Our coffee comes from a selected group of producers from the upper part of the municipality of Palestina, located at an altitude of approximately 1700 meters above sea level. This group of farmers has specialized in cultivating varieties such as Tabi and Caturra. Cooperativa Departamental de Caficultores del Huila Ltda. CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. Its reach covers 27 municipalities, where a support network operates consisting of 45 coffee purchase points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 points offering drying services. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialized coffees allows the cooperative to meet market demand for coffee purchased under specific conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, especially in Central America, where it was introduced into cultivation in the 1940s. This variety also played a significant role in breeding coffee plants resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. Tabi is a relatively young variety, created in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid variety. The word "Tabi" comes from the language of the indigenous people of Colombia and means "peace" or "life".ABOUT THE PROCESSINGThe coffee undergoes a traditional washing process, which begins with harvesting ripe cherries, weighing them, and leaving them for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after about 12 hours. How did it happen? Hand-picked cherries – nothing unusual. But then – SHOCK. Thermal! The cherries were submerged in water at a temperature of 180°F (80°C) for 30 to 60 seconds. Next, the fruits were washed and underwent ozonation. The seeds were extracted, and the juicy experimenting began. Juice was squeezed from the skins of still-fresh cascara. The juice was mixed with the beans in fermentation barrels. With the help of the necessary microorganisms, the beans underwent lactic fermentation for 220 hours. After that, just 20 days of drying, and there you have it.Reading this description, you might think it would turn into pickled cucumbers, or at least kombucha. Nothing of the sort. The soils are volcanic, and macadamia trees appear among the shade trees. Tea is also grown in the region, which reflects the climate of the area well: high, green, humid, with excellent conditions for the slow ripening of cherries. It is located in the Kirinyaga region, Kagumo area, at the foothills of Mount Kenya. Coffee cherries are delivered to it by over 1,700 small-scale producers who grow coffee mainly on small plots of land.The crops are situated at an altitude of approximately 1,700–1,800 meters above sea level. The region is characterized by red volcanic soils, good access to water, and conditions that favor slower ripening of the fruit. Longer ripening can support the development of sweetness, acidity, and a more complex sensory profile.This is a classic Kenyan production model: small farms, a central washing station, fruit selection, and a consistently managed process. Simple. Effective. Good.ABOUT THE VARIETYThe dominant varieties are SL28 and SL34. These are classic Kenyan Arabica varieties, valued for their high sensory potential, especially in terms of vibrant acidity, fruitiness, and the structure of the brew.Batian and Ruiru 11 may also appear in smaller quantities, which are varieties introduced, among other reasons, for the plants' greater resistance to diseases. However, the character of this coffee is primarily built by SL28 and SL34.ABOUT THE PROCESSINGAfter harvest, the coffee cherries are delivered to the station and sorted. Then, the skin and part of the pulp are removed from the fruit, and the beans undergo fermentation, washing, and drying on raised beds. Fieldwork involves weeding, pruning, application of fertiliser, mulching and technical advice. Technical advice is offered through farmer training programs and field visits offered by the ministry of agriculture.As for the rest of the coop in the Ndundu factory all coffee cherries are handpicked and are delivered to the mill the same day, where they will get rigourously sorted through floatation tanks, whilst factory employees oversee the process and any under ripe or damaged cherries will not be accepted by the “Cherry Clerk”, who keeps meticulous records of how much coffee each producer delivers on any given day and thus how much payment is due once the coffee has been sold.PB means peaberry. Peaberry is the name given to a very specific shape of coffee bean, which is the result of a natural mutation of the coffee cherry. While there are usually two beans in each fruit, a cherry with a peaberry mutation produces only one rounder bean. Peaberry mutations occur in approximately 5% of all coffee varieties. These beans are known for being rounder, smaller, and denser, which, when handled correctly, can contribute to a more even roast color.PROCESSINGCoffee cherries are carefully handpicked at peak ripeness by smallholder farmers and delivered to the factory for processing. The cherries undergo a Fully washed method, where they are first sorted, then pulped to remove the outer skin. Parchment is then fermented in concrete tanks for 12 to 24 hours, depending on temperature and climate conditions, to break down the mucilage. After fermentation, parchment is washed through grading channels using fresh water. During the peak season, parchment may be soaked in clean, circulating water for up to 24 hours before being transferred to raised beds for drying. The drying process lasts 5 to 21 days , with workers frequently turning the parchment and covering it during the hottest part of the day to ensure even drying and prevent defects.VARIETYSL28 is one of the best known and most respected African varieties. From Kenya, where it was originally selected in the 1930s, it has spread to other parts of Africa (it is particularly important in the Arabica growing areas of Uganda) and now to Latin America. The variety is suitable for medium to high altitudes and is drought tolerant, but susceptible to the main coffee diseases. SL28 is characterised by rusticity, a trait that means it can be left untended for several years or even decades and then return to successful production. Many parts of Kenya have SL28 trees that are 60-80 years old and still productive. The variety was selected at the former Scott Agricultural Laboratories (now the National Agricultural Laboratories, NARL, located in Kabete). The individual tree selections made at Scott Laboratories between 1935 and 1939 were prefixed with SL. There were 42 in total and they were examined for yield, quality and resistance to drought and disease. Recent genetic tests have confirmed that SL28 is related to the Bourbon genetic group. It has become valued for its sweet, complex flavour with vinous undertones.SL34 was originally selected in Kenya in the late 1930s at Scott Agricultural Laboratories. It is very susceptible to major diseases such as coffee rust, coffee berry blight and coffee berry disease. Therefore, proper disease control and prevention strategies are essential for its successful cultivation. Recent genetic tests have shown that SL34 is related to the Typica genetic group. The variety is known for its exceptional cup quality, full body and pleasant acidity.ROASTER'S OPINIONCrisp, acidic, and fruity. A prominent acidity balanced by the sweetness of ripe citrus fruits. Perfect both hot and cold.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. Kii is one of three wet mills managed by the Rung’eto FCS in Kirinyaga and is Fairtrade certified. The Chairman of this society has implemented various quality-focused processes throughout all the factories of the Rung’eto FCS. For example he installed tiles on all the washing channels and fermentation tanks. Moreover, the water for the processing is being reused. Farmers associated with the Rung’eto Cooperative cultivate their crops on Mount Kenya's slopes, known for producing intense, complex, and flavour-dense coffees.Harvest & Post-HarvestSorting: Cherries are hand sorted for unripes and overripes by the farmers before they go into production.Pulping: A 3-Disc Agaarde pulping machine removes the skin and pulp. The coffees are graded by density into three grades by the pulper. Grade 1 and 2 go separately to fermentation. Grade 3 is considered a low grade.Fermentation: The coffee is dry fermented for 18-36 hours in concrete tanks under a roof that provides shade for better temperature control during fermentation.Washing/Grading: After fermentation the coffees are washed and again graded by density in washing channels. They are sometimes soaked in clean water overnight.Drying: Sun-dried 12 to 20 days on African drying beds. Time depends on weather conditions. Coffees are covered under plastic during midday and at night. In this area the flowering period is usually between February and March, following this the trees will be ready for harvest from October to December.Soil: The soil, primarily Nitisol, is rich and developed from volcanic materials, commonly found in highland areas and steep volcanic slopes.
