Located at an altitude of over 1500 m a.s.l. on fertile, volcanic soils, it is a rare example of a full-scale plantation in a country dominated by small, backyard crops.The site employs chemical-free practices with an emphasis on a sustainable approach and natural shading, which supports even ripening of the fruit. Harvesting is done by hand, selecting only fully ripe cherries, which allows the proper balance of sugars and acidity to be maintained at the raw material stage. The processing is a classic washed method with extended fermentation. The beans ferment for three days, during which they are rinsed daily, followed by an additional day of fermentation. After this stage, the coffee is sun-dried for a minimum of 21 days and undergoes multi-stage sorting, which translates into the clarity and repeatability of the profile.ROASTER'S OPINIONThe opinion of Filip Ślęczek – our head roaster: Papua New Guinea – we haven't had coffee from this region for several years. And when it finally appeared, it made its way to Coffeedesk! It is safe to say that this is an unusual daily coffee. You will find a lot of clean, halva-like sweetness, broken by the acidity of dark grapes (you certainly know the taste of thick grape skin), with the whole subtly seasoned with a hint of thyme. High altitude, fertile volcanic soils, abundant rainfall, and appropriate temperatures create ideal conditions for growing high-quality coffee, while rivers flowing from the snow-capped peaks effectively irrigate the surrounding areas.Farmers delivering coffee cherries to the Bugoye washing station cultivate coffee trees on very small farms (approx. 2 acres), working by hand, often with the help of their entire families. This is because coffee serves as their primary source of income. Although the region is mainly famous for natural process coffees, washed coffees are also produced here—and that is exactly what this coffee is.Due to difficult access, many farms can only be reached on foot. To facilitate sales, 18 collection points were established, from which the coffee is transported for further processing. The mission of the Bugoye station is sustainable development, supported by professional agronomists working directly with local farmers.ABOUT THE PROCESSINGThe coffee cherries delivered to Bugoye are grown and harvested at altitudes between 1,700 and 2,200 meters above sea level. In addition to washed coffees, the station itself produces classic naturals, honey-processed coffees, and has also begun conducting experiments with fermentation. After the processing phase, the coffees were exported by Kyagalanyi Coffee, which is the first company in Uganda to receive a coffee export license.The washed process at Bugoye begins by placing the harvested cherries into large fermentation tanks filled with water. Anything that floats to the surface is then removed—damaged cherries, underripe ones, and all foreign objects like leaves or sticks. Next, the coffee is passed through a depulper and moves to further water tanks, where it is "washed" and ferments for 24 hours. Finally, the beans in parchment are dried, hulled, and packed into GrainPro bags.ROASTER'S OPINIONUganda is another African country where coffee production methods are changing dynamically. This momentum also greatly affects the quality of the beans sourced from there. For years, coffees from Uganda were primarily associated with low-quality Robusta. While high-quality microlots did appear, they were rare exceptions.The current situation in the green coffee market and the work of importers and exporters have ensured that the quality of Ugandan coffee improves year after year, with more high-quality coffee entering the market. We observe an improvement in bean quality annually, even as a result of minor adjustments to production processes.This washed lot from the Bugoye station is particularly interesting because it is very complex and somewhat unusual for washed beans from Uganda. The coffee has a light, tea-like body, reminiscent of those well-known from Ethiopia. The acidity is medium, citric, and delicately sparkling. The whole profile is complemented by a caramel-peach sweetness that is noticeable in the long aftertaste. This is the case for espresso, but after adding milk, the coffee changes dramatically. Although it remains light and tea-like, such as washed Ethiopias, the caramel-peach sweetness begins to stand out, creating a delicious, sweet milk coffee.RECIPEUse 18 grams of beans to brew 40 grams of espresso. These extreme conditions favor slow fruit maturation and the building of a complex flavor profile.The Caturra variety is also not among the most common there — it accounts for about 20% of total coffee production in Peru, which makes lots of this type even more interesting and unique. Peru as an origin is often underestimated and overlooked by consumers, which is why we regularly try to include at least one coffee from this country in our offer. This time, it is the beans from Ismeria Leon.In the aroma, the coffee is fresh and fruity — green apple clearly dominates, complemented by delicate cranberry and caramel sweetness. On the palate, the profile remains very consistent: juicy apple appears in the foreground, enveloped in caramel, with hints of