The body is silky, with honey-like sweetness.ABOUT THE FARMGilberto Baraona was a shining beacon of the coffee industry in El Salvador. Over many years, he worked relentlessly to explore the possibilities of production, with a varietal programme that many dream of: the nursery that Gilberto developed hosts over 70 distinct coffee cultivars. Now in the trusted hands of his son, Diego, Los Pirineos continues to deliver the unexpected. At 1400 metres above sea level, Los Pirineos sits on volcanic slopes amongst lush forest. The microclimate around the volcano provides sun-filled days and cool breezes that are ideal for growing and drying. In the drying area of the farm, raised beds are positioned between two peaks which consistently channel the wind across the drying coffee. With twelve hours of sun per day, this creates an ideal environment for Honey and Natural processing. Quality and responsibility are central to the way Diego works. All the water used in processing is from collected rain, and bees are kept on the farm to help pollination across the farm and surrounding forest. With more than 60 employees, Diego ensures year round employment on projects across the farm.ABOUT THE PROCESSOur Pacamara lot underwent Black Honey processing. After harvest, ripe cherries are pulped but almost all of the mucilage is left intact. The pulped coffee is then spread in a thin layer on shaded raised drying beds. The shade slows the drying process compared to the other Honey processes used on the farm. Coffee is dried for approximately 25 days until it reaches ideal humidity and the mucilage has turned sticky and black, giving the process its name.ROASTER'S NOTEIn a stunning volcanic landscape, fifth generation producer Diego continues the work of his father. We are proud to work closely with David, and this years lots are better than ever.ABOUT THE PROCESSHuye Mountain has its own sorting stations and laboratory in the Huye District, where coffees are processed and quality control takes place. During the harvest, ripe cherries are handpicked and delivered to the station for sorting, grading, and drying. After sorting by hand and then floatation, the best quality cherries are transferred to raised African drying tables for 3 to 4 weeks. Caramel, syrupy sweetness, and black tea add depth as it cools.ABOUT THE FARMGachami Factory is located in the famous coffee growing region of Kirinyaga. It is owned by Baragwi Farmer Cooperative Society (FCS), one of the largest cooperatives in Kenya in terms of both coffee volume and membership. Around 1,200 smallholder farmers deliver cherries to the factory for processing, growing mostly SL28 and SL34 cherries between 1,700 and 1,800 meters above sea level. Farmers typically manage small plots averaging 250 coffee trees, which are usually grown alongside subsistence food crops, fruit trees and other crops.ABOUT THE PROCESSCherries are carefully hand-picked before being delivered to Gachami. At the factory, the cherries are carefully hand-sorted to ensure the highest quality. Only the ripest are selected and pulped. After pulping, the coffee is fermented for 16 to 24 hours. The parchment is then washed through grading channels using clean water before being soaked in clean, circulating water for around 24 hours. Recent research has shown that the step also has added benefit to the coffee’s final quality and longevity, adding clarity to the cup. After soaking, the coffee is delivered to dry on raised beds, where it will be turned regularly and covered during the hottest part of the day and evenings to ensure even drying. Several years ago, these producers were dislocated from their homes and land because of a natural disaster, and they have rebuilt their lives and farms with a new focus on coffee. Unlike the vast majority of other Sumatran coffee receiving and processing centers, this mill is producing Washed coffees, as well as Naturals. The most common varieties grown in Sumatra, which are Ateng, Bor Bor, Catimor, and Timor hybrids. Aceh, in northern Sumatra, is an incredible region for coffee production. The average farm is one hectare, 80% of producers within northern Sumatra are women, and 95% of producers are smallholders. The region is diverse, geographically speaking. It is surrounded by beaches with a swampy inland, and the Barisan Mountains make up the inner two-thirds of the area. Coffee is grown on this volcanic mountain amongst the rainforest. One of the notable features of this area is Lake Taboa, the largest volcanic lake in the world.THE PROCESSHistorically, Indonesian coffee producers have implemented the wet hull method but recent years we have witnessed a shift towards modern specialty techniques which deliver exciting new profiles. This lot was naturally processed, with whole cherries placed on covered beds in greenhouses.ROASTER'S OPINIONThe Asman Gayo Mill works with smallholders in the Sumatran region of Aceh. This distinct coffee is perfect for lovers of vibrant natural processing - the creamy tropical notes remind us of a piña colada!Store in a cold and dry space.

In the cup, expect fig jam, prune, and nougat. The fermentation brings a gentle boozy quality, while staying well balanced with a lasting chocolate note.ABOUT THE FARMIvan is the younger brother of Gertrudes and Joao Hamilton dos Santos. Together with his siblings and wife Rose, a partnership began with FAF (Fazenda Ambiental Fortaleza or Environmental Fortress Farm) in 2008 to change to sustainable, quality driven coffee farming. Fast forward and a whole region has been transformed, with neighbours collaborating and following the best possible farming practices. Named after the Brazilian Roadrunner which is native to the area, Ivan and Roses Sitio Seriema farm is a model of modern, responsible coffee production. We first tasted coffees from the family in 2014 and they have helped change our perception of Brazilian coffees. With a high proportion of Brazilian coffee produced at the lower ‘commodity’ standard, it has been an intriguing journey to see the beautiful terroir of the country properly expressed. Our relationship with Ivan and Rose has grown over the years and we have started investing in upgrades at their farm. With improved water treatment facilities the farm now fully cleans all water before releasing it back into the environment. Working with FAF, this project is now spreading across the region: helping to deliver a more sustainable model of coffee production.ABOUT THE PROCESSThis lot underwent fermentation for 36 hours: the whole cherries are sorted and cleaned, before being placed in a sealed anaerobic environment. The fermented cherries were then dried on patios with the whole outside cherry intact. The anaerobic process is a great match for the terroir of Brazil, bringing superb depth to the profile.ROASTER'S OPINIONThe first anaerobic lot we have featured from our partners Ivan and Rose dos Santos. In the cup, it is like sweet fig jam and velvety nougat: an espresso full of character.Store in a cold and dry space.

