At any time of day or night. It tastes a bit like toffee, a bit like buttery biscuits. The cup is sweet and creamy, with a soft, nutty note.All the magic happens after harvest. Sueño is decaffeinated with water by Descamex in Mexico, without the use of solvents. First, the green coffee is placed in a steam bath that opens up the structure of the beans and allows soluble compounds, including caffeine, to be released. The resulting water is not “empty”, though. Aromatic components remain, and this becomes the base for the rest of the process.Subsequent batches of beans are immersed in this same aroma-saturated water. Because of the difference in concentration, caffeine gradually moves from the beans into the solution, while flavour compounds stay in place. The process is repeated until the caffeine content drops to trace levels. Finally, the coffee is gently dried to the desired moisture level and prepared for transport.That’s why Sueño never feels “stripped back”. CO₂ acts as a selective solvent, binding caffeine molecules without affecting the compounds responsible for the coffee’s flavour and aroma. After the process is complete, the CO₂ is released and the caffeine separated, making this method completely safe, clean, and environmentally friendly.The Mountain Water Washed method, on the other hand, uses pure water from mountain sources. The beans are soaked under controlled conditions, which opens their structure. The water is then circulated repeatedly, washing out the caffeine through a natural difference in concentration. After the process, the beans are carefully dried to restore the proper moisture level.Both methods preserve the authentic character of the coffee, delivering a full, natural taste — without caffeine.BREWINGThe density of decaffeinated coffee differs slightly from that of caffeinated coffee. It’s worth using a little more to enhance mouthfeel. Use 18.5 g of coffee, ground at 19 clicks on a Comandante grinder. This is a direction you will also see in subsequent coffees from Kenya from this year's harvest.ROASTER'S OPINIONAt the Tegu washing station, the coffee undergoes multi-stage wet processing characteristic of Kenya. After initial selection, the cherries go to the first fermentation stage, which lasts about 24 hours. They are then washed and moved to another fermentation tank.After the pulp is removed, the beans go into washing channels where lighter beans (so-called floaters) are separated, and the heavier ones are thoroughly cleaned of the sticky layer surrounding the bean (mucilage).The next stage is soaking the beans again for about 24 hours. This process promotes the development of amino acids and proteins, which translates into higher acidity and greater complexity of the fruity profile – a key element of Kenyan coffees.Finally, the beans are spread in a thin layer on African beds, where they initially lose some moisture quickly, and are then regularly turned and dried until they reach about 11% moisture. After drying, the coffee is hulled, packed, and undergoes a short stabilization stage before export.RECIPEFrom currant to tomato: in all conditionsOpen the sachet. Remove the filter and tear off the top strip along the line marked OPEN.. Place the filter on the mug. Unfold the paper wings and hook the filter onto the rim of a tall mug.. Pour hot water. Pour hot water (90–95°C) over the filter twice. Pour a total of 160–180 ml in two portions, allowing the water to slowly permeate through the coffee.. Situated at a high altitude, surrounded by fertile soils and intense biodiversity, it benefits from ideal conditions for growing high-quality Arabica.Hundreds of smallholder farmers collaborate with the station, cultivating coffee on small plots, often using an agroforestry system in the shade of natural vegetation. Thanks to the high altitudes (frequently above 1,900 m a.s.l.), the cherries ripen more slowly, which translates to greater complexity and intensity of flavor.ABOUT PROCESSINGIn the case of washed coffees, the process begins with the selection of ripe, red cherries, which then go to depulpers. After the pulp is removed, the beans undergo fermentation in water — usually for 24–48 hours — which allows the remaining mucilage to break down. Next, the coffee is thoroughly washed and dried on raised beds for about a dozen days until it reaches the appropriate moisture level.The result of this process is coffee with a very clean and clear profile. Banko Gotiti is famous for lots characterized by high acidity, distinct citrus notes (often lemon or lime), floral accents, and a tea-like lightness. She took over the property from her former husband as part of a land division. Today, she runs the farm together with her husband Libardo, focusing on quality at every stage, from cultivation to processing.The plantation is located on fertile, volcanic clay soil that provides excellent conditions for coffee plants to thrive. In addition to coffee, Miriam and Libardo also grow plantains and cassava. They place great importance on selective harvesting. Workers pick only fully ripe, red cherries. To maintain high