The flavour goes in all sorts of fruity directions. It is exactly like reaching into a bag and pulling out a handful of colourful fruit gummies. Sweet, juicy and slightly tangy, enough to get your mouth watering.This coffee feels a little like the turn of summer into autumn. Summer is still hanging around, but you can already feel that autumn is just around the corner. The flavour works in a similar way. This is a natural, so there is no shortage of sweetness, but instead of heading towards heavy, dark berry notes, it stays bright, light and incredibly easy to drink. We described the profile as apricot syrup, papaya and yellow plums: plenty of bright, expressive fruit!The coffee comes from around Shantawene in the Bensa district of the Sidama region. The farm provides housing, medical care, and education for workers and their families, while focusing on responsible and environmentally friendly farming methods.The name "Mondul" comes from natural springs that have nourished the crops and local communities for generations. Water from these springs is also used for wet processing – after harvesting, ripe cherries are washed and fermented, then dried on raised African beds for about 7 days. This process preserves the clarity of the profile and brings out a delicate floral note, citrus, and tea-like qualities, without unnecessary heaviness or fermented character.ROASTER'S OPINIONIt is rare to come across coffee from a farm that has been operating continuously since 1899. Mondul is precisely such a case – one of the oldest and most recognizable farms in Tanzania, now belonging to Burka Estate at the foot of Mount Meru. The washed process emphasizes the clarity of the profile, allowing delicate florals, citrus, and a tea-like note to shine through.In the aroma, delicate flowers and fresh lemon come to the fore, with a light, tea-like note appearing in the background. In flavor, stone fruits build sweetness, while lemon brings a refreshing, medium acidity that does not dominate the profile. The finish remains gently tea-like. The flavour of the brew resembles plum, peach and jasmin.Origin: EthiopiaRegion: Worka, Gedeb, YirgacheffeFarm: Bekele GemedaVariety: HeirloomProcessing: WashedAltitude: 2000 m a.s.l.Cupping score: 87 / 100 ABOUT THE FARM This single producer lot comes from Mr. Bekele Gemeda in the Worka village in Yirgacheffe. Mr Bekele Gemeda is a resident of small village called Worka 13 kms from Gedeb town. He owns 6.5 hectares of coffee farm in one place and another 3 hectares in another place within the same village. He works full time in his farm assisted by his able children who completed their primary education but couldn’t find another job in towns. Mr Bekele, who is the father of 11 children, fully relied on the income he generated from his coffee farm. The coffee farm business also supports his two elder married sons who also work together with him.Mr Bekele Gemeda was incredibly grateful to see the care he has put into his coffee showed well enough in the cup to have his coffee kept separate, something that is rare in Ethiopia. The coffee is picked ripe and depulped the same day. There is usually a fermentation period of 8–12 hours in open-air tanks, then washed in water channels to remove the mucilage. The coffee seeds will be spread on raised beds to dry for 5–15 days, depending on the weather.ROASTERTea with honey and lemon and a piece of yeast cake with plum - that is what this coffee reminds me of.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. But always taste and then judge your coffee.Store in a cold and dry space.

The producer is Fernando Vargas, a third-generation coffee farmer. The farm covers 12 hectares, of which 11 hectares are dedicated to coffee.Fernando Vargas purchased the farm in 2011 and gradually developed it towards the production of specialty coffee. Pink Bourbon was introduced to the farm in 2017 and currently makes up about 30% of the crops. Other varieties grown include Colombia Amarillo and Caturra.Pitalito is one of the most highly regarded coffee production areas in Huila. The growing conditions favor coffees with high sweetness, complex acidity, and good structure.ABOUT THE VARIETYPink Bourbon is an Arabica variety particularly associated with Huila. It is valued for its high sweetness, good structure, and a profile that often combines red fruits, tropical fruits, floral notes, and delicate spiciness.In this coffee, the variety delivers a distinctly fruity profile, but it is not one-dimensional. Alongside the fruit, there are notes of caramel, cinnamon, and chocolate, which build a greater depth in the brew.ABOUT THE PROCESSINGRipe coffee cherries are hand-picked and then placed in a water tank. This step allows for the separation of lower-density cherries, which float to the surface. After selection, the coffee undergoes about 12 hours of controlled contact with oxygen.Next, the cherries are depulped, and the beans, with some of the mucilage left on them, undergo 36 hours of dry aerobic fermentation. During this time, the coffee is regularly mixed to reduce the risk of overheating and to maintain a more even process. After fermentation, the coffee is washed and dried for about 15 days in a covered drying house. After drying, it rests for another 15 days before the next stage.The honey processing influences the perception of sweetness, texture, and the intensity of the fruitiness.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: mediumBrewing time: 3:30 minutesMethod: Pour water over the coffee in 5 equal pours (e.g., 5x 60g) at 30-second intervals.The water should completely drain through the coffee between pours.If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a dry and cool place.
