Manufacturer: FELLOW

The complete set for an matcha experience designed for the senses. From the comfortable shape of the ceramic bowl to the pleasing sound the bamboo whisk makes, each tool is designed to enhance your experience. This set features a ceramic bowl, whisk stand, and tea tray, a bamboo whisk, and a stainless steel spoon and sifter, all thoughtfully designed for a ritual you can feel your way through.Intuitive to useSeamlessly simple with exceptional results. The finely etched sifter removes any clumps and the whisk is precisely tuned for smooth, foamy matcha.Made for displayBecause matcha deserves a spot on your counter. Each tool fits neatly on the elegant ceramic tea tray, with silicone feet so it stays in place.Easy to cleanAside from the bamboo whisk and tea tray, every piece of the set is dishwasher safe, so you can make matcha a part of your daily routine with ease. The Fellow sifter is different from the mesh sifters I am used to. How do I achieve the best results?Fellow’s sifter works a little differently than traditional mesh sifters, so here’s how to get the best results.Place the sifter securely on top of your matcha bowl.Weigh out about 2g (1–2 full scoops) of matcha powder with the included spoon and add it to the center of the sifter.Hold the sifter steady with one hand. With the other, use the back of the spoon to gently sweep the matcha back and forth across the holes on the surface surface.Think of it like polishing the surface rather than pressing down. Use light pressure and smooth, continuous motions that cover the full area of the holes. As you move the matcha across the surface, you’ll see a fine, even dust fall into the bowl below. If you notice powder collecting near the rim, bring it back toward the center and continue sweeping until everything has passed through. For 1–2 scoops of matcha, the process should take about 30 seconds, just enough time for a smooth, clump-free sift. A gentle, consistent sweeping motion is more effective than pressing straight down. Using the full width of the perforated area helps the powder move evenly through the holes. How do I prepare a cup of matcha?Classic matcha:Water: 65 g at 180°FPowder Amount: 2 gWhisk for 20-30 secondsFor a latte:Water: 50 g at 180°FPowder Amount: 5 gAdd 150ml cold milk or 230ml steamed milk. The Matcha Set includes:Bowl - Frosted glass bowl with a spout, designed for comfortable holding and seamless whisking.Whisk - Lightweight bamboo, with an ergonomic handle for perfectly aerated whisking.Whisk Stand - Ceramic, allows your whisk to dry properly and stay in good condition.Spoon - Built from a weighty stainless steel for scooping matcha. The flavour of the brew resembles black currant, plum and orange flower.Origin: ColombiaRegion:La Marquesa, Sotora, CaucaFarm: Santa BarbaraVariety: Pink BourbonProcessing: WashedAltitude: 1850 m a. s. l.Cupping score: 89 / 100 ABOUT THE FARMJust twenty minutes from Popayán, at 1850 meters in the hills of Timbío, sits Finca Santa Bárbara - a 14-hectare farm where Geisha, Pink Bourbon, Wush Wush, Java, and Laurina grow beneath the shade of native trees. The farm was designed not only to produce exceptional coffees, but also to welcome visitors into the natural beauty and traditions of Cauca. Ecological trails wind through the plantation, biodiversity thrives, and comfortable cabins offer guests a quiet place to rest after a day on the farm.Life on the farm follows the rhythms of the coffee trees. Throughout the year, the alleys between rows are trimmed several times to keep competing plants from stealing sunlight, water, and nutrients. Before fertilization, each tree is carefully cleaned to maximize nutrient absorption. The team also practices Re-Re, an old but essential method of collecting ripe, overripe, and fallen cherries after harvest. This keeps pests like the coffee berry borer under control and protects the next crop.Fertilization is guided by annual soil analyses, tree development, and productivity. Weather, especially rainfall shaped by El Niño and La Niña, determines how and when nutrients are applied, but the goal is four fertilizations each year. Alongside these applications, the team spreads organic compost made from coffee byproducts at least once annually to enrich the soil and support long-term sustainability.ABOUT THE COFFEEHarvest begins in May and runs through August, with a smaller mitaca harvest in November and December. Skilled pickers—around seven per hectare at peak—move through the farm every two to three weeks, selecting only the deep red, fully ripe cherries. After picking, the cherries undergo Balceo, a water separation process that removes unripe or defective fruit. From the farm, the cherries travel in a refrigerated truck operated by Área 18, arriving at Banexport’s processing facility in Popayán within 24 hours. The crates remain cool and well-ventilated to slow microbial activity and prevent unwanted fermentation. At the mill, each lot is weighed, registered, and sampled. A 1-kg sample undergoes detailed analysis to determine the best processing method; for this particular lot, a Washed process was chosen. After cleaning and sorting, the fruit is pulped and the beans are moved into a stainless-steel bioreactor equipped with full environmental controls-oxygen flow, temperature, pH, °Bx, and pressure. Pink Bourbon thrives here: an oxygen-rich environment encourages the natural yeast strains of the variety to multiply, creating aromatic precursors that bring out its floral and fruity character. After 48 hours, the coffee is washed three times. These controlled microbial shifts shape the sensory profile of the coffee, accentuating the bright, delicate, and complex attributes that Pink Bourbon is known for.Drying is one of Cauca’s greatest challenges. Unlike the long dry seasons of Africa, humidity here often exceeds 60–80%, and annual rainfall can surpass 1,000 mm. To overcome this, Área 18 uses electric dehydrators that combine heat, cold air, and dehumidification. Their intelligent control system runs continuously, allowing the coffee to dry evenly in just two days without compromising flavor.Once dried, the coffee rests in fique bags lined with GrainPro for 15 days, stabilizing moisture and ensuring uniform quality before export.

