Nitro Blade® Burr"Back in 2005, I started my small specialty coffee roastery – drawn in by the incredible flavors and outstanding cup qualities that specialty coffee had to offer. Those early years were filled with roasting, cupping, and traveling to connect directly with producers at origin.Roasting and brewing in the field was manageable. But precise grinding – the key to truly tasting and deciding on a coffee – was the real challenge. None of the hand grinders I tried gave me the clarity or consistency needed. I kept dreaming of EK43-level performance in a compact format I could carry deep into the mountains. I just needed a grind I could trust. Most conical burrs at the time were designed for electric grinders. Nobody had really considered what a manually operated precision burr would require: superb grind quality, smooth torque, comfortable ergonomics, clean particle distribution – and ultimately, absolute taste clarity. Then came Cup of Excellence. It shifted the coffee world’s focus toward extraordinary cup quality and flavor expression. The bar was rising. This new era of specialty coffee needed a grinder with a true specialty burr to match. So I started building one. And after years of prototyping, testing, and investing in serious lab equipment, it finally came together. In 2015, I launched my first Nitro Blade® based hand grinder: the Comandante® C40 Mk3. I handed a few early prototypes to friends – who soon went on to win major brew competitions. Nitro Blade® quickly earned its reputation as the Original Game Changer.Ten years later, Nitro Blade® is still the gold standard. Built to last, engineered for clarity, and trusted by champions and home brewers alike.I’m so glad you’ve got one in your hands now. Fellow Ode Gen 2 is an automatic coffee grinder for pour-over brewing methods. Prepare your V60, Chemex, AeroPress and whatnot! The new generation of award-winning Fellow grinder is here! What's new?Updated brew burrs (Gen 2 Brew Burrs) that were designed specifically for Ode by VP of R&D and Certified Q Grader Nick Terzulli. The Gen 2 Brew Burrs are capable of grinding as fine as 250 microns, while the Standard Brew Burrs that come stock in the original Ode Brew Grinder can grind as fine as 500 microns.Anti-static technology, which helps to reduce the static from freshly ground coffee. This reduces the retention of coffee grounds in the grinder from ~1g to as low as 0.1g, so there is much less grind mess than the original Ode Brew Grinder.A larger and redesigned hopper and catch cup that can hold 100g of coffee.Fellow Ode Gen 2 combines great design with functionality:The grind adjustment wheel is located on the front dial. You can choose one of 31 settings, depending on the brewing method you use: AeroPress, dripper, Chemex, French Press, or Cold Brew. Ode does not grind for espresso.Ode includes professional-grade, large, 64mm, flat, stainless steel burrs that provide even grinding on every setting. The second generation burrs offer new geometry that enables you to grind finer than the standard brew burrs. Higher precision gives more control and makes it easier to achieve expected extraction and flavour of coffee. The grind size is 250 - 300 microns and up, compared to 550 microns in the standard ODE burrs. Finer grinding provides higher extraction and enables you to brew more balanced, sweeter coffee with a higher body.PID System guarantees stable and smooth work.Automatic shut off. The motor will turn off automatically after grinding. The system detects when the hopper is empty and turns off the grinder. The hopper holds up to 100 grams of coffee beans - designed as a single dose hopper. Also, it has been redesigned - now it as steeper angles to help feed beans down the chute for speedier grinding. The grounds container is made of aluminum. A magnet on its bottom makes it easy to place the container on the base of the grinder. A knocker known from professional grinders helps to get rid of all the grounds - in result, the retention of the grinder is extremely low.Quiet grind noise thanks to high-quality materials to ditching the noisy gearbox. The body is elegant and solid, made of aluminum and plastic.Small dimensions allow you to place the grinder almost anywhere.Dimensions (D x W x H) 23,9 cm x 10,5 cm x 24,8 cm.220V, EU plug. This product comes with EU Type C/F plug. Whole-bean specialty coffee from Costa Rica, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of cherry liqueur, wild strawberry and grapefruit.Origin: Costa RicaRegion: ChirripóFarm: Corazón de JesúsVariety: PeaberryProcessing: Natural AnaerobicAltitude: 1800 – 1950 m a.s.l.ABOUT THE COFFEECosta Rica Alvarado Fonseca Family is another peaberry* that completely won us over. There is something of cherry liqueur to it: lightly fermented, deep and intense. But instead of drifting into a heavy, boozy ferment, it stays on the light side of the Force: fresh, bright, and grapefruit-leaning.Our first impression? Cherries in a liqueur-like, very sweet form. The grapefruit note is there to show clarity, freshness, and citrusy acidity. During our tests, the brew came out expressive, but not overwhelming. Fruity, clea,n and juicy. Not too light, not too heavy. Just right. The coffee comes from the Chirripó region in Costa Rica, from farms located at 1800–1950 m a.s.l. Behind the lot stands the Alvarado Fonseca Family, a producer family connected with the Corazón de Jesús micro-mill. Jhon Alvarado Abarca, also known as Johny, regularly appears among the top names in Cup of Excellence, and his work shows what you can achieve with experience, ambition, and constant process refinement. This lot was processed as natural anaerobic, which helps build deep, fermented fruitiness without taking away the coffee’s clarity. And that is exactly what we liked most about it: the intensity is clear, but kept in check. A good example of a thoughtful combination of peaberry selection and process. We especially recommend this lot to people who enjoy fruity-fermented intensity, but care just as much about balance. There is energy and depth here. But there is also lightness and freshness.*Peaberry is a natural anomaly: instead of two flat seeds developing inside the coffee cherry, there is one smaller, rounder seed. In practice, it can often give a more concentrated and intense flavour.Store in a cold and dry space.
