In practice: a solid foundation that carries sweetness and allows vanilla to shine without the flavor losing balance. This combination of varieties maintains structure in the cup — which means the processing can be intensive while the coffee still tastes like coffee, not perfume.First comes a 24-hour pre-fermentation of whole cherries. Then depulping and washing. Next, 96 hours of anaerobic fermentation in sealed tanks with the addition of natural vanilla aroma. Finally, mechanical drying (3–4 days) and 30 days of stabilization in GrainPro to allow the flavor to settle and remain consistent across future batches.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseMethod:Pour the water in five equal stages (e.g., 5 × 60 g), every 30 seconds.Allow the water to fully drain through the coffee between pours. If the flow is too slow or too fast, adjust the grind size accordingly.Use soft, filtered water.

After depulping, the beans undergo anaerobic fermentation with yeast and a strawberry aromatic component. These are names that genuinely matter on the competition scene. Coffees from El Diviso have won the World Barista Championship, and lots from Johan Vergara regularly appear in the routines of world-class competitors. In practice, this means one thing: the raw material is predictable, clean, and produced to meet the highest standards. This is a deliberate combination of two varieties. Tabi brings structure and elegance, often expressed as a more tea-like clarity and a stable, citrus-fruit acidity, while Yellow Colombia adds sweetness and juicy, ripe fruit character.Formally, this is a washed coffee, but processed in a way that strongly shapes the flavor profile. First, the fermentation is two-stage: an initial aerobic phase, followed by anaerobic submersion, designed to emphasize stone fruit notes (peach, apricot) rather than heavy, wine-like flavors. Second, after fermentation the coffee undergoes controlled hot/cold quenching, meaning contact with hot and cold water to stop the process at the right moment and preserve aromatic clarity. This is followed by natural drying under cover for greater stability and reduced risk of overheating, finished with mechanical drying in a silo, and at least 10 days of resting before final preparation.RECIPERatio: 60 g coffee per 1 liter of waterWater temperature: 93°CGrind size: Medium-coarseBrew time: 3:30 minutesMethod: Pour the water in five equal pours (for example, 5 × 60 g) at 30-second intervals.Allow the water to fully drain through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size coarser or finer.Remember to use soft, filtered water.

It is currently run by the second generation of producers, Elias and Shady Bayter, with the support of their mother, Martha. Unlike many small farms in Colombia, which typically cover around 5 hectares, this estate spans over 300 hectares of land, nearly 100 hectares of which are dedicated to coffee cultivation. The Bayter family is currently conducting advanced research on bacteria and yeasts to control fermentation, constantly experimenting with processing methods and achieving an unprecedented level of excellence in their coffees. El Vergel grows more than 28 different coffee varieties and is the first farm in Colombia to develop the Koji fermentation process, a technique that has completely revolutionized green coffee production.Pink Bourbon is a unique coffee variety, known for its unusual pink-colored cherries. Its captivating and complex flavor profile is characterized by floral notes, fruitiness, juicy acidity, and honey-like sweetness. This exceptional coffee was produced using a method developed at El Vergel Estate, employing Aspergillus oryzae, a fungus renowned for its ability to enhance flavor profiles. The innovative process involves cultivating the fungus on steamed rice for 3–4 days. Once fully developed, the rice is harvested, dried, and ground into a fine powder. This powder is then evenly spread over coffee cherries placed on raised beds. Ensuring oxygen exposure is crucial, as it enables the fungus to grow and transform the fruit.During a 24–72 hour aerobic fermentation, the koji culture develops, covering most of the cherries and intensifying their flavor complexity. After fermentation, the cherries are dried in two stages: first for 10 days under the sun, followed by 2–4 days of mechanical drying at a controlled temperature not exceeding 38°C to preserve the coffee’s delicate characteristics. Finally, the beans undergo a 20-day stabilization period in GrainPro bags, ensuring stability and optimal storage conditions.ROYAL BEANSWhat’s behind the name Royal Beans? Its natural sweetness and fruit-floral base handle intensive fermentation well, without creating heaviness in the cup. As a result, the banana aroma does not overpower the coffee’s flavor — it enhances and defines its character.First, the cherries undergo 48 hours of fermentation in sealed bags. They are then depulped, with the beans left covered in a layer of mucilage. The next stage is co-fermentation with yeast and natural banana aromas, lasting about five days. Finally, the beans are dried to the target moisture level.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseMethod:Pour the water in five equal stages (e.g., 5 × 60 g), every 30 seconds. The water should fully drain through the coffee between pours. If the flow is too slow or too fast, adjust the grind size accordingly.Use soft, filtered water for best results.ROYAL BEANSWhat’s behind the name Royal Beans? He runs a 6.46-hectare farm in Biloya together with his wife and son. The family has owned this land since the 1970s, and since 2019 they have operated under their own export license, allowing them to sell coffee directly without intermediaries.Girma is the only producer in the Operation Cherry Red 2025 project supplying a washed lot, which makes this coffee something of a rare find within the series. The farm grows mixed local heirloom varieties typical of Yirgacheffe, adapted to an altitude of 1,750 meters above sea level and fertile red-brown soils. It is a classic Ethiopian genetic mix, offering plenty of sweetness, pronounced fruitiness, and floral aromas.ABOUT THE COFFEEThis coffee is wet processed. Ripe cherries are hand-picked, sorted in water, fermented, and rinsed using water from the nearby Biloya River, then dried for 6–8 days on raised beds. The beans are turned frequently to ensure even, gentle drying without overheating in the sun.The result? A clean, bright profile with plenty of juiciness and zero randomness.BREWING RECIPE Ratio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseBrew time: 3:30 minutesMethod: Pour the water in five equal stages (for example, 5 × 60 g), spaced 30 seconds apart.Allow the water to fully pass through the coffee between each pour.If the flow is too slow or too fast, adjust the grind size to coarser or finer.Remember to use soft, filtered water.

The farm covers 6 hectares, 5 of which are dedicated to coffee cultivation, and the trees in this lot are around four years old.The farm is managed by Vladimir and his family, and the entire process, from harvesting to drying, takes place on-site and under their direct supervision. The harvest season runs from April to December and is based on selective hand-picking to maintain consistent quality and uniformity of the cherries.ABOUT THE COFFEEGesha is a variety strongly associated with exceptional quality and a very high sensory potential when grown at high altitudes. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions. This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries. After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats. After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. It is then dried on raised beds for 15–17 days and stabilized in GrainPro bags for 10–15 days. The final step is careful sorting to remove defects and ensure the highest physical quality of the beans.BREW RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarsePour the water in five equal pours (for example 5 × 60 g), every 30 seconds.Allow the water to fully drain through the coffee between each pour.If the water flows too slowly or too quickly, adjust the grind size accordingly (coarser or finer).Use soft, filtered water for the best results.
