ABOUT THE FARM AND REGION


Rodrigo Sánchez is the producer behind this coffee. Based in the Huila region of Colombia, he has gained fame in recent years for his work on modern coffee fermentation. On his farms, he develops controlled fermentation methods that allow for the extraction of very intense and precise flavor profiles from the beans.


The Huila region has long been recognized as one of the best places for coffee cultivation in Colombia. The high altitude of the plantations, fertile soils, and significant temperature differences between day and night cause the fruit to ripen more slowly, building a higher concentration of sugars and aromas.



ABOUT THE PROCESSING


This lot underwent washed processing with co-fermentation. In the first stage, the fruit undergoes controlled fermentation involving selected microorganisms that enhance tropical fruit aromas. Subsequently, the beans are washed and dried as in the classic washed method. Thanks to this, the coffee maintains the clarity characteristic of washed processing while simultaneously gaining a very distinct, tropical profile. For us, the effect in the cup is like a mango lassi yogurt: sweet, fruity, refreshing, and delicious.



ROASTER'S OPINION


Last year, we tasted over 80 co-fermented coffees before ultimately selecting 4 lots for our offer. What captivated us about these 4 lots is that they are not one-dimensional; on the contrary, they are very complex and intricate. This specific one from Rodrigo provides an example of a well-processed co-ferment—done without haste, with composure, and with fermentation tested on small samples before preparing the full batch of coffee. This coffee will bring a lot of pleasure when served hot, but for fans of cold coffees (both V60 on ice and cold brew), it will be a bullseye!
