PROCESSING

A fine-tuned naturally processed microlot. All the fruits were picked being a deep purple color and dried entirely on African beds. That means they had adequate air circulation from all sides, that means from the bottom too! This means that the whole process worked extremely evenly and translated into depth and expression in the cup!


THE FARM

Wil has owned his farm since 1998, but it wasn't until 2015 that he decided to produce mint quality microlots! And that's not a problem at Santa Barbara. IH90, on the other hand, is a cross between timor and caturra, often called catimor.


ROASTER'S COMMENT

I usually approach catimoras with reserve. They often come out in the cup unclean, with detached and pointy acidity.  But lord love, this is where the terroir, in addition to Wil's skill, does the work. My grandmother's favorite saying was always "you can't make a whip out of a sh*t," but I guess she's never been to Santa Barbara!


PACKAGING

The coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! A plastic jar turns out to be pretty eco-friendly, just remember to put it in the right container, or find a creative way to reuse it at home.
