This Ethiopia takes a completely different path. It is a classic example of a perfectly prepared washed coffee, where flavor clarity, clear acidity, and elegant complexity are what matter most.Behind its profile stands one of the most valued processing methods – washed – which allows to bring out the natural character of the beans and highlight the terroir of Ethiopia. The process begins with the hand-picking of exclusively ripe, red coffee fruits, which reach the washing station on the same day. There, the cherries are thoroughly sorted, and unripe or damaged fruits are discarded.Next, the fruits pass through a depulper, which separates the skin and most of the pulp from the bean. The beans covered with a thin layer of mucilage go into fermentation tanks, where for about 36–48 hours natural enzymes break down the remaining pulp. This is a crucial stage – properly controlled fermentation builds flavor clarity, distinct acidity, and the characteristic tea-like elegance of Ethiopian coffees.After fermentation is complete, the beans are thoroughly rinsed in clean water to completely remove any remaining mucilage. Next, they go onto African raised beds, where they dry under natural conditions. During drying, they are turned regularly so that moisture evaporates evenly, and the beans maintain high quality and stability. Upon reaching the appropriate moisture level, the coffee rests in parchment before being prepared for export.The result is an exceptionally clear and elegant cup – exactly what you can expect from a classic washed Ethiopia. The combination of high altitude, fertile soils, and abundant rainfall creates conditions thanks to which Yirgacheffe has been famous for years for exceptionally valued, aromatic coffees.ABOUT THE PROCESSINGAfter harvesting, ripe cherries are carefully selected and depulped, then fermented for 36–48 hours. After fermentation, the beans are washed, sorted by density, and dried on raised African beds for 12–15 days. Regular turning and protection from intense sun and night moisture help preserve the clarity of the profile, highlighting the clear acidity and delicate florals characteristic of washed coffees from Yirgacheffe.ROASTER'S OPINIONAricha is one of the most valued stations in Yirgacheffe, and its washed lots have been recognized for years as a great example of the region's character. This coffee combines intense jasmine, sweet apricot, and an unusual, hoppy accent that adds originality and complexity.In the aroma, distinct jasmine dominates with a delicate, tea-like note. In flavor, juicy apricot appears, accompanied by a characteristic hoppy accent. As it cools, the profile becomes more tea-like. Initially, they grew avocados, and since 2009, they have been experimenting with coffee cultivation. Gradually, under the guidance of Miguel Jimenez, they expanded their offer to include specialty coffee varieties. The farm underwent a major modernization in 2018. Natural drying processes were introduced, and research began on bacteria and yeast that control fermentation (including the Koji strain). Currently, over 28 different coffee varieties are grown there.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, particularly in Central America, where it was introduced to cultivation in the 1940s. This variety also played a significant role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. The Red Caturra variety is characterized by an intense aroma and a rich flavor profile. On the other hand, Yellow Caturra is a subtle coffee variety with bright, yellow beans. It is characterized by a mild flavor profile.ABOUT THE PROCESSINGSugarcane is a unique type of fermentation resulting in more intense fruity notes. After the fermentation is complete, caffeine is removed through an extraction process in special containers, where it is washed with a mixture of water and ethyl acetate. This process is repeated multiple times until the caffeine level drops to just 0.1%.Store in a dry and cool place.