Whole-bean specialty coffee from Burundi, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of blackberry, black tea and apricot.Origin: BurundiRegion: MuyingaVariety: BourbonProcessing: WashedAltitude: 1700 m a.s.l.ABOUT THE COFFEEAnother fresh harvest from Luis, and just like every year, it does not disappoint. This season, we went for the Aji variety, already warmly received by you, which struck us with its transparency. We got a proper strawberry punch straight to the taste buds, and we are still recovering from that fruity knockout. In the cup, the strawberry was the main thing: fresh, but also a little more jammy. At times, we had the impression of those yoghurt-and-strawberry chocolates appearing in the flavour too. There is no doubt that a lot is going on here, and sensory boredom is not really an option. We completed the flavour profile with notes of mango and sea buckthorn to highlight the fresh, soft sweetness and intense acidity that stays with us long after the last sip. In truth, the range of associations was almost endless, so we narrowed it down to the notes that stood out the most and best captured this juicy, ripe fruitiness.ABOUT THE VARIETYWe write the variety simply as Aji, though its fuller name is Bourbon Aji. The name comes from… a pepper. Farmers in southern Huila noticed the distinctive aroma of the cherries, reminiscent of a small chilli pepper. Here comes the plot twist, though: genetic testing has shown that it is not a direct descendant of classic Bourbon, but a variety of Ethiopian origin.ABOUT THE PROCESSINGThe coffee and its processing come from Luis Marcelino of Aroma Nativo in Pitalito. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions. This is exactly the process that helps build an equally layered profile: intense, juicy and long-lasting.Store in a cold and dry space.
Whole-bean specialty coffee from Costa Rica roasted at HAYB. Dark roast, perfect for espresso machines and moka pots. In the cup, you can expect hints of dried fig, honey and chocolate.Country of origin: Costa RicaRegion: Central ValleyVariety: San IsidroProcessing method: Perla NegraCupping score: 87 / 100Altitude: 1500 m a.s.l.Always something new. And supposedly new, yet a safe bet.I think we order coffees from Oscar and Francisca Chacon every year. When my season for drinking coffees processed other than washed comes around, it is the Chacon family that shows how to do it best. We have had coffees from them in Alma Negra, Perla Negra, and Yellow Diamond processes – these are different "variations" of theirs on honey and natural processing – and all of them are invariably super clean in flavor. This time is no different, absolutely flawless.ABOUT THE PROCESSPerla Negra is a processing method that goes as follows: after harvesting, the cherries are transferred to the mill for grading, where only the ripest ones are selected. Then, they are moved to the greenhouse patio for drying. During the first week, the cherries are piled on top of each other in a thick layer for aerobic fermentation. After this first week, the coffee is spread across the patio, forming a thin layer until the drying process is complete. Delicious!Store in a cool, dry place.
Whole-bean specialty coffee from Burundi, roasted by Kafar roastery. Medium roast, perfect for espresso, coffee machines, and moka pots. You can expect hints of cherries, milk chocolate and black tea.Country: BurundiRegion: Ngozi i KayanzaProducent: Greenco & BugestalProcessing: WashedAltitude: 1600 - 1900 m a.s.l.Variety: Red BourbonCupping score: 85 / 100ABOUT THE COFFEEThis coffee from Burundi delights with an elegant, harmonious profile, where fruity sweetness blends with a pleasant, chocolatey depth. At first taste, juicy cherries emerge — ripe, sweet, and gently tart. Moments later, the profile develops towards creamy milk chocolate, which gives the brew a soft and dessert-like character. The experience is rounded off by a subtle note of black tea, introducing a slightly dry, elegant touch and a clean, long finish. The silky body makes the coffee smooth and pleasantly enveloping, while simultaneously retaining a light feel and high flavor clarity. It is a balanced and highly approachable coffee — sweet, elegant, and multidimensional, yet free of overwhelming intensity. The president of Lima Coffee is Rony Lavan, who is responsible, among other things, for finding the most interesting coffees from small producers. He has guided the company toward specialty coffee, and his microlots are winning an increasing number of industry awards. Fun fact: Cajamarca is a relatively dry and cool tropical region located in the north-eastern highlands of Peru, characterized by very fertile soil at high Andean elevations. All of these factors contribute to the developing production of specialty coffee. Cajamarca is the main coffee-growing region in Peru, accounting for about 25% of national production. Small-scale producers own approximately 2-3 hectares of arable land, and many of them practice organic farming methods.COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. Specialty-grade whole bean coffee from Colombia, roasted by the Warsaw-based roastery HAYB. Light roast, ideal for filter coffee makers, drippers, Chemex, AeroPress, French Press, and other alternative brewing methods. The flavor profile features notes of strawberry, raspberry and milk chocolate.Country of origin: ColombiaRegion: Bruselas, HuilaVariety: Pink BourbonProcessing method: Chocoberry NaturalCupping score: 88 / 100Altitude: 1600 -2000 m a.s.l.ABOUT THE PROCESSThe farmer himself, Oscar Hernandez, named this processing method this way because the final taste of the brewed coffee reminded him of something right on the borderline between chocolate and currants. How did it happen? Hand-picked cherries – nothing unusual. But then – SHOCK. Thermal! The cherries were submerged in water at a temperature of 180°F (80°C) for 30 to 60 seconds. Next, the fruits were washed and underwent ozonation. The seeds were extracted, and the juicy experimenting began. Juice was squeezed from the skins of still-fresh cascara. The juice was mixed with the beans in fermentation barrels. With the help of the necessary microorganisms, the beans underwent lactic fermentation for 220 hours. After that, just 20 days of drying, and there you have it.Reading this description, you might think it would turn into pickled cucumbers, or at least kombucha. Nothing of the sort. It is sweet, juicy, and crisp. Yum.Store in a cold and dry space.
