Grown at an altitude of about 1300 meters above sea level, it offers a cup full of juiciness, delicate structure, and refined sweetness.The natural processing was carried out with great precision: selectively picked cherries are first separated by floatation, then dried whole on black tarps for about 12 days, with full control over airflow and humidity. After the initial drying, the coffee matures, undergoes final drying at low temperatures (up to 35°C), and then rests for two months before being hulled and hand-sorted.In the cup, the coffee is light, juicy, and incredibly clean for a natural – with dominant notes of raspberry and ripe melon, complemented by a delicate, tea-like tannin of black tea. The finish is long, elegant, and sweet, with no heaviness or excessive fermentation. Coffee trees are regularly weeded and pruned, and damaged cherries are removed after harvest to help limit pest development. Native tree species, as well as citrus trees and avocados, grow among the coffee bushes. They provide shade, protect the soil, attract beneficial organisms, and support the natural resilience of the entire farm.ABOUT THE PROCESSINGThe Castillo variety, hand-picked at peak ripeness, is transported on the same day to the Popayán city center to the state-of-the-art Area 18 laboratory.Fermented for 72 hours in a stainless steel bioreactor while controlling parameters such as temperature, pressure, and pH.Afterward, the fruit pulp undergoes sterile filtration before being placed along with the beans into American white oak barrels for 60 days.Drying takes place in mechanical chambers with controlled temperature and airflow. The station is managed by Alemu Bukato, and the cherries delivered to it come from around 650 local farmers cultivating coffee at altitudes of 1,900–2,100 meters above sea level. High altitude, fertile soils, and regular rainfall create conditions for which Yirgacheffe is famous for exceptionally aromatic coffees with a floral and fruity character.Only ripe cherries enter the processing stage, which, after selection, are dried whole on raised African beds for 12–15 days. During this time, they are regularly turned and protected from intense sun, rain, and night moisture. Slow and controlled drying allows the beans to absorb sugars from the pulp, building the intense sweetness and characteristic floral notes of the finest Ethiopian natural process coffees. After drying, the coffee is hulled, sorted, and hand-picked before packaging.ROASTER'S OPINIONFor years, Yirgacheffe has been famous for some of the most sought-after Ethiopian microlots, and Banko Gotiti is among the most well-known stations in the region. This coffee stands out with an unusual combination of features from two different processes – intense floral notes and citrus acidity typical of washed coffees, alongside clear, sweet strawberry associated with natural process coffees.Intense flowers dominate the aroma, accompanied by delicate citrus and sweet berries. In flavor, floral notes combine with a distinct strawberry note, while refreshing citrus acidity brings lightness to the whole profile. The coffee has a medium body, high sweetness, and a long, pleasant aftertaste where flowers and citrus appear once again.
