Since 2014, the farm has held Rainforest Alliance certification, confirming its commitment to environmental conservation.ABOUT THE COFFEEThe Maracaturra variety, known for its large beans and intense character, is grown on a small, designated section of the plantation. This is the parcel from which this nano-lot originates. Ana and Martha chose to process it using the natural anaerobic method to highlight the fruitiness and complexity of the flavor profile. The cherries ferment in airtight containers for 3–4 days and then dry for approximately 15 days on African beds at the Cafetos de Segovia mill in Ocotal, which is also owned by the Albir family.

Surrounded by three volcanos, it has been in operation since 1930. Our partner Ricardo Zelaya is the fourth generation of his family to farm here. He introduced a dedicated approach to quality, winning the precious Cup of Excellence award in 2001. On the slopes of the Volcán de Agua, the estate climbs to an elevation of up to 2050m, with the Caturra and Bourbon in our lot grown between 1650 and 1700m. A quarter of the estate remains preserved forest, encouraging the biodiversity in which coffee thrives.THE PROCESSFor this lot, Ricardo used a traditional washed method. The freshly harvested cherries are first pulped to remove the outer skin, then fermented. After washing, the beans are dried on African beds inside a specially designed greenhouse. Our lot took around 21 days to dry, a slow process encouraging balance and complexity.ROASTERS OPINIONIntroducing our new Winter Coffee. From our partner Ricardo Zelaya, the smooth sweetness of this lot really stood out: a perfect daily espresso or easy-drinking filter coffee.

In 250 g of brew prepared according to the V60 protocol, 45.9 mg of caffeine was measured, representing approximately a 70% reduction compared to the fully caffeinated version.ROASTER’S NOTELOW Blossom stands out with a pronounced floral aroma, complemented by subtle stone fruit notes and a light tea-like background. The cup is light and elegant, with a delicate body and velvety texture. Moderate sweetness combines with gentle, fruity acidity to create a clean and transparent flavor profile.
