Based in the Huila region of Colombia, he has gained fame in recent years for his work on modern coffee fermentation. On his farms, he develops controlled fermentation methods that allow for the extraction of very intense and precise flavor profiles from the beans.The Huila region has long been recognized as one of the best places for coffee cultivation in Colombia. The high altitude of the plantations, fertile soils, and significant temperature differences between day and night cause the fruit to ripen more slowly, building a higher concentration of sugars and aromas.ABOUT THE PROCESSINGThis lot underwent washed processing with co-fermentation. In the first stage, the fruit undergoes controlled fermentation involving selected microorganisms that enhance tropical fruit aromas. Subsequently, the beans are washed and dried as in the classic washed method. Thanks to this, the coffee maintains the clarity characteristic of washed processing while simultaneously gaining a very distinct, tropical profile. For us, the effect in the cup is like a mango lassi yogurt: sweet, fruity, refreshing, and delicious.ROASTER'S OPINIONLast year, we tasted over 80 co-fermented coffees before ultimately selecting 4 lots for our offer. What captivated us about these 4 lots is that they are not one-dimensional; on the contrary, they are very complex and intricate. This specific one from Rodrigo provides an example of a well-processed co-ferment—done without haste, with composure, and with fermentation tested on small samples before preparing the full batch of coffee. This coffee will bring a lot of pleasure when served hot, but for fans of cold coffees (both V60 on ice and cold brew), it will be a bullseye!Store in a cold and dry space.

Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.At 00:50 pour hot water to 200g. At 01:10 pour hot water to 250g.Swirl your V60 and let the coffee drip. The water should have drained in around 3:00. These extreme conditions favor slow fruit maturation and the building of a complex flavor profile.The Caturra variety is also not among the most common there — it accounts for about 20% of total coffee production in Peru, which makes lots of this type even more interesting and unique. Peru as an origin is often underestimated and overlooked by consumers, which is why we regularly try to include at least one coffee from this country in our offer. This time, it is the beans from Ismeria Leon.In the aroma, the coffee is fresh and fruity — green apple clearly dominates, complemented by delicate cranberry and caramel sweetness. On the palate, the profile remains very consistent: juicy apple appears in the foreground, enveloped in caramel, with hints of cranberry and grape.The whole has a medium, round body and low, smooth acidity reminiscent of an unripe apple. Located in the Kayanza region, it has been famous for years for Red Bourbon lots from local farmers, which stand out due to their natural, high sweetness, often balanced by caramel and fruit accents. These are profiles with low to medium acidity and a medium to high, pleasantly sticky body.In the case of this specific lot from the current harvest, the character remains very consistent with what we usually expect from Nemba. The aroma is dominated by berries, caramel, and citrus — above all lemon, which gives the whole profile freshness and lightness.
