Whole-bean specialty coffee from Ethiopia and Costa Rica, roasted by Heresy roasting brand. Medium roast, perfect for espresso machines and moka pots. You can expect hints of stone fruits, flowers, citrus fruits and chocolate.Origin: Ethiopia / Costa RicaRegion: Sidama / ChirripoFarm: Nguisse Kayimo / Urena Rojas FamilyProcessing: Natural / Anaerobic NaturalAltitude: 2050 / 1800 m a.s.l.Cupping score: 87 / 100 ABOUT THE FARM AND THE PRODUCERNguisse is one of those producers for whom coffee cultivation is much more than just a random agricultural activity. For many Ethiopians, coffee is a symbol, a source of national pride, and a way of life – a group that certainly includes this finalist of last year's Cup of Excellence! His small farm, approximately 8 hectares in size, is located in the Bensa region, which in our opinion holds the highest quality potential. The crops here reach well above 2000 meters above sea level and usually consist of selected, single botanical varieties.A family business run by the Ureña family, where everything runs like clockwork. We have been visiting them for many years, and it is a beautiful thing. Vista al Chirripo is the highest-altitude plantation on the farm, where right next to the trees of this Caturra stands a small wooden house with windows overlooking the highest peak in the country. It is impossible to describe in words, but if you want to impress someone more than ever before, you take them right there and wait together for the sunrise over a cup of coffee. Just don't kill the mood by asking about the click count, please.ABOUT THE COFFEE PROCESSING ON THE FARMEthiopia: Processed as natural – drying the coffee seeds within the whole fruit. Freshly harvested cherries undergo an initial selection where those with defects are discarded. Then, they are spread out on so-called African beds – long tables, sometimes stretching for dozens (!) of meters, with a mesh lining that allows for even air circulation throughout the process, resulting in homogeneous drying. The whole process takes between 25 and 30 days, depending on the weather.Costa Rica: First, the cherries undergo a short pre-drying process, and then they are sealed for 2 or 3 days in airtight tanks for fermentation with limited oxygen. Then, drying on long African tables under something that looks like the plastic tunnels used by grandparents in allotment gardens, you know, the ones where tomatoes and cucumbers grow. Only about seven times longer.ROASTER'S OPINIONThis is our idea for this espresso: we created a roast profile that showcases the beautiful floral and fruity notes typical of high-quality Ethiopian coffees, while simultaneously offering a good deal of chocolatey-dessert depth to balance the acidity and give the cup equilibrium. As a result, whether you brew it in an espresso machine, a moka pot, or even as a filter coffee, you will get a full, round, and complex coffee with a long-lasting, syrupy aftertaste!Store in a cold and dry space.

BeMyBean - Costa Rica Mirazú Geisha Raisin Honey Filter 250 g

Manufacturer: BEMYBEAN

Roasting date: 15.05.2026

A whole-bean specialty coffee beans from Costa Rica, roasted by BeMyBean from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of strawberry compot, peach flowers, lychee, kumquat, dragonfruit and blackberry.Country: Costa RicaRegion: TarrazuFarm: Mirazú Processing: Raisin HoneyVarietal: GeishaAltitude: 1600 m a.s.l.ABOUT THE COFFEECosta Rica Mirazú is a coffee that makes a huge impression from the very first sip with its intensity and aromatic complexity. In the cup, you will find juicy strawberry compote, exotic lychee, kumquat, and dragon fruit, cut through by blackberry and an exceptionally floral character reminiscent of peach blossom. Thanks to the unique raisin honey process and the Geisha variety, the coffee is incredibly sweet, multi-dimensional, and almost wine-like on the palate – with an elegant, distinct acidity and a long, perfumed finish. It is one of those coffees that feels more like a natural wine tasting than a classic cup of filter coffee.ABOUT THE REGIONCosta Rica Mirazú comes from the Tarrazú region – one of the most renowned coffee-growing areas in Costa Rica. The plantation is situated at an altitude of approximately 1,600 m a.s.l., where cool nights, abundant sunshine, and volcanic soils create ideal conditions for growing exceptionally high-quality beans. In this part of the country, fruit plantations dominate, particularly passion fruit, which is why coffee is grown here on a small scale and with tremendous attention to every detail. Only fully ripe, red coffee cherries are selected for the harvest.ABOUT THE PROCESSINGThis exceptional character is partly due to the incredibly rare raisin honey processing method. This is an advanced fermentation process that combines elements of natural drying and honey processing. The first stage begins even before depulping. Freshly harvested coffee cherries are dried whole in the sun until they begin to resemble raisins. During this process, a highly intense concentration of sugars and aromas takes place within the fruit. The pulp becomes denser, stickier, and incredibly sweet, while fermentation develops deep fruity and winey notes.Only after being partially dried do the cherries move to the next stage, which is the removal of the skin. In classic honey methods, this happens almost immediately after harvesting, whereas here, the fruit undergoes controlled pre-drying first. As a result, a massive amount of pectin and sugars remains with the bean.Next, the coffee goes into the actual honey fermentation, during which the beans dry alongside a very thick layer of sticky pulp. This high pectin content is what accounts for the exceptionally creamy sweetness, intense aroma, and characteristic notes reminiscent of raisins, fermented fruit, and sweet wine. The process is extremely demanding and requires continuous monitoring of temperature, humidity, and even drying. Even a minor mistake can completely disrupt the coffee's profile. The result is a coffee with intense aromatic performance, very high sweetness, and a complex, multi-layered acidity. Raisin honey yields a juicier and deeper profile than classic honey, while maintaining greater clarity of flavor than many natural coffees.ABOUT THE VARIETYThe botanical variety itself – Geisha – also plays a huge role here. This is one of the most prized and prestigious coffee varieties in the world. Geisha originally hails from Ethiopia, but it gained global fame in Panama, where it began breaking price records at the most prestigious specialty coffee auctions. The uniqueness of Geisha is determined above all by its incredible sensory profile. This variety can generate exceptionally clean, floral, and tea-like aromas, which are often associated more with jasmine, bergamot, or exotic fruits than with classic coffee. Geisha typically has a very elegant structure, a silky body, and a distinct, juicy acidity. However, it is a variety that is extremely difficult to cultivate. The trees yield smaller crops, are more climatically demanding, and require high growing altitudes to fully develop their potential. Additionally, harvesting must be highly precise, as even a slight immaturity of the fruit can heavily impact the final taste. It is this combination of low yield, difficult production, and an absolutely unique sensory profile that makes Geisha recognized today as one of the most exclusive specialty coffee varieties. In the case of Costa Rica Mirazú, the Geisha variety meets the incredibly intense raisin honey processing method, creating a spectacularly aromatic, juicy coffee full of exotic sweetness. This is a filter coffee that can surprise even those who know the world of specialty coffee very well.Store in a cool, dry place.