For their naturally processed lots, the whole cherry is transferred to raised African beds to slowly dry in the sun. During cultivation, all inputs with negative impact are decreased to a minimum and soil and plant health are actively restored.ABOUT THE PROCESSThis lot underwent fermentation for 40 hours: the whole cherries are sorted and cleaned, before being placed in a sealed anaerobic environment. In an effort to see positive change in both farmers and roasters' lives, Long Miles Coffee was born. Long Miles Project is a farmer-driven coffee production model. They work with coffee farming families on eleven unique hills within Burundi. Long Miles create traceable micro-lots that yield consistently great coffees while improving the livelihoods of the small holding farmers who grow them. Here are three of the most important ways to do this: 1. The farmers who grow coffee on the eleven hills receive year-round agricultural assistance through one of the twenty-six Long Miles Coffee Scouts who are trained agronomists. 2. Long Miles pay higher prices for coffee cherries as well as annual premiums. 3. They strengthen relationships between roaster and farmer so they can serve coffee from a specific hill year after year.THE PROCESSThe traditional Burundian process is fully washed: freshly harvested cherries are delivered by coffee farmers to the washing station, then floated and hand-sorted for ripeness upon arrival. The cherries are pulped and undergo a single fermentation process. The cherries first undergo a 48 to 60-hour anaerobic fermentation, bringing intense character to the profile. The whole cherries are then dried in the sun on covered raised beds - ""Marquesina"" - until they reach 30% moisture. Then, the cherries are moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve 18%-16% moisture. After a pre-stabilisation stall to intensify flavours, the drying process is completed until optimal moisture is achieved. By constantly measuring the Brix sugar content level, Alejo and his team identify the ideal harvest moment. Following harvest, the cherries are pulped to remove the skin. A thick layer of mucilage is left surrounding the beans imparting sweetness and body to the coffee as it dries. The coffee was dried for 4 days in the sun, before 33 hours mechanical drying. The Barn - Kenya Kamwangi AB Washed Filter 250 g

The sweetness is gently syrupy, like raisin or candied orange. As it cools, the rose hip shows a touch of herbal elegance.ABOUT THE FARMThis coffee has been processed at the Kamwangi Factory, belonging to the New Ngariama Cooperative Society in Kirinyaga, Central Kenya. Among the three wet mills under the cooperative, Kamwangi is one. It serves approximately 1800 farmers, although not all are currently active. These farmers primarily grow SL 34 (90%), along with SL28, K7, and Ruiru 11 varieties, at altitudes ranging from 1500 to 1800 metres above sea level. The factory is closest to the town of Embu.  Processing is done with Fresh River Water. The same water is recycled during the day through a recycling process enabling them to significantly reduce water consumption. They are Rainforest Alliance certified, and have established soaking pits for waste water treatment.THE PROCESSOnce the coffee cherries have been accepted by the Cherry Clerk, they are pulped and fermented for approximately 16-24 hours, depending on ambient temperature at the time. Following fermentation, the coffee is washed in clean water from the Kii River and soaked for 12 hours. Newly installed tiles in the washing channels help preserve coffee and water quality, and all water used in processing is cleaned by filtering in earthen pits before being reintroduced to local waterways. After washing and grading, the beans are laid to dry on raised beds. Workers rake the beds frequently to ensure even drying, covering the beds during the hottest time of day and at night, to shelter parchment from moisture. It takes approximately 14 days for the beans to dry.ROASTER'S NOTEOur Kenyan lots really flew off the shelves this season, so we were excited to source this coffee from the final harvest of 2025. The finish is long and sweet, with aromatic black tea.ABOUT THE FARMAs the coffee growing industry grows stronger in Thailand, the children of farmers who once moved away are returning to the land. With new approaches and an embrace of new methods, they are taking Thai coffee to exciting new places. Having left careers in accountancy and engineering behind, Nui and Aoy Jaisooksern decided to return to the land of their parents to grow coffee. Doi Saket is the oldest coffee growing area in Thailand, located in Chiang Mai province. The first few trees of Arabica coffee that were part of the opium replacement program of the Thai King were tested here. As a result, heirloom varietals, particularly Typica, are still commonplace in many old farms. The area of Doi Saket is the epitome of shade grown coffee farms. Typica trees are grown under a forest with many micro mills each producing about one ton of green beans per year. At 1300 - 1500 meters, Doi Saket is situated at a lower altitude than many of the farms we work with. However, at 19 degrees north of the equator, the altitude is very high for coffee - in Thailand, coffee cannot grow above 1550 meters. The result is a coffee with a level of complexity usually associated with coffees grown at higher altitudes.THE PROCESSThis lot was processed in washed style, with a double-stage fermentation used to produce a more complex profile. After arriving at the mill, cherries were immediately pulped then dry fermented in a sealed tank for 24 hours. After this first stage, water was added to the tank for a period of wet fermentation, for an additional 24 hours, followed by washing with clean water. The coffee was then dried on raised beds before undergoing multiple stages of sorting and quality control, including a final stage of hand sorting.ROASTER'S NOTEIn one of the oldest coffee growing areas in Thailand, Nui and Aoy Jaisooksern have introduced modern speciality methods to deliver clean, distinct flavour.
