Located in the Kayanza region, it has been famous for years for Red Bourbon lots from local farmers, which stand out due to their natural, high sweetness, often balanced by caramel and fruit accents. These are profiles with low to medium acidity and a medium to high, pleasantly sticky body.In the case of this specific lot from the current harvest, the character remains very consistent with what we usually expect from Nemba. The aroma is dominated by berries, caramel, and citrus — above all lemon, which gives the whole profile freshness and lightness. In the flavor, distinct blackcurrant, juicy blueberries, and again lemon and sweet caramel appear, building a harmonious, well-balanced structure.The body is medium, but distinctly sticky and oily, which adds fullness and depth to the coffee. The aftertaste remains long, caramelly, and pleasantly sweet, while the acidity is low, smooth, and perfectly highlights the high natural sweetness.RECIPEUse your favorite AeroPress recipe. For some, this thought is still anathema. Canephora has still not gained the status of a coffee worthy of the best producing countries; in Costa Rica, its cultivation is actually banned.ABOUT THE FARMThe owners of Kiva Estate, a group of long-time friends who make a living from non-coffee professions, treated the project as a challenge – and, as it seems to us, a way to burn through a certain amount of capital (for the sake of the idea). For a year, they traveled around other producing countries, analyzing the differences in the cultivation and processing of Canephora and Arabica. They also gradually gathered the equipment needed for processing and brought a coffee cultivation specialist from Nicaragua to supervise the entire venture. This probably made a lot of sense, because although they are enthusiasts, they live in cities on a daily basis and had no prior experience with cultivation.The first harvest in 2023 immediately brought them publicity during the World of Coffee trade show in Athens. Since then, the fame of Rufina has only been growing, and the Brothers are also jumping on this train.PROCESSINGA few words about the processing – as is often the case with fine Canephora, we have anaerobic processing here. The coffee spent 10 days in fermentation tanks. Then, it underwent slow drying at a strictly controlled temperature. The result: a complex, deep, and delicate flavor. This is one of the better Canephoras we have tasted.ROASTER'S OPINIONPanama means Geisha? Well, no. We have an absolutely unique specimen for you – Canephora from a country famous for Arabica. Following family financial struggles, Tagel set a goal to rebuild what was lost—and he realized this plan by creating a modern, quality-focused project based on collaboration with local farmers.Today, Hambela Goro works with 460 small-scale producers, many of whom own only a few hundred coffee trees. Although each batch is a natural composition of many micro-plots, the coffee maintains impressive consistency and a clean profile.ABOUT THE COFFEEThis lot is the 74110 variety—a selection originating from the JARC research program, known for its high sensory quality and clarity in the cup. Combined with the altitude of 2300 m a.s.l., it yields a coffee with a distinct structure, elegant acidity, and multi-layered aromatics.The washed processing was carried out with great precision. Cherries are harvested at peak ripeness, hand-sorted multiple times, and then, after depulping, fermented in water for approximately 48 hours. Drying takes place on African beds for 10–12 days, depending on weather conditions.The cup is dominated by an intense jasmine aroma, which builds lightness and elegance. It’s best to give it two weeks after roasting – it gains a lot with time!V60 RECIPECoffee dose – 19 gWater dose – 50 g → 300 gGrind size:8.4 EK43; 23 clicks ComandantePlace the filter in the V60 and rinse it with a strong stream of water so it adheres well to the walls.Grind the coffee, add it to the V60, and level the coffee bed.Pour 50 g of water, aiming at the dry spots to wet everything thoroughly. If the coffee is very fresh (foaming a lot when it contacts water), you can extend the bloom to 2 minutes or add an additional bloom at 1:00 (pour another 50 g and wait until 2:00).At 1:00 (or 2:00), start pouring into the very center of the V60 (circles about the size of a 5-złoty coin), using circular movements at a pace of 6–8 g per second (slightly below the second enlarged dot on the Acai kettle), keeping the water stream just below the point where the stream breaks.When you reach 250 g, lower the kettle to about 3 cm above the water surface (you no longer need circular movements) and finish pouring to 300 g.Perform a shake while holding the narrowing at the base of the V60 (both horizontally and vertically).
