Taiwanese Hong Shui, meaning “Red Water,” stands at the boundary between two worlds. It is oxidized so heavily that it could be mistaken for a black tea, yet it is produced and rolled with the craftsmanship typical of oolongs. As a result, it takes the best from both styles, offering the honeyed sweetness and depth of black tea alongside the light, refined texture characteristic of oolongs.

Like any oolong, it is resilient, and the leaves can be infused many times. The exceptionally high level of roasting gives this tea a warm, comforting character.