cranberry and grape.The whole has a medium, round body and low, smooth acidity reminiscent of an unripe apple. The sweetness is high and caramelly, and the aftertaste is medium-long, pleasantly sweet, and balanced. In the Jinotega region, coffee cultivation is a part of everyday life – most producers rely on traditional working methods and multigenerational experience.ABOUT THE PROCESSINGThe applied fully washed processing method, meaning full wet processing, has a huge impact on the cup's profile. It is precisely responsible for the clarity of flavor, clean finish, and elegant balance of this coffee.The process begins with the selective harvesting of ripe coffee fruit. Pickers choose only red, properly ripe cherries, as even a small share of unripe fruit could disrupt the sweetness and balance of the final brew.Right after the harvest, the fruit goes to a water selection. The coffee cherries are submerged in water to discard light, unripe, or damaged fruits that float to the surface. Next, an additional manual quality control is conducted.The subsequent stage is depulping, which is the separation of the skin and most of the pulp from the bean. After this process, the beans are still covered with a sticky layer of mucilage – natural sugars and pectins.Then the coffee goes into fermentation tanks. This is one of the most important moments of the entire processing. Natural enzymes break down the remnants of the pulp, and producers very precisely control the fermentation time to maintain the cleanliness of the profile and avoid excessive, alcoholic notes. In the case of this coffee, fermentation emphasizes the sweetness and fruitiness while leaving the cup incredibly clear.After fermentation, the beans are thoroughly rinsed with clean water. Thanks to this, the last remnants of mucilage are removed, and the coffee gains the elegance, lightness, and structured flavor profile characteristic of washed processing.The next stage is drying. The beans in parchment are spread out on patios or African beds and regularly turned so they dry evenly under the Nicaraguan sun. The process lasts from a few to several days and has a huge impact on the stability and longevity of the flavor. At the end, the parchment husk is removed, and the green beans are sorted by size and quality.The result? An espresso that is simultaneously sweet, creamy, and fluidly fruity. In this part of the country, fruit plantations dominate, particularly passion fruit, which is why coffee is grown here on a small scale and with tremendous attention to every detail. Only fully ripe, red coffee cherries are selected for the harvest.ABOUT THE PROCESSINGThis exceptional character is partly due to the incredibly rare raisin honey processing method. This is an advanced fermentation process that combines elements of natural drying and honey processing.The first stage begins even before depulping. Freshly harvested coffee cherries are dried whole in the sun until they begin to resemble raisins. During this process, a highly intense concentration of sugars and aromas takes place within the fruit. The pulp becomes denser, stickier, and incredibly sweet, while fermentation develops deep fruity and winey notes.Only after being partially dried do the cherries move to the next stage, which is the removal of the skin. In classic honey methods, this happens almost immediately after harvesting, whereas here, the fruit undergoes controlled pre-drying first. As a result, a massive amount of pectin and sugars remains with the bean.Next, the coffee goes into the actual honey fermentation, during which the beans dry alongside a very thick layer of sticky pulp. This high pectin content is what accounts for the exceptionally creamy sweetness, intense aroma, and characteristic notes reminiscent of raisins, fermented fruit, and sweet wine. The process is extremely demanding and requires continuous monitoring of temperature, humidity, and even drying. Even a minor mistake can completely disrupt the coffee's profile.The result is a coffee with intense aromatic performance, very high sweetness, and a complex, multi-layered acidity. Raisin honey yields a juicier and deeper profile than classic honey, while maintaining greater clarity of flavor than many natural coffees.ABOUT THE VARIETYThe botanical variety itself – Geisha – also plays a huge role here. This is one of the most prized and prestigious coffee varieties in the world. Geisha originally hails from Ethiopia, but it gained global fame in Panama, where it began breaking price records at the most prestigious specialty coffee auctions.The uniqueness of Geisha is determined above all by its incredible sensory profile. This variety can generate exceptionally clean, floral, and tea-like aromas, which are often associated more with jasmine, bergamot, or exotic fruits than with classic coffee. Geisha typically has a very elegant structure, a silky body, and a distinct, juicy acidity.However, it is a variety that is extremely difficult to cultivate. The trees yield smaller crops, are more climatically demanding, and require high growing altitudes to fully develop their potential. Additionally, harvesting must be highly precise, as even a slight immaturity of the fruit can heavily impact the final taste.
