In the case of this coffee, it also serves to highlight the role women play across the entire coffee value chain.In the cup, this year’s harvest is defined above all by sweetness. The profile is fruity, though closer to dark and dried fruits. Notes of plum appear first, followed by dried apricot and raisins. To round out this wave of sweetness, the whole profile feels as if the fruits had been drizzled with buckwheat honey. They’ve managed to do so and luckily they were able to return to their 3,5 hectare beauty land. In 2013 Evin participated in the Cup of Excellence for the first time and placed 12th. Evin decided to focus on different methods of processing and has been extremely successful at it.He shares his wet mill with fourteen of his family members including his brothers and cousins. He constantly improves the farm’s and the wet mill’s infrastructure and this year he’s planning to build two more solar dryers to assure maximum coffee quality.We are so happy and proud to be able to share Evin’s Pacas anaerobic experiment.ABOUT COFFEEThe cherries were picked at the perfect maturation point, placed in plastic bags and underwent a 72 hour anaerobic fermentation. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.At 00:50 pour hot water to 200g. In the meantime, unfortunately, he went bankrupt losing all of his growing lands. Tagel promised himself to redeem the plots that had belonged to his father and years later he pulled it off! Then, in 2018, when the government made it easier for producers to export by liberalizing legislation, he founded Olkai.Hambela Goro works with 460 smallholder producers that grow 74110 varietal at an impressive altitude of 2300 masl. Most of them own literally only hundreds of coffee trees each, which makes lots from Hambela Goro truly multi-component blends. At the same time, the consistency and quality of this coffee are beyond extraordinary.In addition to direct involvement in coffee production, Olkai prioritizes social responsibility in order to empower producers they work with. Under Tagel’s leadership the company provides above-market rates for growers, distributes seedlings annually and supports the construction of schools and needed infrastructure within communities.ABOUT COFFEEThe cherries are collected at a really peak ripeness. Then they undergo several steps of hand sorting. After depulping the coffee is submerged in water, in tanks and goes through 48 hours of fermentation. Following this, the parchment is being moved to african beds for drying and that takes around 10-12 days, depending on the weather and humidity prevailing during this period.Several amazing factors, such as specific terroir, extremely high altitude, an amazing 74110 varietal, smallholders’ skills and the professional management and organization at Hambela Goto created a beautiful synergy, resulting in this wonderful washed coffee.
