ABOUT THE FARM AND COFFEE PRODUCER


Gelo Saloye is a respected member of his community, a former head of a small village and an active leader of the local church. Our visit to his place was entirely spontaneous.


In January 2025, while traveling through Guji, our local partner Gemechu mentioned that he wanted to show us a small coffee drying plot behind the house of one of the nearby smallholders. It was our last day in this part of Ethiopia, so we were happy to stop by Gelo’s farm. Freshly harvested coffee, only a few days old, was covered with a tarpaulin to protect the cherries from the intense sun. This is a very good practice, although a distinct, intense fermentation aroma was clearly noticeable beneath the cover. Curious about the outcome, we took a sample of coffee that had previously been dried in the same way. Two days later, at the cupping table, we tasted a juicy, fruity, and very clean coffee, without any “wild” notes that can sometimes appear as a result of extended processing.


Mr. Gelo owns just 5 hectares of coffee fields, and his annual production amounts to only… about 20 bags of export-ready coffee.

A single, regionally traditional Wolega variety, hand-picked and delivered to a small drying area with raised beds. Dried as a natural, in whole cherry, covered daily with a tarpaulin during periods of the most intense sunlight. After approximately 30 days, the coffee is removed from the beds and homogenized in bags in a shaded storage area.
