From the very first sip, it brings distinct fruitiness—melon introduces a juicy, honey-like sweetness, blueberries add depth and freshness, while cardamom appears as a subtle, spicy accent that lends character to the whole cup.However, this is not just the result of processing. Behind this profile lies a specific location and method of work. The coffee trees grow at high altitudes in the Guji region, where coffee is traditionally grown among other plants, preserving natural shade and biodiversity. The name Daanisa itself comes from a local tree that is part of this landscape—a place where coffee is not grown in isolation from nature, but alongside it.A group of 44 local producers collaborating with the Dambi Uddo station is responsible for the beans. Only carefully selected, ripe cherries are processed, which are then dried whole on raised beds. This method allows the natural sweetness of the fruit to be preserved and builds a characteristic profile: intense, yet clean and structured at the same time.What we like most about this coffee is the synergy of energy typical of Guji combined with an elegance that makes you want to come back to it. The coffee cherries underwent a brief Carbonic Maceration fermentation in small, strictly controlled batches. This process allows for the precise extraction of the natural sweetness and complexity of the fruit without the risk of heavy, fermentative notes dominating. Next, the fruit was dried on shaded, raised beds, laid out in a thin layer. Slow and even drying helps preserve the clarity of the profile, the intensity of flavor, and the velvety texture for which the best CM Natural processed coffees are famous.This is another coffee season from the La Bendición farm that we reach for with complete confidence. In previous years, beans from Don Liberato and Sergio Jarquin proved that they can delight not only with their character, but above all with consistently high quality. The flavour goes in all sorts of fruity directions. It is exactly like reaching into a bag and pulling out a handful of colourful fruit gummies. Sweet, juicy and slightly tangy, enough to get your mouth watering.This coffee feels a little like the turn of summer into autumn. Summer is still hanging around, but you can already feel that autumn is just around the corner. The flavour works in a similar way. This is a natural, so there is no shortage of sweetness, but instead of heading towards heavy, dark berry notes, it stays bright, light and incredibly easy to drink. We described the profile as apricot syrup, papaya and yellow plums: plenty of bright, expressive fruit!The coffee comes from around Shantawene in the Bensa district of the Sidama region. It is processed at Buncho Station, whose name simply means “coffee tree” in the Sidama language. Established in 2018, the station receives cherries from small-scale producers in nearby villages.For the natural process, ripe cherries are sorted and then dried whole on raised African beds. At Buncho, this usually takes 14 to 16 days. The result is plenty of fruity sweetness and that characteristic sticky texture, but without any heaviness.Store in a cold and dry space.
