowly and fully, giving the beans their rich, sweet flavor profile.In the cup, this coffee reveals a multi-layered composition that combines the jammy sweetness of blackcurrant with the delicate florality of violet. The coffee is hand-picked, with great care taken to ensure that only fully ripe cherries make it into the baskets. At the washing station, the beans undergo rigorous selection. First, less mature cherries are removed through water flotation, as they float to the surface.Next, the cherries are fed into a depulper, which removes the skin and leaves the beans covered with a thin layer of sweet pulp (mucilage). The prepared coffee is then fermented in water for 10 to 12 hours, depending on ambient temperature. Finally, the beans are sun-dried for 2–3 weeks. Regular turning ensures even drying and the achievement of optimal moisture content.
