ABOUT THE FARM & PRODUCER



Francis is the cousin of Raul Perez, whose coffees (La Soledad and El Llano) we’ve been jarring since the very beginning of Heresy. This time it’s a debut – but still, keeping it in the family!



La Pampa has been in Francis and his family’s hands for five (!) generations. Nestled in the Acatenango highlands – a place with an ideal and diverse ecosystem – it grows classic, fruit-forward varietals such as Bourbon, Caturra, and Typica. Beyond careful cultivation, Francis experiments boldly with processing and fermentation methods, adding extra layers of complexity to his coffees. Each lot is produced with strict attention to detail and full traceability, down to individual sections.



La Pampa also proudly holds the prestigious Acatenango Denomination of Origin – think of it like Champagne: if it’s sparkling wine from Champagne, it’s the real deal; if it’s coffee from Francis, it’s pure terroir from one of Guatemala’s most exciting regions, sealed with an official wax stamp.




ABOUT THE PROCESSING



The Bourbon and Caturra cherries are hand-picked at peak ripeness and carefully sorted before processing. They ferment as whole cherries and are then dried on patios or raised beds for more than 20 days.
