ABOUT THE COFFEE


This is only our second time working with coffees from Uganda. It’s not easy to find beans that match our taste preferences in a country roughly the size of the UK or Romania, but with a population density closer to that of the Netherlands or Poland. Uganda is relatively densely populated, and agriculture drives the economy—but most farmers grow Robusta.


But rest assured, we managed to find a fruity bomb, a true gem.



Norman’s farm is located at the foot of Mount Elgon in Uganda, sourcing cherries from the regions of Sironko, Mbale, Bulambuli, and Kapchorwa. The Coffee Yard is a large reception and drying center for coffee cherries. With almost 20 years of experience in the industry, Norman has specialized in natural-process coffees since 2018, continually refining his processing methods to achieve ideal flavor profiles.



The processing steps include:


• Selecting and washing cherries to remove defects.


• Initial drying on raised beds.


• Additional sorting by color and moisture content.


• Fermentation in open tanks, which contributes to the coffee’s unique flavor notes.


• Drying for about 21 days until moisture drops below 12%.



After an additional week, the beans are hulled, hand-sorted and optically sorted, then prepared for export.



ROASTER’S NOTE


This coffee truly surprised me! Another lesson showing that it’s worth exploring unknown paths, staying curious, and continuing to search. I haven’t had anything this juicy and tropical in a very long time.
