The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. Together with his brother, he is responsible for both the daily work on the farm and the sale of their coffees. On different plots, he cultivates varieties such as Gesha, Pink Bourbon, and Castillo, constantly developing processing methods to search for even higher quality coffee.This specific lot of Gesha was selected from among the best coffees in the Nariño region during the La Mejor Taza de Nariño competition. It then went to the auction of the best lots, where it was won by Adam Laska — co-owner of the KAFAR roastery — who had previously participated in the competition as a judge.ABOUT THE PROCESSINGThe processing starts with the manual harvesting of fully ripe cherries. Next, the coffee undergoes a four-day anaerobic fermentation in sealed jute bags kept in the cool climate of the Alta Clara region. The next stage is an eight-day anaerobic fermentation in airtight steel tanks, which deepens the sweetness, texture, and complexity of the sensory profile.After fermentation, the coffee is dried for 15–20 days in parabolic dryers, which ensures uniform airflow. The final stage is manual selection and a 15-day stabilization period in jute bags.In the cup, the coffee presents an elegant and refined character with notes of guava, sweet cherry, and muscovado sugar, supported by a creamy texture and a long, sweet finish. We have had coffees from them in Alma Negra, Perla Negra, and Yellow Diamond processes – these are different "variations" of theirs on honey and natural processing – and all of them are invariably super clean in flavor. This time is no different, absolutely flawless.ABOUT THE PROCESSPerla Negra is a processing method that goes as follows: after harvesting, the cherries are transferred to the mill for grading, where only the ripest ones are selected. Then, they are moved to the greenhouse patio for drying. During the first week, the cherries are piled on top of each other in a thick layer for aerobic fermentation. How did it happen? Hand-picked cherries – nothing unusual. But then – SHOCK. Thermal! The cherries were submerged in water at a temperature of 180°F (80°C) for 30 to 60 seconds. Next, the fruits were washed and underwent ozonation. The seeds were extracted, and the juicy experimenting began. Juice was squeezed from the skins of still-fresh cascara. The juice was mixed with the beans in fermentation barrels. With the help of the necessary microorganisms, the beans underwent lactic fermentation for 220 hours. After that, just 20 days of drying, and there you have it.Reading this description, you might think it would turn into pickled cucumbers, or at least kombucha. Nothing of the sort. Over the course of 33 days, the beans are dried on raised drying beds that provide optimal airflow.
