The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. The sensory profile frequently features herbal, floral, and spicy notes, along with fresh accents reminiscent of hops or citrus.This lot offers a flavor profile with notes of blueberry, vanilla, and lemongrass, with a distinct, crisp texture. This is exactly where lots based on varieties such as Gesha, SL28, or Ethiopia 47 are created, which are now processed in a newly built dry mill launched in 2025.From the first experiments conducted on the Finca La Torre farm to multiple high rankings in the Cup of Excellence competition, the Alvarado family's business is based on conscious development, consistency, and a clearly defined vision of quality. The four-hectare farm, entirely planted with coffee, belongs to Laureano Gómez — a second-generation producer and former teacher who decided to leave his career in education to fully dedicate himself to developing the family farm and producing specialty coffees.Laureano brought back to life an estate that had been neglected for years, building a project based on quality, experimentation, and a conscious approach to production. Together with his brother, he is responsible for both the daily work on the farm and the sale of their coffees. On different plots, he cultivates varieties such as Gesha, Pink Bourbon, and Castillo, constantly developing processing methods to search for even higher quality coffee.This specific lot of Gesha was selected from among the best coffees in the Nariño region during the La Mejor Taza de Nariño competition. It then went to the auction of the best lots, where it was won by Adam Laska — co-owner of the KAFAR roastery — who had previously participated in the competition as a judge.ABOUT THE PROCESSINGThe processing starts with the manual harvesting of fully ripe cherries. Next, the coffee undergoes a four-day anaerobic fermentation in sealed jute bags kept in the cool climate of the Alta Clara region. The next stage is an eight-day anaerobic fermentation in airtight steel tanks, which deepens the sweetness, texture, and complexity of the sensory profile.After fermentation, the coffee is dried for 15–20 days in parabolic dryers, which ensures uniform airflow. The final stage is manual selection and a 15-day stabilization period in jute bags.In the cup, the coffee presents an elegant and refined character with notes of guava, sweet cherry, and muscovado sugar, supported by a creamy texture and a long, sweet finish. This is a limited lot created for the most demanding consumers who brew coffee using filter methods.Store in a dry and cool place.

The farm is run by Senel Campos along with his son Alan, managing three estates spread across the steep terrains of southern Costa Rica.Senel Campos' story is a tale of consistency and gradual development. He grew up in Pérez Zeledón under difficult conditions, sharing a small house with his siblings and often going to school hungry. Despite limited opportunities, he and his family built a project based on high-quality specialty coffee production and an increasingly precise approach to processing.Over the past decade, the processes on the farm have evolved from simple, basic methods to consciously controlled production of honey and natural process lots. Coffees from La Toboba are characterized by a very low number of defects and high consistency in quality.This specific lot of the Catigua variety was subjected to the natural process, which brings out notes of walnut, mandarin, and sugar cane in the cup. They inherited their farms from their parents and creatively evolved their cultivation and processing methods. They have been working with specialty coffee since the early 2000s and achieved legendary status long ago. Year after year, they produce the highest quality green beans, serving as pioneers not only of specialty coffee in Honduras but also of new processing techniques. They were the ones who successfully adapted natural processing to the challenging climatic conditions of Honduras.The Caballero family owns nearly 200 hectares of land divided into 17 different farms in the Marcala region of eastern Honduras. All their operations are centered at a central washing station – Xincala. This is where all the cherries they harvest are processed. The family constantly invests in the station's development, making it possible to continuously improve quality.Marysabel and Moises's farms feature clay-like soil, and the main variety they grow is Catuai, though they also have Java, Pacamara, and Geisha trees.ROASTER'S OPINIONWe roasted our first naturals from Caballero in 2020. A lot has changed since then. Back then, the processing still had its flaws; there were many heavily over-fermented beans that roasted darker than the rest, creating a slight "muddiness" or what some called "tarriness" in the cup. Today, that is completely gone. This is a sweet, jammy, and thick natural, yet remarkably clean and transparent at the same time. We were fans of those coffees back then, but now we are truly blown away.Store in a cold and dry space.

The group began producing fully washed coffee in 2019.ROASTER'S OPINIONReminiscent of a sweet forest fruit brew. Very crisp and fruity.RECIPE16 g coffee250 g water 96°CMedium grind sizePlace a paper filter in the V60 and rinse it with hot water (96°C). This will heat the dripper and server and remove any paper taste from the filter. For best results, always use filtered water (remember that 98.5% of brewed coffee is water).Discard the rinse water from the server.Grind the coffee beans just before brewing and pour them into the dripper. Gently level the coffee in the center of the V60.Place the V60 on a vessel set on a scale and ensure the water temperature is 96°C.Tare the scale and start the timer.Add 50 grams of water. Your coffee will begin the bloom phase (pre-infusion).After 30 seconds, add water until you reach 100 grams. Pour the water slowly, gently, and in circular clockwise motions.At 00:50, pour up to 200g of hot water.At 01:10, pour up to 250g of hot water.Give the V60 dripper a light swirl and let the coffee draw down.The water should finish filtering through around 3:00. You may need to adjust the grind setting if the coffee brews too quickly or too slowly. However, always taste and evaluate the quality of the coffee.Store in a cool and dry place.

This time, however, we are offering you a washed coffee from Indonesia – it allows you to truly taste the origin.Frinsa is an estate that has been operating since 2010. It is run by a married couple, Wildan Mustofa and Atieq Mustikaningtyas. It consists of six farms with a total area of 105 hectares and its own washing station with a laboratory for anaerobic processing. Since its inception, the estate has focused on quality coffees. Initially, this was primarily related to producing coffees using the washed process, which is rare in Indonesia. Later, experimental processes were added to the mix. Thanks to the experience of the Mustofa and Mustikaningtyas couple and continuous investment in infrastructure, these coffees are always of the highest standard.ROASTER'S OPINIONThis is our first washed bean from Indonesia. The cherries first undergo a 48 to 60-hour anaerobic fermentation, bringing intense character to the profile. The whole cherries are then dried in the sun on covered raised beds - ""Marquesina"" - until they reach 30% moisture. Then, the cherries are moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve 18%-16% moisture. After a pre-stabilisation stall to intensify flavours, the drying process is completed until optimal moisture is achieved.
