Some 75% of all coffee produced in the world comes from Brazil, the vast majority being commercial grand blends from around the region. In the world of speciality coffee, we have to deal with those as well. That's why we created the Antidote, a coffee that is an antidote to the flood of santos, cerrados, and other coffees, that are far from transparent and demonstrating the producer's role in the whole process. This is for fans of the classics who do not let go of quality. For those who value true fair trade. The first classic brazil in our range!
Specialty quality bean coffee, roasted at Heresy roastery by the 2020 Roasting Runner-up. Light roasted, designed for pour-over brewing methods or pour-over in a cup. A profile with a classic Brazilian flavour, with nut and chocolate notes, in the highest quality.
Country: Brazil
Producer: 20 members of San Coffee Cooperative
Farm: San Coffee
Varietal: mundo novo, topazio, catuai
Processing: natural
Altitude: 900 - 1200 m a.s.l.
PROCESSING
20 manufacturers, the same natural processing technique calibrated between them. Thanks to close cooperation and rigid standards, each lot is processed and dried in an almost identical manner.
THE FARM
San Coffee is a rarity in Brazil. Most co-operatives in the country are made up of hundreds or thousands of producers, whose role is often limited to just supplying the coffee, nothing else. San Coffee is made up of only 20 producers who also own the company, with equally distributed shares of 5% each. We have been working with them since the very beginning of Heresy, presenting fruity microlots like Taquaral, Campo Alegre and Samambaia. This time it's time for the classic product of their work!
ROASTER'S COMMENT
In the cup as classically as possible. Acidity practically invisible, shadow work. Chocolate and nuts in the liquid form. You know what I mean!
PACKAGING
The coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! A plastic jar turns out to be pretty eco-friendly, just remember to put it in the right container, or find a creative way to reuse it at home.
For those of you who only associate the term "blend" with budget-friendly blends of classic Brazilian, it's time to break the boring dogma! This jar contains 69% of fruity Honduras and 31% of what-just-came-to-a-roaster's-mind. The result? Always sweet. Always fruity. Always surprising! Oh, and always over 86 points, because that's the only kind of coffee we have on the menu. This is a polyjuice Elixir, stirring up emotions like when you open a surprise gift. To be enjoyed every day or on special occasions, for those who demand more from their daily brew or for those who demand an exceptional price from exceptional coffee. Suitable to start your adventure with Heresies (beware, it's addictive)!
Specialty coffee blend roasted at Heresy by the 2020 Polish Roasting Vice Champion. 69% of Honduras and 31% of mysterious but always fruity and floral arabica of the highest quality. A profile with high intensity, depth and always fruity character!
Country: Honduras / somewhere cool
Producer: Marysabel Caballero / some other pro
Farm: El Puente / somewhere beautiful
Cultivar: caturra + bourbon / something nice
Processing: washed / something cool
Altitude: 1600 - 1900 m.a.s.l. / somewhere high
Harvest: always fresh
Cup score: always above 86 / 100 points
PROCESSING
The base is a classic washed, just as the lord commanded. Depulping, washing, a moment of fermentation in the tank and drying in the ideal conditions of the Marcal region.
THE FARM
Catuai from El Puente is a grain-archetype. A clean, sweet, simple caramel brew with notes of red fruit and a citrus stamp in the background. From a legend among producers, the world-famous Marysabel Caballero. This one doesn't even need a special introduction! It is impossible to go wrong here.
ROASTER'S COMMENT
It is impossible to drink the same blend twice. Heraclitus knew this, and we believe the guy. However, he had no way of grasping the fact that life is like the helium-6 isotope - a wildly unstable joke of the universe. We know that, and that's how Elixir came to be! Insanely unstable, always sweet. Every time different, every time fruity as hell. We dump the best coffees in it, because who can say no? Take a sip of Elixir and feel like... whatever you want!

Before being spread for drying, the cherries underwent an extended fermentation. As a result in the flavor profile you'll find clear, fruity, intense flavors and some fizzy acidity. But rest assured, it's all in a well rounded manner!

Specialty beans from El Salvador roasted at Heresy by the 2020 Polish Roasting Vice-Champion. Light roast, designed for filter or cup brewing. A profile characterized by high sweetness with juicy acidity, reminiscent of oranges. Winey notes in the background. A cup full of balance, clarity and intensity, highlighting a lingering aftertaste.
Country: El Salvador
Region: Apaneca

Farm: Finca Atzumpa
Varietal: Bourbon
Processing: Natural
Altitude: 1400 m.a.s.l.
Harvest: February 2023
Cupping score: 87 / 100 pts
PROCESSING
A classic natural, managed professionally. Ripe cherries are scattered on a clay patio and dried in dry, stable conditions for about 20 days. Low humidity and stable farm temperatures are key here - clean, sweet and deep cup here!
PRODUCER
Andres represents the fifth generation of producers, which means that his great-great-grandfather was already growing coffee in the Apaneca region in the second half of the 19th century. Well, Andres seems to know how to do it, as his coffees took the top spots in the Cup of Excellence in 2018 and 2019. He and his family are also the founders of the FUNDATACO Foundation, which helps talented children from the area get into soccer clubs and start sports careers with the support of scholarships. Amazing stuff!
ROASTER'S COMMENT
Is this the best coffee from El Salvador I've had? Perhaps. I think it is. Love from the first sip. High, sticky sweetness balanced by ripe, orange acidity. All in a slightly winey, as well as fruity anturage. And also some florals wiggling in the background. Everything rounds out beautifully here.