Coffee here is most often processed using the natural or honey method, and experiments with aerobic fermentation are also common.Fun fact: Our coffee lot was delivered to the station on the very day of harvest. Its parameters were then evaluated, and the cherries were placed in large hermetic tanks for 5 days of anaerobic fermentation. At the appropriate moment, the coffee is exposed to a temperature of 20°C to halt fermentation and remove yeast. The cherries then “mature” in the tanks for another 5 days before being transferred to solar dryers. Drying takes 30 to 45 days.

COFFEE PLANT - Honduras Sebastian Mejia Honey Filter 250 g

Whole-bean specialty coffee from Honduras, roasted in Poland by COFFEE PLANT. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of tropical fruits, strawberry, citrus fruits and flowers.Origin: HondurasFarm: Finca GonzaloVariety: ParainemaProcessing: HoneyAltitude: 1530 m a. s. l.ABOUT THE FARMSebastian Mejía Mejía runs Finca Gonzalo in La Peña, in the Santa Bárbara region of Honduras, at an altitude of 1,530 meters above sea level. He comes from a family of coffee growers who, after moving away from conventional production and spending a period raising cattle, eventually settled in their current location. It was here that Sebastian decided to focus on producing high-quality specialty coffee. The farm covers 2.8 hectares and yields approximately 70 quintals of coffee annually. The main variety is Parainema, complemented by a young Geisha plantation. About half of the coffee is grown under controlled shade. Sebastian uses fertilization based on chicken manure and coffee pulp, supplemented with local blends adjusted according to soil analysis. He regularly prunes the coffee trees and monitors pests and diseases such as coffee borer beetle, coffee leaf rust, and leaf spot. In addition to coffee, he also grows avocados, bananas, and blackberries, while preserving trees and minimizing the environmental impact of farming.PROCESSINGThe coffee is processed using the honey method. The cherries ferment for approximately 36 hours in plastic bags, after which they are depulped and undergo a second, dry fermentation lasting another 36 hours. After fermentation, the beans are dried in parabolic solar dryers for 15–18 days, with regular turning and hand sorting. Once dried, the coffee is packed and stored on the farm before being delivered to the exporter San Vicente. The honey process requires minimal water usage, supporting sustainable and responsible production.ROASTER’S OPINIONSebastian Mejía’s Parainema shows two distinct faces that complement each other exceptionally well. On one hand, it offers medium, well-developed, and complex acidity typical of the Parainema variety. On the other, the influence of the honey process is clearly evident, delivering high sweetness and an intensely fruity, juicy profile. The aroma is very pleasant and enveloping, dominated by notes of ripe strawberries and citrus, supported by subtle floral accents that add lightness and elegance. On the palate, the coffee unfolds in layers: pronounced sweetness of tropical fruits and strawberries combines with lively, clean acidity reminiscent of various ripe citrus fruits.Despite its high sweetness and noticeable acidity, the cup remains very well balanced, smooth, and free of bitterness. The coffee is fresh, refreshing, and extremely drinkable, while still surprising with its intensity and clarity of flavor—especially for a coffee from Honduras. It is a proposition that blends varietal classicism with the modern, fruit-forward character of the honey process.BREWINGUse your preferred method and recipe. Brew this coffee like any other, using water at around 95°C. It is very forgiving and difficult to mess up.
