Located at an altitude of over 1500 m a.s.l. on fertile, volcanic soils, it is a rare example of a full-scale plantation in a country dominated by small, backyard crops.The site employs chemical-free practices with an emphasis on a sustainable approach and natural shading, which supports even ripening of the fruit. Harvesting is done by hand, selecting only fully ripe cherries, which allows the proper balance of sugars and acidity to be maintained at the raw material stage. The processing is a classic washed method with extended fermentation. The beans ferment for three days, during which they are rinsed daily, followed by an additional day of fermentation. After this stage, the coffee is sun-dried for a minimum of 21 days and undergoes multi-stage sorting, which translates into the clarity and repeatability of the profile.ROASTER'S OPINIONThe opinion of Filip Ślęczek – our head roaster: Papua New Guinea – we haven't had coffee from this region for several years. He grew up in Pérez Zeledón under difficult conditions, sharing a small house with his siblings and often going to school hungry. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, particularly in Central America, where it was introduced to cultivation in the 1940s. This variety also played a significant role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. The Red Caturra variety is characterized by an intense aroma and a rich flavor profile. On the other hand, Yellow Caturra is a subtle coffee variety with bright, yellow beans. It is characterized by a mild flavor profile.ABOUT THE PROCESSINGSugarcane is a unique type of fermentation resulting in more intense fruity notes. After the fermentation is complete, caffeine is removed through an extraction process in special containers, where it is washed with a mixture of water and ethyl acetate. Ripe cherries are hand-picked, sorted through flotation, and then sealed in fermentation tanks. After fermentation, the coffee is dried in thin layers, and later hulled and sorted. The result? Plenty of fruit, high sweetness, and that characteristic, slightly rum-like finish. A coffee with character. No pretending.ROASTER'S OPINIONThis is Uganda on the darker, more fruity side of the force. It is not "polite." It is sweet and fermenty, with cherry and blueberry at the forefront. After being delivered to the station, they undergo an initial, manual selection, during which unripe and insect-damaged cherries are discarded. After the seed is separated from the fruit, the coffee ferments overnight in tanks, then it is washed and sorted into four quality categories. The company was founded in 2015 by Zuberi Matsitsi, who produces specialty coffee primarily for international markets.Fun fact: Zuberi Matsitsi owns over 7,000 coffee trees. In addition to the Nyagishiru CWS plantation, his company also owns two other plantations in the Kayanza province.