Specialty beans from Kenya, roasted at Heresy by the 2020 Polish Roasting Vice-Champion. Light roast, designed for filter or cup brewing. A profile featuring high, fruity juiciness, great depth and lots of character.
Country: Kenya
Region: Kirinyaga
Producer: Baragwi Coop
Varietal: SL28, SL34
Processing: washed
Altitude: 1700 - 1800 m a.s.l.
Harvest: 2023
Cupping score: 87.5 / 100 points
PROCESSING
A washed process in Kenya is like freezing cold vodka on the table during Polish feast. Typical and must be! Before being stripped of their dign..., sorry, of the cherries, the beans are first sorted. Then they spend the night doing crazy things, that is fermenting. The next morning - a splash of water to tidy up! Then recuperating in the sun from 8 to 14 days.
THE FARM
Gachami is one of 12 washing stations affiliated with the well-known Baragwi cooperative. Coffees from these regions regularly feature in our offerings: Thimu, Muchagara or Guama. And the region itself, where the crops are located, is Kirinyaga, and that means one thing: incredibly fruity and deep in flavor lots, stable and expertly processed year after year!
ROASTER'S COMMENT
How well this coffee is holding up (after all, more than a year after harvest) is incredible. While waiting for the fresh Kenyan coffees to ship to Europe, we are roasting beans that could easily stand with these new ones for the Pepsi challenge. Jammy, sweet, clean and juicy. Delicious.

Specialty beans from Rwanda, roasted at Heresy by the 2020 Polish Roasting Vice-Champion. Light roast, designed for filter or cup brewing. A profile characterised by high sweetness with ripe, quite intense acidity with notes of red fruits, citrus, flowers and herbs.
Country: Rwanda
Producer: Agnes Mukamushinja
Varietal: Bourbon
Processing: Washed
Cupping score: 86.5 / 100 points
PROCESSING
Classic washed, just as the lord commanded. Depulping, washing, a moment of fermentation in the tank and drying on African beds, in the ideal conditions of the Gicumbi region.
THE FARM
Nova Coffee is in the hands of Agnes and Felix, a married couple who founded the company relatively recently, in 2015. They are both coffee producers from a 155-hectare farm, as well as exporters working with thousands of small producers. The entire crop is located in the northern part of the country, around Lake Muhazi - google it and drop your jaw.
ROASTER'S COMMENT
The reflection of the terroir in the cup here is a strong 10/10. It is clean, crisp and distinctly fruity. High sweetness with ripe, quite intense acidity. Red fruit, citrus, some flower and herb in the background. A washed Rwandan bourbon in its full glory!

Specialty beans from Guatemala roasted at Heresy by the 2020 Polish Roasting Vice-Champion. Suitable for pour-over brewing methods or poured in a cup. A profile characterized by high sweetness complemented by notes of forest fruits, black tea and citrus.
Country: Guatemala
Region: Huehuetenango
Varietal: maragogype
Processing: natural
Producer: Diana & Hector Ovalle
Farm: Las Codornices
Altitude: 1700 m.a.s.l.
Harvest: 2023
Cupping score: 86.5 / 100 points
PROCESSING
The dry and stable climate of this part of Huehue is begging for a juicy natural. Drying is even, with no unexpected changes in humidity or other unexpected weather patern. The result is a deep, fruity profile that offers wonderful nuances.
THE FARM
Las Codornices is a unique place - a farm located in the heart of the driest area in Huehuetenengo, where... no one grows coffee. Well, almost no one! Diana and Hector have created a unique terroir, accomplishing the almost impossible. The plantation is irrigated using a meticulously designed system, based on reservoirs and water from the river flowing in the valley. An original on a global scale!
ROASTER'S COMMENT
Next to Diana and Hector we are short and thin as a snake’s ass! They are just a pair of heretics. They grow coffee where no one else has ever dared. Dry, something like on the Kazakh steppe, but they managed with a clever irrigation system. In the cup, the essence of both variety and terroir. You’ll find a dense and sticky body, with notes of forest fruits, a whole range of caramel and chocolate stories, all rounded off with ripe acidity.

PRODUCER
This woman is a legend. A coffee superstar. Marysabel comes from a family with more than a century's tradition in coffee growing, and she established her own farm, El Puente, with her husband 25 years ago. With a focus on developing quality beans, they have become regional leaders and Cup of Excellence finalists. Marysabel and Moises' innate curiosity and absolute professionalism led them into growing multiple botanical varieties and experimental bean processing.

