ABOUT THE FARM AND PRODUCERS



We met Gemechu in January 2024 during our first trip to Ethiopia. This humble, well-mannered, and kind-hearted man continues, together with his brothers, the work begun by their father. They cultivate coffee around the town of Gerba and also collaborate with hundreds of small local producers. And these are no ordinary farms! Located at elevations well above 2,000 meters, with carefully selected single botanical varieties and a unique microclimate, this region—renowned for its exceptional Ethiopian coffees—produces bright, floral-herbal, and sweet flavors in the cup.



ABOUT THE PROCESSING



This is the most traditional Ethiopian method — natural processing, which means drying the coffee beans inside the whole fruit. Freshly picked cherries undergo an initial selection to remove defective ones. They are then spread out on so-called African beds — long tables, sometimes stretching dozens of meters, with mesh surfaces that allow air to circulate evenly throughout the drying process, resulting in uniform drying. Depending on the weather, the entire process takes about 25 to 30 days.