standards, they offer better pay rates and free meals.After harvesting, the coffee cherries are placed in water tanks, where lighter and underripe fruits are separated. The coffee is then transferred to a dedicated drying facility, where the beans are regularly turned to ensure even drying until optimal moisture content is reached.ABOUT THE COFFEEPink Bourbon is a variety with exceptional sensory potential. For a long time, pink cherries were believed to be a hybrid of Red and Yellow Bourbon. However, recent research suggests that this variety does not belong to the Bourbon group. Its origins are very likely linked to Ethiopian landrace varieties.As a result, Pink Bourbon combines characteristics of high-quality varieties such as Gesha, while also showing greater disease resistance than classic Bourbon, with which it often grows on the same farms. In the version prepared by Miriam Quesada, the coffee underwent natural processing. Hand-picking only ripe cherries ensures remarkable uniformity of the raw material.After initial cleaning, the cherries are placed in water tanks, where they rest briefly to allow separation of underripe or damaged fruit. The coffee is then dried in a specialized dryer, where controlled temperature and humidity, along with continuous rotation of the beans, ensure an almost perfectly even process. Finally, the beans are separated from the remaining fruit material and packed in GrainPro bags. The Pink Bourbon coffee prepared in this way is then exported to the European market.ROASTER’S OPINIONPink Bourbon is a variety we reach for almost every time it appears in importers’ offerings. We highly value it in both washed and natural versions. Each one reveals a completely different side of the same variety, while consistently delivering a lot of enjoyment. In this case, we are dealing with a bold, expressive natural that stands out from the very first contact.The aroma is rich and evocative, dominated by notes of almonds, juicy stone fruits, and fresh pink grapefruit. In the background, there is a distinctive sweet “purple” note reminiscent of fruity candies like Skittles. Sugary, joyful, hard to define precisely, yet undeniably pleasant.On the palate, the coffee unfolds in layers. Up front, there is an intense, fruity sweetness of peach and plum, complemented by a deep, slightly sticky molasses note. The acidity is gentle and smooth, well integrated into the overall profile, while the full body gives the coffee a creamy texture. Everything is beautifully balanced and highly drinkable. The finish is long, sweet, and complex, leaving a pleasant fruity and candy-like impression on the palate. Such extreme conditions — high sun exposure combined with cool temperatures — promote slow fruit ripening and the development of high-quality Arabica.The farm is located in the Callayuc region, within the Cutervo province (Cajamarca), one of the historical coffee-growing areas in northern Peru. This terrain stretches from approximately 690 to over 2800 m a.s.l., creating incredibly diverse microclimates — from fertile valleys to humid, tropical zones with high biodiversity.Ismeria Leon, like other local producers, manages her crops in strict harmony with nature, utilizing naturally fertile soils and favorable climatic conditions. The area also features characteristic landscape elements, such as the Viluco waterfall and the Cerro Pabellon mountains and the Cordillera del Wissus range, which contribute to the region's unique ecosystem.It is this combination of altitude, climate, and biodiversity that gives Callayuc coffee its distinct, complex, and characteristic profile.ROASTER'S OPINIONThe location of the La Lucuma farm is truly exceptional — over 2200 m a.s.l. is an altitude rarely encountered in Peruvian coffee cultivation. These extreme conditions favor slow fruit maturation and the building of a complex flavor profile.The Caturra variety is also not among the most common there — it accounts for about 20% of total coffee production in Peru, which makes lots of this type even more interesting and unique. Peru as an origin is often underestimated and overlooked by consumers, which is why we regularly try to include at least one coffee from this country in our offer. This time, it is the beans from Ismeria Leon.In the aroma, the coffee is fresh and fruity — green apple clearly dominates, complemented by delicate cranberry and caramel sweetness. On the palate, the profile remains very consistent: juicy apple appears in the foreground, enveloped in caramel, with hints of cranberry and grape.The whole has a medium, round body and low, smooth acidity reminiscent of an unripe apple. The sweetness is high and caramelly, and the aftertaste is medium-long, pleasantly sweet, and balanced. This is a coffee with very good balance and a clean profile — definitely an example of how good Peru can be.RECIPEWe recommend brewing this coffee using a dripper — from Hario or Origami. Due to the very high density of the beans, we recommend a finer grind than usual, a longer brewing time, and a temperature around 96 degrees Celsius.Store in a dry and cool place.
