The projects conducts regular workshops with producers to emphasise quality and cover processes such as fermentation, drying, and cupping of their own coffees. Their coffee is processed at a mill in Gaitania, which now serves over 15 villages across Gaitania.THE PROCESSThe process begins with embracing mucilage for 24 hours. The beans then rest on a drying patio, fostering a harmonious profile. After a 15 to 25-day drying period, they undergo a stabilisation process before proceeding to the milling process, which results in a consistent profile.ROASTERS OPINIONIn 2019, the Black Condor Project was established to support farmers affected by the violence that had swept Colombia. Across 15 villages, assistance with growing, processing, and quality control has helped lift coffee quality. This washed lot shows everything they have achieved.

The first single varieties Marvin experimented with were Caturra and Millennium.The mill, named “Reina Elizabeth,” pays tribute to the farm’s previous owner, Elisa Alfaro Hidalgo (1928–2016), who was Marvin’s mother. Doña Elisa had strikingly blue eyes, which led locals in San Luis to claim that only a queen could have such eyes—hence the nickname “Reina Elizabeth.” In addition to her remarkable eyes, her kindness and the farm’s specialty coffee were also truly royal.

A touch of citric acidity and smooth texture make this coffee delicious through milk.ABOUT THE FARMFinca Santa Clara is located in the fertile Antigua valley, Guatemala. Surrounded by three volcanos, it has been in operation since 1930. Our partner Ricardo Zelaya is the fourth generation of his family to farm here. He introduced a dedicated approach to quality, winning the precious Cup of Excellence award in 2001. On the slopes of the Volcán de Agua, the estate climbs to an elevation of up to 2050m, with the Caturra and Bourbon in our lot grown between 1650 and 1700m. A quarter of the estate remains preserved forest, encouraging the biodiversity in which coffee thrives.THE PROCESSFor this lot, Ricardo used a traditional washed method. The freshly harvested cherries are first pulped to remove the outer skin, then fermented. After washing, the beans are dried on African beds inside a specially designed greenhouse. Our lot took around 21 days to dry, a slow process encouraging balance and complexity.ROASTERS OPINIONIntroducing our new Winter Coffee. The slow fermentation during processing creates depth and character, bringing notes of milk chocolate, pecan, and plum. As it cools, expect dried fruit and a touch of citrus, with plenty of sweetness and great balance.ABOUT THE FARMAndres is a first generation coffee farmer but, like many in Huehuetenango, his coffee is a family endeavour. In the town of Concepcion Huista, he and his wife have devoted themselves to learning everything about processing coffee from Yich Kalnahl: their 1.2 hectare finca. Surrounded by dense forest and rolling mountains, banana plants and indigenous trees provide great shade. With temperatures ranging from 13-26 degrees celsius, the finca benefits from a cooler microclimate that allows coffee cherries to slowly develop their flavour.THE PROCESSAndres’ wife takes care of processing. After harvest, the coffee is de-pulped, removing the cherry. The coffee is then placed in a tank and submerged in water to ferment for 32 hours. This relatively slow fermentation contributes to the complex profile. The fermented coffee is then washed thoroughly and placed on the patio to dry. It stays in the sun for about 8 hours per day for 7 days, and the family makes sure to turn it frequently to ensure even drying.
