Manufacturer: KAIZEN

Roasting date: 08.06.2026

Whole-bean specialty coffee from Ethiopia, roasted by Kaizen. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of jasmine, apricot and orange.Country: EthiopiaRegion: GujiFarm: Tagel AlamayehuVarietal: 74110Processing: WashedAltitude: 2300 m a.s.l.ABOUT THE REGION AND PRODUCERThis coffee comes from the Guji region, specifically the Hambela Wamena area, situated at an altitude of approximately 2300 m a.s.l. This is one of Ethiopia's most esteemed terroirs—the extreme altitude, cool climate, and slow ripening of the fruit result in a high sugar concentration and extraordinary aromatic precision. The project is led by Tagel Alamayehu—owner of the Olkai export company and coordinator of the Hambela Goro station. His story is personal and deeply rooted in the region. Tagel’s father was one of the coffee pioneers in Guji and built the first washing station in the Bule Hora community. Following family financial struggles, Tagel set a goal to rebuild what was lost—and he realized this plan by creating a modern, quality-focused project based on collaboration with local farmers.Today, Hambela Goro works with 460 small-scale producers, many of whom own only a few hundred coffee trees. Although each batch is a natural composition of many micro-plots, the coffee maintains impressive consistency and a clean profile.ABOUT THE COFFEEThis lot is the 74110 variety—a selection originating from the JARC research program, known for its high sensory quality and clarity in the cup. Combined with the altitude of 2300 m a.s.l., it yields a coffee with a distinct structure, elegant acidity, and multi-layered aromatics. The washed processing was carried out with great precision. Cherries are harvested at peak ripeness, hand-sorted multiple times, and then, after depulping, fermented in water for approximately 48 hours. Drying takes place on African beds for 10–12 days, depending on weather conditions. The cup is dominated by an intense jasmine aroma, which builds lightness and elegance. The flavor features juicy orange, providing freshness and a clear, citric acidity, while the experience is rounded off by ripe, sweet apricot, bringing softness and fruity depth.Store in a cold and dry space.

BeMyBean - Ethiopia Kebero Washed Espresso 250 g

Manufacturer: BEMYBEAN

Roasting date: 11.06.2026

A specialty coffee from Ethiopia, roasted in Poland by BeMyBean. Dark roast, perfect for espresso, coffee machines, and moka pots. You can expect hints of blackberry and currants juice, lime, grapefruit and orange's flowers.Country: EthiopiaRegion: SidamoFarm: KeberoVarietal: HeirloomProcessing: WashedAltitude: 2000 m a.s.l.ABOUT THE COFFEEEthiopia Kebero is a classic in a modern espresso edition. From the very first sip, it showcases what a well-processed washed coffee is all about: clean, clear, and incredibly juicy. In the foreground, an intense blueberry and currant juice emerges, giving the whole cup depth and a light sweetness. A moment later, citruses come in – lime and grapefruit – introducing freshness and a characteristic, vibrant acidity. The entire experience is tied together by a delicate, floral accent of orange blossom, which lends lightness and elegance to the cup. This is a medium-intensity espresso that does not overwhelm but consistently builds a layered profile – from fruity juiciness to a clean, fresh finish. Perfect for those looking for clarity of flavor and a distinct origin character in their espresso.ABOUT THE PROCESSINGThe key to this profile lies in the washed processing method, also known as wet processing. The process begins right at the harvest stage. Only fully ripe, hand-picked coffee cherries make it to further processing. Next, the cherries are thoroughly sorted to discard any unripe or damaged fruit. The subsequent step is depulping, which is the mechanical removal of the skin and most of the pulp. A thin, sticky layer of mucilage containing natural sugars then remains on the bean. After that, fermentation begins in water tanks, usually lasting from a dozen to several dozen hours. During this time, natural enzymes break down the remaining pulp, separating it from the bean. This is one of the most crucial moments – it determines the cleanliness and character of the future flavor profile. After fermentation, the beans are thoroughly rinsed with clean water, which completely removes the remnants of the pulp and stops the fermentation processes. Thanks to this, the coffee's flavor becomes clearer and free from heavy, fermented notes. The final stage is drying on raised tables (so-called African beds), where the beans dry for about 10–15 days. They are regularly turned to ensure even moisture evaporation and to avoid defects. The result of the entire process is a coffee of exceptional clarity – one in which you can clearly taste the origin, variety, and growing conditions. This is precisely why Ethiopia Kebero is so juicy, citrusy, and floral, yet light and elegant at the same time.Store in a cold and dry space.
BemyBean - Colombia El Recreo Anaerobic Natural Filter 250 g

Manufacturer: BEMYBEAN

Roasting date: 11.06.2026

A whole-bean specialty coffee beans from Colombia roasted by BeMyBean from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of forest fruits, currant juice, cherry brandy, wild rose flower, mirabelle plum and quince.Origin: ColombiaRegion: HuilaFarm: El RecreoProcessing: Anaerobic Natural Variety: CastilloAltitude: 1550 m a.s.l.ABOUT THE COFFEEColombia El Recreo is one of those coffees that show the full potential of modern anaerobic natural processing from the very first sip. Intense, juicy, and multidimensional — it tastes like thick blackcurrant juice with a touch of drunken cherry, elderflower syrup, and rosehip. In the cup, you will find plenty of fruity sweetness, depth, and a slightly winey character that develops beautifully as it cools. This batch is exceptionally intense and expressive. The aroma alone resembles a thick fruit liqueur: wild berries, currant juice, drunken cherry, and rosehip flowers. The flavor also features the characteristic sweetness of elderflower syrup, giving the whole profile an almost tea-like and floral finish.ABOUT THE PROCESSINGThis incredibly juicy profile is primarily the result of the anaerobic natural process — a method that requires immense control and experience. Only ripe, red coffee cherries are used after harvesting. Next, the whole cherries are placed in tightly sealed bags, where they ferment for 100 to 120 hours in an oxygen-free environment. The absence of oxygen completely changes the course of fermentation — different groups of microorganisms develop, creating compounds responsible for more winey, intensely fruity, and floral flavor notes. After the fermentation is complete, the cherries are spread out on raised drying beds. There, the coffee dries for about 15–20 days. During drying, the cherries are regularly turned to ensure the process runs evenly and without the risk of over-fermentation or the appearance of unwanted notes. It is this long and controlled drying that stabilizes the flavor profile and preserves the immense intensity of the aromas while maintaining a clean cup.The result? A coffee that tastes a bit like fruity red wine, a bit like premium currant juice, and a bit like a dessert with floral syrup. Fresh, syrupy, and highly aromatic. Perfect for those looking for intense sensations, high sweetness, and fermentary depth in alternative brewing methods, but without the alcoholic or barrel-aged notes.Store in a cold and dry space.

