Combined with specialized washing stations, it allows maintaining a very high level of selection and raw material quality.ABOUT THE PROCESSINGThe coffee is processed using the fully washed method with double fermentation, which is classic for Kenya. Carefully selected cherries reach the station on the very same day after harvesting. After depulping, the beans undergo overnight fermentation, then they are washed in sorting channels, soaked for another 24–48 hours in clean water, and dried on raised beds.