Specialty beans from Costa Rica roasted at Heresy by the 2020 Polish Roasting Vice-Champion. Light roast, designed for filter or cup brewing. A profile characterized by high complexity with winy, fruity and caramel notes.
Country: Costa Rica
Region: Chirripó
Producer: rodzina Ureña-Rojas
Farm: Cafe Rivense
Varietal: caturra, catuai
Processing: natural
Alttiude: 1700 m a.s.l.
Harvest: 2023
Cupping score: 87 / 100 pts
PROCESSING
First the cherries go through a short pre-drying process. Then they are dried on long African tables under something that looks like your grandparents' foil box on the plot, you know, where they grow tomatoes, cucumbers. Only like seven times longer.
THE FARM
The family business of Mr and Mrs Ureña, where everything runs like Swiss clockwork. We've been going there for three years now and it's a beautiful thing. Vista al Chirripo is the highest plantation on the farm, where a small wooden house stands right next to the trees of this caturra, with windows spanning the highest peak in the country. It cannot be described with words, but if you want to impress someone the most in your life, take that someone right there and wait together for the sunrise over a cup of coffee. Just don't kill the mood with a question about the number of clicks, please.
ROASTER'S COMMENT
For the third year in a row, we are buying coffees from Ricardo and his cheerful family team. And for the third year in a row, a lot of El Higueron plot in a jar! A rite of Costa Rican fruity natural: high intensity, winey sweetness, lots of body, even more complexity!
In the cup, a full reflection of the terroir. High, sticky sweetness coming a little from the processing and a little from the variety itself. Quite a lot of complexity, wine notes intertwine with fruit and caramel notes. Round, silky body.

Specialty beans from Guatemala, roasted at Heresy by the 2020 Polish Roasting Vice-Champion. Light roast, designed for filter or cup brewing. A profile featuring full-bodied, fruity-wine sweetness, supported by tropicals, florals and caramel elements for balance.
Country: Guatemala
Region: Frijanes
Producer: Castillo Family / Erik de la Roca
Varietal: H1
Processing: Natural
Altitude: 1700 m a.s.l.
Harvest: January - February 2023
Cupping score: 87.5 / 100 pts
PROCESSING
After harvesting, the coffee is thrown into a tank across the fruit and lies there, fermenting a little, for about 24 hours. It is then spread out to dry on African beds. The process is carried out in a professorial manner - zero fermenting impurities, instead 120% of the meat is squeezed out of this bean here.
THE FARM
Agua Tibia is managed by a producer friend of ours, whose coffees from La Esperanza we've had in the roaster before. Great conditions, altitude and the dedication of the entire team under Erik's leadership make these coffees simply better and better every year!
ROASTER'S COMMENT
There's already been a geisha, time for something different, but from the same people! H1 is one of Central America's most interesting hybrids, combining disease resistance with a wonderful effect in the cup, behind which are the genes of Sudan Rume, an Ethiopian fruity-floral variety. Performed by the team at Agua Tibia: a full-bodied, fruity-wine sweetness, supported by tropicals, florals and caramel elements for balance. Very much worth it!
PROCESSING
Before being stripped of their dign..., sorry, of the cherries, the beans are first sorted. Then they spend the night doing crazy things, that is fermenting. The next morning - a splash of water to tidy up! Then recuperating in the sun from 8 to 14 days.
THE FARM
The Thimu processing station belongs to, as far as we know, the largest cooperative in Kenya, called Baragwi. In turn, the region where the fruit is grown, Kirinyaga, is famous throughout the coffee world for its good quality crop.
ROASTER'S COMMENT
Classic Kenya! No need to write a two-page essay here. Fruity, citrusy, sweet and refreshing. The whole package, typical of the Kirinyaga region.

Specialty beans from Kenya roasted at Heresy by the 2020 Polish Roasting Vice-Champion. Light roast, designed for filter or cup brewing. A profile characterised by candy sweetness, ripe blueberry acidity and a silky texture.
Country: Kenya
Region: Northern Rift Valley
Farm: Endebess Estate
Varietal: Kenyan varietals mix
Processing: natural
Altitude: 1750 - 1950 m a.s.l.
Harvest: November - December 2022
Cupping score: 87.5 / 100 pts
PROCESSING
A small river, the Koitobos, runs close to the farm - the ripe fruit is washed with water taken from this very rivulet and then dried whole on African beds. The process usually takes between 21 and 28 days.
THE FARM
Endebess Estate is a plantation located in a slightly less popular region of Kenya, the Northern Rift Valley, very close to the border with Uganda. The farm itself sits at the foot of Mount Elgon, a now extinguished volcano that lies on the border between the countries.
ROASTER'S COMMENT
Kenya natural! But what do you mean? Increasingly, this process is appearing in coffees from a country associated as a mecca for washed-down processing. We've drunk some of these Kenyan naturals over the past few years, but this is the first one we've enjoyed 100%.
