Its operations are overseen by an agronomist responsible for implementing good agricultural practices and educating producers. The agronomist works directly with the farmers, assisting them in gaining access to tools and selecting cultivation methods best suited to the conditions of their local plots.The station collaborates with 1,074 smallholder producers, each of whom owns an average of about 150 coffee trees. The plantations are situated at altitudes above 1,700 meters above sea level, near the Kibira forest, which favors obtaining high-quality raw material. The station itself has over 200 drying beds and can process up to 750 tons of coffee cherries annually. The entire process — from cultivation to processing — is covered by a monitoring system that ensures full traceability.Nemba is also engaged in the development of local communities, implementing projects that support farmers, including animal husbandry, strengthening cooperative structures, and improving crop yield.ROASTER'S OPINIONNemba is a washing station whose coffees we are always very keen to reach for. Located in the Kayanza region, it has been famous for years for Red Bourbon lots from local farmers, which stand out due to their natural, high sweetness, often balanced by caramel and fruit accents. These are profiles with low to medium acidity and a medium to high, pleasantly sticky body.In the case of this specific lot from the current harvest, the character remains very consistent with what we usually expect from Nemba. The aroma is dominated by berries, caramel, and citrus — above all lemon, which gives the whole profile freshness and lightness. In the flavor, distinct blackcurrant, juicy blueberries, and again lemon and sweet caramel appear, building a harmonious, well-balanced structure.The body is medium, but distinctly sticky and oily, which adds fullness and depth to the coffee. The aftertaste remains long, caramelly, and pleasantly sweet, while the acidity is low, smooth, and perfectly highlights the high natural sweetness.RECIPEUse your favorite AeroPress recipe. For some, this thought is still anathema. Canephora has still not gained the status of a coffee worthy of the best producing countries; in Costa Rica, its cultivation is actually banned.ABOUT THE FARMThe owners of Kiva Estate, a group of long-time friends who make a living from non-coffee professions, treated the project as a challenge – and, as it seems to us, a way to burn through a certain amount of capital (for the sake of the idea). For a year, they traveled around other producing countries, analyzing the differences in the cultivation and processing of Canephora and Arabica. They also gradually gathered the equipment needed for processing and brought a coffee cultivation specialist from Nicaragua to supervise the entire venture. This probably made a lot of sense, because although they are enthusiasts, they live in cities on a daily basis and had no prior experience with cultivation.The first harvest in 2023 immediately brought them publicity during the World of Coffee trade show in Athens. Since then, the fame of Rufina has only been growing, and the Brothers are also jumping on this train.PROCESSINGA few words about the processing – as is often the case with fine Canephora, we have anaerobic processing here. The coffee spent 10 days in fermentation tanks. Then, it underwent slow drying at a strictly controlled temperature. The result: a complex, deep, and delicate flavor. This is one of the better Canephoras we have tasted.ROASTER'S OPINIONPanama means Geisha? Well, no. We have an absolutely unique specimen for you – Canephora from a country famous for Arabica. The high altitude of the farms, the cool climate, and the long ripening period of the cherries translate into coffees with high sweetness, a clean profile, and great elegance in the cup.The coffees included in this lot come from the El Naranjal, Las Naranjas, and Los Angeles farms. The farmers manage their land under the shade of forest and fruit trees, taking care of biodiversity and soil fertility. Ripe cherries are hand-picked and then subjected to classic washed processing. After fermentation and washing, the coffee is dried for about twelve days under carefully controlled humidity and sun exposure.Behind the project is Cafetos de Segovia, an organization that has for years been helping local producers reach the specialty market directly. It places great emphasis on supply chain transparency, long-term cooperation with farmers, and fair compensation for high quality. Cherries are harvested at peak ripeness, hand-sorted multiple times, and then, after depulping, fermented in water for approximately 48 hours.
