It is impossible to drink the same blend twice. Heraclitus knew this, and we believe the guy. However, he had no way of grasping the fact that life is like the helium-6 isotope - a wildly unstable joke of the universe. We know that, and that's how Elixir came to be! Harvested by hand, selectively, with even more emphasis on the ripest fruits, which go to the natural. Then to water, to get rid of floaters (unripe or defective cherries), 48 hours of fermentation in the tank and to dry. All ready after about 25 days.
PRODUCER
Juan Saldarriaga is the gentleman behind the coffee production at his La Claudina. Harvesting in the Ciudad Bolivar area takes place once a year, between September and January, which means we're in for a real treat here! The Antioquia region is mainly associated with the mass production of commercial quality coffee, and Juan himself was involved in growing and exporting in this sector until 10 years ago. Around that time, a growing number of smaller producers in the area decided to take the opposite path, focusing on achieving more interesting quality results - and this allowed them to enter the specialty coffee segment. Juan transformed the grassroots initiative into a rigid group of committed, experience-exchanging producers who are constantly working to improve standards at all stages of the production of these interesting entrees.

Washed using double fermentation. First, whole cherries for 100 hours, then into a depulper and again, before drying, the processed parchment ferments another 100 hours. The result is one of the cleaner coffees we’ve had in recent months.

Sebastian is one of those most innovative and quality-crazy Colombian producers. Exotic botanical varieties, lab-grown processing equipment, an open mind and a willingness to push barriers, that’s what we’re talking about here. El Placer is a world-class coffee deliberation. Benjamin, on the other hand, is a true legend in the coffee world and an orchestra man. On behalf of Beneficio San Vicente, he works with more than 600 (!) small producers, connecting them with roasters or importers to establish long-term relationships. In addition, he has his own farm, La Salsa, with which he has won the prestigious Cup of Excellence twice in recent years. Note... exactly with this lot of geisha!
PROCESSING
pink bourbon: Double fermentation using the carbonic maceration technique. First the whole cherries spend 2 days in sealed tanks, accompanied by carbon dioxide. Then depulping – separating the grain from the fruit. Then another two days of fermentation, this time under water and drying. geisha: An element of fermentation was added here to the ‘classic’ washed, during which, before depulping, the fruit spent two days in air-restricted barrels. This procedure boosted the intensity of the profile noticeably, but did not introduce the funky, crazy flavor notes typical of such plays.

It is no coincidence that I chose this particular blend to compete. It is a definite TOP3 of the coffees I have ever drunk. The intensity of sweetness, the balance of fruity, floral and herbal notes, the amazingly layered – something beautiful! What you can’t think of, it’s here!

Wilder is a veterinarian by training, specializing in animal husbandry. In 2016, when coffee prices were in notorious decline and his father became seriously ill, he and his brother decided to uplift the family farm.
Despite implementing complex processes and tightly controlled processes, their coffees initially cupped only in the 80-83 range on the cupping scale. Wilder began testing soil samples and applying specific nutrients and fertilizers to neutralize the pH value, thereby increasing the availability of nutrients for the trees.
Today these effects are more apparent than ever, and this pink bourbon is another coffee from Wilder that delights us with its complexity.

PROCESSING
The key word: yeast! After sorting, the berries are placed in a disinfected plastic barrel, and a solution of a specially selected, specific yeast culture is sprayed on each successive layer of cherries. The tank is then sealed tightly, and fermentation with limited oxygen takes two days. After this time, the coffee is rinsed with clean water to stop the process immediately. Finally, it is put into African beds for drying.

Samambaia is a farm owned by a true legend of Brazilian coffee - Henrique Cambria, a multiple Cup of Excellence finalist. During one hot Brazilian summer, Henrique hosted us at his beautiful home, from which we made a base to visit the surrounding farms affiliated with the San Coffee cooperative. Knowledge, experience and a bag of amazing anecdotes - we soaked it all up from this amazing guy late into the night. Henrique is one of the pioneers when it comes to complex, fruity and against the stereotypes of "boring, chocolate and nutty Brazilian" microlots. Samambaia exemplifies an ultra-professional, substantive approach to running a farm: detailed phytosanitary inspections of the fields, continuous training based on modern quality control programs and, most importantly, an above-average commitment from the entire team working on the farm.

THE FARM
San Coffee is a rarity in Brazil. Most co-operatives in the country are made up of hundreds or thousands of producers, whose role is often limited to just supplying the coffee, nothing else. San Coffee is made up of only 20 producers who also own the company, with equally distributed shares of 5% each. We have been working with them since the very beginning of Heresy, presenting fruity microlots like Taquaral, Campo Alegre and Samambaia. This time it's time for the classic product of their work!

Before being spread for drying, the cherries underwent an extended fermentation. As a result in the flavor profile you'll find clear, fruity, intense flavors and some fizzy acidity. But rest assured, it's all in a well rounded manner!

PROCESSING
Natural, but fermented. That is, the cherries spent two days in an air-limited environment before being decanted for drying. This additional fermentation increased the depth and added some fruity layers to the profile. A masterpiece!

Here's what Louisa herself says:
“I've always had a contact with coffee. I loved to come during the harvest, but I ended up taking up another field. I graduated in medicine, but with the death of my father came the need to return to the farm. It was his apple of the eye and life's calling. Every day I look at all that he built and I'm proud of him!”
Luiza took over the management of the plantation in 2021, but she began taking expertise and knowledge from her father several years earlier. One of the priorities at Boa Vista is to continually upgrade the skills of the crew in order to realize the full potential of the farm's location, which is beneficial to the production of high-quality microlots, year after year!

Fruity Brazil. Keyword! Luiza and its Boa Vista debut in heresy jars. The coffee is full of vinous sweetness, supported by notes of tropical fruits and ripe citrus, all beautifully closed with a chocolate coating.

PROCESSING
A washed process in Kenya is like freezing cold vodka on the table during Polish feast. Typical and must be! Before being stripped of their dign..., sorry, of the cherries, the beans are first sorted. Then they spend the night doing crazy things, that is fermenting. The next morning - a splash of water to tidy up! Then recuperating in the sun from 8 to 14 days.
THE FARM
Gachami is one of 12 washing stations affiliated with the well-known Baragwi cooperative. Coffees from these regions regularly feature in our offerings: Thimu, Muchagara or Guama. And the region itself, where the crops are located, is Kirinyaga, and that means one thing: incredibly fruity and deep in flavor lots, stable and expertly processed year after year!
ROASTER'S COMMENT
How well this coffee is holding up (after all, more than a year after harvest) is incredible. While waiting for the fresh Kenyan coffees to ship to Europe, we are roasting beans that could easily stand with these new ones for the Pepsi challenge. Jammy, sweet, clean and juicy. Delicious.
