ABOUT THE COFFEE
These beans are the result of the work of smallholder farmers from the area surrounding Lake Kivu in Rwanda’s Western Province. The coffee is hand-picked, with great care taken to ensure that only fully ripe cherries make it into the baskets. At the washing station, the beans undergo rigorous selection. First, less mature cherries are removed through water flotation, as they float to the surface.
Next, the cherries are fed into a depulper, which removes the skin and leaves the beans covered with a thin layer of sweet pulp (mucilage). The prepared coffee is then fermented in water for 10 to 12 hours, depending on ambient temperature. Finally, the beans are sun-dried for 2–3 weeks. Regular turning ensures even drying and the achievement of optimal moisture content.