Processing stations in the country are pioneers of alternative coffee processing methods, and this experience is reflected in the high quality and distinctive flavor profiles. If you don’t believe coffee can taste like a coconut-cinnamon cookie, let this lot challenge your skepticism. Such results are only possible when complex processing methods come into play.PROCESSINGAfter depulping, the beans are left with the mucilage layer intact and immediately transferred to hermetically sealed stainless steel tanks for anaerobic fermentation. This oxygen-free environment supports a tightly controlled microbial ecosystem, promoting the production of organic acids, mainly lactic and malic acids, which significantly enhance the coffee’s flavor complexity and aftertaste.Beneficio San Diego is one of the most modern processing stations in the country. Founded in 1888, it continues to evolve through innovation. The anaerobic fermentation process takes place in a completely oxygen-free environment, allowing the coffee to ferment without air exposure. In this unique method, the sugars contained in the coffee fruit ferment and produce distinctive acids that create exceptional and unmistakable flavor profiles. The key to achieving these remarkable flavors is the sugar content of the cherries, which is why only the finest fruit from the highest slopes of the Tarrazú region is suitable. Tarrazú is famous for producing some of the best coffees in Costa Rica. After fermentation, the coffee is moved to patios for sun-drying until it reaches the ideal moisture level of 11.5%.RECIPERatio: 6 g / 100 mlMethod: V60 02 (drip)Water temperature: 92°CGrind size: 25 clicks (Comandante)Brew time: 3–4 minutes / 600 ml

BeMyBean- Nicaragua Jinotega Washed Espresso 250 g

Manufacturer: BEMYBEAN

Roasting date: 11.06.2026

A specialty coffee from Nicaragua, roasted in Poland by BeMyBean. Dark roast, perfect for espresso, coffee machines, and moka pots. You can expect hints of raisins in chocolate, caramel, mirabelle plum jam and biscuits.Country: NicaraguaRegion: JinotegaVarietal: Bourbon, Caturra, CatuaiProcessing: WashedAltitude: 1200 m a.s.l.ABOUT THE COFFEENicaragua Jinotega is a coffee that perfectly demonstrates why Central American espresso has such a loyal fanbase. It combines dessert sweetness with delicate fruitiness and offers a profile that is both pleasantly classic and full of character. In terms of flavor, chocolate-covered raisins, thick kaymak (dulce de leche), and mirabelle plum jam emerge, bringing a juicy, slightly plum-like fruitiness. In the background, buttery biscuits and a subtle note of caramelized sugar are detectable, giving the whole cup a soft, creamy finish. This is a medium-intensity espresso with balanced acidity – it will perform excellently both solo and in milk-based drinks. The coffee comes from the Jinotega region, located in the northern mountains of Nicaragua at altitudes exceeding 1,200 meters above sea level. Behind this coffee are mainly small family farms, where the fruit is harvested by hand from December to March. In the Jinotega region, coffee cultivation is a part of everyday life – most producers rely on traditional working methods and multigenerational experience.ABOUT THE PROCESSINGThe applied fully washed processing method, meaning full wet processing, has a huge impact on the cup's profile. It is precisely responsible for the clarity of flavor, clean finish, and elegant balance of this coffee. The process begins with the selective harvesting of ripe coffee fruit. Pickers choose only red, properly ripe cherries, as even a small share of unripe fruit could disrupt the sweetness and balance of the final brew.Right after the harvest, the fruit goes to a water selection. The coffee cherries are submerged in water to discard light, unripe, or damaged fruits that float to the surface. Next, an additional manual quality control is conducted. The subsequent stage is depulping, which is the separation of the skin and most of the pulp from the bean. After this process, the beans are still covered with a sticky layer of mucilage – natural sugars and pectins. Then the coffee goes into fermentation tanks. This is one of the most important moments of the entire processing. Natural enzymes break down the remnants of the pulp, and producers very precisely control the fermentation time to maintain the cleanliness of the profile and avoid excessive, alcoholic notes. In the case of this coffee, fermentation emphasizes the sweetness and fruitiness while leaving the cup incredibly clear. After fermentation, the beans are thoroughly rinsed with clean water. Thanks to this, the last remnants of mucilage are removed, and the coffee gains the elegance, lightness, and structured flavor profile characteristic of washed processing. The next stage is drying. The beans in parchment are spread out on patios or African beds and regularly turned so they dry evenly under the Nicaraguan sun. The process lasts from a few to several days and has a huge impact on the stability and longevity of the flavor. At the end, the parchment husk is removed, and the green beans are sorted by size and quality. The result? An espresso that is simultaneously sweet, creamy, and fluidly fruity. The kind you return to not because it tries to surprise you with an extreme profile, but because it simply tastes great every single day.Store in a cold and dry space.
