ROASTER’S NOTE



This lot comes from the Sambewe AMCOS cooperative, made up of 442 producers. After harvesting, the cherries are carefully sorted and then dried on raised beds. For the first 10 days, they’re turned every 2 hours and dried for 24 to 30 days, depending on weather and humidity.



Fun fact: the bag of green coffee had “WASHED” printed on it in big letters… but inside? A natural. At first, everything pointed to it being washed — the appearance of the beans, the clarity in the cup. But then came the first cupping and… boom — intense sweetness and a heavier body. Things got interesting real fast. I thought something was off, but the importer confirmed — it’s a natural.



Turns out, this mix-up is pretty common in Tanzania. Bags often come pre-printed with “washed,” since it’s the most common processing method — and they just reuse them. And the fact that the coffee looked washed? Well, as you can see, Tanzanian naturals can be surprisingly close to washed coffees — both in appearance and flavor.
