This time, we chose the Sarchimor variety.The coffee underwent Black Honey processing, in which cherries are selectively picked and then depulped while leaving the mucilage layer intact. The beans are dried on African beds for about 20 days, regularly turned and moved to maintain maximum cleanliness of the profile and ensure even drying.The result is an espresso with deep sweetness and high body. In the cup you’ll find notes of red fruits and caramel sweetness. The texture is velvety, the acidity lively yet harmoniously balanced—creating a bold, sweet-fruity shot that works beautifully both on its own and with milk.About the farmThe mill began operating in 2012 with a small depulping machine and a few African drying beds, where all the coffee was 100% sun-dried. The first single varieties Marvin experimented with were Caturra and Millennium.The mill, named “Reina Elizabeth,” pays tribute to the farm’s previous owner, Elisa Alfaro Hidalgo (1928–2016), who was Marvin’s mother. Doña Elisa had strikingly blue eyes, which led locals in San Luis to claim that only a queen could have such eyes—hence the nickname “Reina Elizabeth.” In addition to her remarkable eyes, her kindness and the farm’s specialty coffee were also truly royal.

The farm was designed not only to produce exceptional coffees, but also to welcome visitors into the natural beauty and traditions of Cauca. Ecological trails wind through the plantation, biodiversity thrives, and comfortable cabins offer guests a quiet place to rest after a day on the farm.Life on the farm follows the rhythms of the coffee trees. Throughout the year, the alleys between rows are trimmed several times to keep competing plants from stealing sunlight, water, and nutrients. Before fertilization, each tree is carefully cleaned to maximize nutrient absorption. The team also practices Re-Re, an old but essential method of collecting ripe, overripe, and fallen cherries after harvest. This keeps pests like the coffee berry borer under control and protects the next crop.Fertilization is guided by annual soil analyses, tree development, and productivity. Weather, especially rainfall shaped by El Niño and La Niña, determines how and when nutrients are applied, but the goal is four fertilizations each year. Alongside these applications, the team spreads organic compost made from coffee byproducts at least once annually to enrich the soil and support long-term sustainability.ABOUT THE COFFEEHarvest begins in May and runs through August, with a smaller mitaca harvest in November and December. Skilled pickers—around seven per hectare at peak—move through the farm every two to three weeks, selecting only the deep red, fully ripe cherries. After picking, the cherries undergo Balceo, a water separation process that removes unripe or defective fruit.From the farm, the cherries travel in a refrigerated truck operated by Área 18, arriving at Banexport’s processing facility in Popayán within 24 hours. The crates remain cool and well-ventilated to slow microbial activity and prevent unwanted fermentation.At the mill, each lot is weighed, registered, and sampled. A 1-kg sample undergoes detailed analysis to determine the best processing method; for this particular lot, a Washed process was chosen. After cleaning and sorting, the fruit is pulped and the beans are moved into a stainless-steel bioreactor equipped with full environmental controls-oxygen flow, temperature, pH, °Bx, and pressure. Pink Bourbon thrives here: an oxygen-rich environment encourages the natural yeast strains of the variety to multiply, creating aromatic precursors that bring out its floral and fruity character. After 48 hours, the coffee is washed three times.These controlled microbial shifts shape the sensory profile of the coffee, accentuating the bright, delicate, and complex attributes that Pink Bourbon is known for.Drying is one of Cauca’s greatest challenges. Unlike the long dry seasons of Africa, humidity here often exceeds 60–80%, and annual rainfall can surpass 1,000 mm. To overcome this, Área 18 uses electric dehydrators that combine heat, cold air, and dehumidification. Their intelligent control system runs continuously, allowing the coffee to dry evenly in just two days without compromising flavor.Once dried, the coffee rests in fique bags lined with GrainPro for 15 days, stabilizing moisture and ensuring uniform quality before export.

The farm operates on 100% renewable energy generated by a hydroelectric generator that transform rushing rivers into energy. The energy fuels the wet and dry mills and provides free electricity for everyone living and working on the farm. On the whole, Hacienda Sonora has shared their success generously, paying fair wages to all workers and bolstering the local community economy.The farm and its mill cover approximately 100 hectares. Of those, 45 hectares are devote to shaded coffee lands. Coffee plants are surrounded by exotic trees and other native vegetation. This biodiversity promote soil health and maintains the nutrient-rich soil that helps grow dense, delicious cherry. The remaining land has wild forest reserve growing on 35 hectares and 20 hectares for sugarcane, which has been grown on Hacienda Sonora’s land for over 150 years.Hacienda Sonora has its own micromill, which enables the farm to keep lots separated by variety and create unique microlots. The mill is centrally located, right next to a traditional sugarcane mill that’s been preserved intact for over 150 years. This lot is naturally processed. In fact, all coffees at Hacienda Sonora are either honey or natural processed to reduce wastewater and further protect the environment. After selective handpicking, ripe cherry is laid to dry on either the farm’s raised beds or its patio where it is turned frequently to promote even drying.Hacienda Sonora is a part of the NAMA Café de Costa Rica project, the first of the Costa Rican government’s Nationally Appropriate Mitigation Actions (NAMAs). They’re actively working towards lower carbon emissions through investments in key technologies and methods. NAMA Café de Costa Rica is the first of its kind to support coffee farmers as they make changes to their coffee production to reduce overall emissions and resource use. Hacienda Sonora has contributed carbon emissions data to NAMA Café de Costa Rica and will receive 10% back on carbon reduction investments.

In practice, this means one thing: the raw material is predictable, clean, and produced to meet the highest standards.This is a deliberate combination of two varieties. Tabi brings structure and elegance, often expressed as a more tea-like clarity and a stable, citrus-fruit acidity, while Yellow Colombia adds sweetness and juicy, ripe fruit character.Formally, this is a washed coffee, but processed in a way that strongly shapes the flavor profile. First, the fermentation is two-stage: an initial aerobic phase, followed by anaerobic submersion, designed to emphasize stone fruit notes (peach, apricot) rather than heavy, wine-like flavors. Second, after fermentation the coffee undergoes controlled hot/cold quenching, meaning contact with hot and cold water to stop the process at the right moment and preserve aromatic clarity.
