El Vergel grows more than 28 different coffee varieties and is the first farm in Colombia to develop the Koji fermentation process, a technique that has completely revolutionized green coffee production.Pink Bourbon is a unique coffee variety, known for its unusual pink-colored cherries. Its captivating and complex flavor profile is characterized by floral notes, fruitiness, juicy acidity, and honey-like sweetness.This exceptional coffee was produced using a method developed at El Vergel Estate, employing Aspergillus oryzae, a fungus renowned for its ability to enhance flavor profiles. The innovative process involves cultivating the fungus on steamed rice for 3–4 days. Once fully developed, the rice is harvested, dried, and ground into a fine powder. This powder is then evenly spread over coffee cherries placed on raised beds. Ensuring oxygen exposure is crucial, as it enables the fungus to grow and transform the fruit.During a 24–72 hour aerobic fermentation, the koji culture develops, covering most of the cherries and intensifying their flavor complexity. After fermentation, the cherries are dried in two stages: first for 10 days under the sun, followed by 2–4 days of mechanical drying at a controlled temperature not exceeding 38°C to preserve the coffee’s delicate characteristics. Finally, the beans undergo a 20-day stabilization period in GrainPro bags, ensuring stability and optimal storage conditions.

He runs a 6.46-hectare farm in Biloya together with his wife and son. The family has owned this land since the 1970s, and since 2019 they have operated under their own export license, allowing them to sell coffee directly without intermediaries.Girma is the only producer in the Operation Cherry Red 2025 project supplying a washed lot, which makes this coffee something of a rare find within the series.The farm grows mixed local heirloom varieties typical of Yirgacheffe, adapted to an altitude of 1,750 meters above sea level and fertile red-brown soils. It is a classic Ethiopian genetic mix, offering plenty of sweetness, pronounced fruitiness, and floral aromas.ABOUT THE COFFEEThis coffee is wet processed. Coffee farming here is carried out mainly by smallholder farmers who cultivate their coffee trees under the shade of native trees, in dense, mountainous forests with sandy-clay soils.This is where Tega & Tula Specialty Coffee works with more than 3,000 growers through three processing stations. One of them – the Hambela Wamena Buku Saysa Washing Station – is located in the village of Buku Saysa at an elevation of 2,300–2,350 m a.s.l. Covering 1.2 hectares, the station collaborates closely with local farmers, supporting sustainable cultivation methods and ensuring consistently high quality of naturally processed coffee.ROASTER’S NOTEA sweet, rounded, and fruity espresso with the characteristic flavor notes of the Guji region. Gently and carefully roasted to preserve delicate floral-tea notes while achieving high sweetness, body, and the acidity of very ripe cherries. It performs well both on its own and in milk drinks, especially as a mocha with dark, dessert-style chocolate. A perfect choice for long winter evenings.
