This lot comes from the Sambewe AMCOS cooperative, made up of 442 producers. After harvest, the cherries are carefully sorted and dried on raised beds. During the first 10 days, they’re turned every 2 hours, and the drying process takes between 24 and 30 days, depending on weather and humidity.
Here’s a fun twist: the green coffee bag had “WASHED” printed in big bold letters — but inside? A natural. And honestly, everything pointed to it being washed: the appearance of the beans, the clarity in the cup. Then came the first cupping and... boom — intense sweetness and a heavier body. Total confusion. I thought something was off, but the importer confirmed — it’s definitely a natural.