In the cup, you will find raspberry, red gooseberry, pomegranate, and freshly squeezed lemon, with the overall profile resembling a fruity infusion of red fruits and citruses. The natural process gives it depth and a velvety sweetness, while maintaining a fresh, crisp profile. Perfect for those who enjoy modern, distinctly fruity coffees from Colombia.Colombia El Rosal comes from the Finca El Rosal farm, owned by Wilmer Cubillos, a producer from the Huila region who has focused for years on high-quality specialty varieties and a modern approach to processing. It is there, at an altitude of approximately 1,650 m a.s.l., that the Tabi variety matures – a unique hybrid combining the characteristics of Typica, Bourbon, and Timor, known for its very high sensory potential and intense sweetness. From the very first sip, Colombia El Rosal showcases its juicy, fruity character. Notes of raspberry, red gooseberry, and pomegranate dominate, giving the coffee a distinct, winey-fruity freshness. Lemon acidity brings lightness and energy, keeping the cup remarkably clean and refreshing despite the natural processing. In the background, a sweetness reminiscent of ripe red fruits and fruit syrup emerges, beautifully tying the entire profile together.PROCESSINGThe natural process highlights the intensity of the fruit and builds a fuller structure in the brew, yet the coffee remains very clear and elegant. It is a juicier and fresher natural rather than a heavy, fermenty bomb – with a distinct fruity character, but without excessive funkiness.Store in a cool, dry place.

BeMyBean- Nicaragua Jinotega Washed Espresso 250 g

Manufacturer: BEMYBEAN

Roasting date: 15.05.2026

A specialty coffee from Nicaragua, roasted in Poland by BeMyBean. Dark roast, perfect for espresso, coffee machines, and moka pots. You can expect hints of raisins in chocolate, caramel, mirabelle plum jam and biscuits.Country: NicaraguaRegion: JinotegaVarietal: Bourbon, Caturra, CatuaiProcessing: WashedAltitude: 1200 m a.s.l.ABOUT THE COFFEENicaragua Jinotega is a coffee that perfectly demonstrates why Central American espresso has such a loyal fanbase. It combines dessert sweetness with delicate fruitiness and offers a profile that is both pleasantly classic and full of character. In terms of flavor, chocolate-covered raisins, thick kaymak (dulce de leche), and mirabelle plum jam emerge, bringing a juicy, slightly plum-like fruitiness. In the background, buttery biscuits and a subtle note of caramelized sugar are detectable, giving the whole cup a soft, creamy finish. This is a medium-intensity espresso with balanced acidity – it will perform excellently both solo and in milk-based drinks. The coffee comes from the Jinotega region, located in the northern mountains of Nicaragua at altitudes exceeding 1,200 meters above sea level. Behind this coffee are mainly small family farms, where the fruit is harvested by hand from December to March. In the Jinotega region, coffee cultivation is a part of everyday life – most producers rely on traditional working methods and multigenerational experience.ABOUT THE PROCESSINGThe applied fully washed processing method, meaning full wet processing, has a huge impact on the cup's profile. It is precisely responsible for the clarity of flavor, clean finish, and elegant balance of this coffee. The process begins with the selective harvesting of ripe coffee fruit. Pickers choose only red, properly ripe cherries, as even a small share of unripe fruit could disrupt the sweetness and balance of the final brew.Right after the harvest, the fruit goes to a water selection. The coffee cherries are submerged in water to discard light, unripe, or damaged fruits that float to the surface. Next, an additional manual quality control is conducted. The subsequent stage is depulping, which is the separation of the skin and most of the pulp from the bean. After this process, the beans are still covered with a sticky layer of mucilage – natural sugars and pectins. Then the coffee goes into fermentation tanks. This is one of the most important moments of the entire processing. Natural enzymes break down the remnants of the pulp, and producers very precisely control the fermentation time to maintain the cleanliness of the profile and avoid excessive, alcoholic notes. In the case of this coffee, fermentation emphasizes the sweetness and fruitiness while leaving the cup incredibly clear. After fermentation, the beans are thoroughly rinsed with clean water. Thanks to this, the last remnants of mucilage are removed, and the coffee gains the elegance, lightness, and structured flavor profile characteristic of washed processing. The next stage is drying. The beans in parchment are spread out on patios or African beds and regularly turned so they dry evenly under the Nicaraguan sun. The process lasts from a few to several days and has a huge impact on the stability and longevity of the flavor. At the end, the parchment husk is removed, and the green beans are sorted by size and quality. The result? An espresso that is simultaneously sweet, creamy, and fluidly fruity. The kind you return to not because it tries to surprise you with an extreme profile, but because it simply tastes great every single day.Store in a cold and dry space.
