It’s not easy to find beans that match our taste preferences in a country roughly the size of the UK or Romania, but with a population density closer to that of the Netherlands or Poland. Uganda is relatively densely populated, and agriculture drives the economy—but most farmers grow Robusta.But rest assured, we managed to find a fruity bomb, a true gem.Norman’s farm is located at the foot of Mount Elgon in Uganda, sourcing cherries from the regions of Sironko, Mbale, Bulambuli, and Kapchorwa. The Coffee Yard is a large reception and drying center for coffee cherries. With almost 20 years of experience in the industry, Norman has specialized in natural-process coffees since 2018, continually refining his processing methods to achieve ideal flavor profiles.The processing steps include:• Selecting and washing cherries to remove defects.• Initial drying on raised beds.• Additional sorting by color and moisture content.• Fermentation in open tanks, which contributes to the coffee’s unique flavor notes.• Drying for about 21 days until moisture drops below 12%.After an additional week, the beans are hulled, hand-sorted and optically sorted, then prepared for export.ROASTER’S NOTEThis coffee truly surprised me! Another lesson showing that it’s worth exploring unknown paths, staying curious, and continuing to search. I haven’t had anything this juicy and tropical in a very long time.

This area is well known for its high-altitude coffee production and consistently high quality.In 2015, the Ramirez-Navarro family took a bold step forward by building their own micro-mill, “Los Campos.” This milestone allowed them to process their own coffee, ensuring full control over quality and traceability while reducing reliance on the cooperative system. Direct trade had long been a goal for the family, which is why their collaboration with Grounds represents such an important achievement.The main coffee varieties grown on the farm are Caturra and Catuai. In recent years, however, the family has been expanding their horizons by planting F-1 hybrid varieties such as Esperanza, Milenio, and Centroamericano. This marks a step toward greater diversity and long-term sustainability. After harvest, a short soak, and cherry selection, the coffee was spread on patios and dried in the sun until it reached the proper moisture level. It was then packed into a vacuum-sealed GrainPro bag and transported to our roastery. Here, it went through another stage of processing—wine maceration.Maceration preserved the natural sweetness of the Brazilian beans while enriching them with wine aromas that give the brew exceptional depth and freshness, adding an extra pleasant acidity. The raw beans were macerated for 24 hours in a blend of three Iberian wines—Spanish Chardonnay and Pinot Grigio, and a Portuguese rosé Syrah. This combination gave the coffee its characteristic aroma and delicate wine notes, which remain even after roasting. During roasting, the alcohol evaporates completely, leaving behind a wine-inspired sensory profile.This is a coffee that contains no alcohol but still carries the refined wine character in which it matured—fruity, light, and elegant.
