Surrounded by dense forest and rolling mountains, banana plants and indigenous trees provide great shade. With temperatures ranging from 13-26 degrees celsius, the finca benefits from a cooler microclimate that allows coffee cherries to slowly develop their flavour.THE PROCESSAndres’ wife takes care of processing. After harvest, the coffee is de-pulped, removing the cherry. The coffee is then placed in a tank and submerged in water to ferment for 32 hours. This relatively slow fermentation contributes to the complex profile. The fermented coffee is then washed thoroughly and placed on the patio to dry. It stays in the sun for about 8 hours per day for 7 days, and the family makes sure to turn it frequently to ensure even drying.

It’s a super sweet, dense espresso with spicy notes in the background.The Banka farm and washing station are located in Menglian Dai, Lahu, in Yunnan Province. The name comes from two neighboring villages, Banka Yi and Banka Er, where the coffee cherries are harvested. Yunnan Coffee Traders, partners of our importer, support coffee cultivation on site, manage the Banka mill and part of the farm, and focus on developing infrastructure and knowledge. They installed one of the first optical sorters in the region and experiment with processing methods such as yeast fermentation. They also grow new varieties, including Pacamara and Bourbon. Indochina has worked with YCT since they first began importing coffee to the United Kingdom in 2016. This is our third year of cooperation with this importer, and we hope to be able to present even more coffees from this region soon.

Coffee here is most often processed using the natural or honey method, and experiments with aerobic fermentation are also common.Fun fact: Our coffee lot was delivered to the station on the very day of harvest. Its parameters were then evaluated, and the cherries were placed in large hermetic tanks for 5 days of anaerobic fermentation. At the appropriate moment, the coffee is exposed to a temperature of 20°C to halt fermentation and remove yeast. The cherries then “mature” in the tanks for another 5 days before being transferred to solar dryers. Drying takes 30 to 45 days.

It is a coffee produced by the Idido station, available exclusively to the importer Cafe Imports, for which only Grade 1 beans from the Idido area were selected. It was the only coffee from Idido in that season to undergo washed processing. Part of the proceeds from the Malebo Project is donated to support the local orphanage, Ardent Children Center.

He comes from a family of coffee growers who, after moving away from conventional production and spending a period raising cattle, eventually settled in their current location. It was here that Sebastian decided to focus on producing high-quality specialty coffee.The farm covers 2.8 hectares and yields approximately 70 quintals of coffee annually. The main variety is Parainema, complemented by a young Geisha plantation. About half of the coffee is grown under controlled shade. Sebastian uses fertilization based on chicken manure and coffee pulp, supplemented with local blends adjusted according to soil analysis. He regularly prunes the coffee trees and monitors pests and diseases such as coffee borer beetle, coffee leaf rust, and leaf spot. In addition to coffee, he also grows avocados, bananas, and blackberries, while preserving trees and minimizing the environmental impact of farming.PROCESSINGThe coffee is processed using the honey method. The cherries ferment for approximately 36 hours in plastic bags, after which they are depulped and undergo a second, dry fermentation lasting another 36 hours. After fermentation, the beans are dried in parabolic solar dryers for 15–18 days, with regular turning and hand sorting. Once dried, the coffee is packed and stored on the farm before being delivered to the exporter San Vicente. The honey process requires minimal water usage, supporting sustainable and responsible production.ROASTER’S OPINIONSebastian Mejía’s Parainema shows two distinct faces that complement each other exceptionally well. On one hand, it offers medium, well-developed, and complex acidity typical of the Parainema variety. On the other, the influence of the honey process is clearly evident, delivering high sweetness and an intensely fruity, juicy profile.The aroma is very pleasant and enveloping, dominated by notes of ripe strawberries and citrus, supported by subtle floral accents that add lightness and elegance. On the palate, the coffee unfolds in layers: pronounced sweetness of tropical fruits and strawberries combines with lively, clean acidity reminiscent of various ripe citrus fruits.Despite its high sweetness and noticeable acidity, the cup remains very well balanced, smooth, and free of bitterness. The coffee is fresh, refreshing, and extremely drinkable, while still surprising with its intensity and clarity of flavor—especially for a coffee from Honduras. It is a proposition that blends varietal classicism with the modern, fruit-forward character of the honey process.BREWINGUse your preferred method and recipe. Brew this coffee like any other, using water at around 95°C. It is very forgiving and difficult to mess up.

Nearly four decades ago he started with hard labor at a processing station—milling, sorting, drying—where he learned the foundations of coffee processing. Today he runs his own farm, El Renacer, where every step of processing is dialed in to perfection.I chose a Colombian SL28, a super fruity and vibrant variety that already promises a party for your taste buds. On top of that, we add ginger co-fermentation. In short: we prepare microbes (Lactobacillus and Saccharomyces), feed them ginger and a bit of panela (a fancy kind of sugar), add freshly harvested cherries, and let everything ferment for 72 hours. After fermentation and depulping, the coffee is dried until it reaches ideal moisture and stability.So what does it taste like, my friend? A total flavor festival. The co-ferment takes center stage, but in the background you’ll find mandarin, lemongrass, high sweetness, and lots of citrus notes. Pour-over, espresso, or moka pot—it always turns out great.ROASTER’S OPINIONThe famous El Renacer farm + SL28 + ginger = TOTAL JINGLE BELLS!!! What more is there to say—first co-ferment, check. An ultra-fresh, spicy-citrus coffee. Ginger leads the way, obviously, but there’s much more going on: mandarin, lemongrass, high sweetness, and a ton of citrus. And as a bonus—no matter how you brew it, it always comes out great.
