PROCESSING
A washed classic of the highest caliber. Mauricio is an expert like no other. At first, he makes sure that only cherries with a deep maroon color go into the process. The beans are depulped as soon as they arrive at the washing station. Then, before washing, a 36-hours dry fermentation occurs. The coffee dries on the patio for about two weeks, depending on the weather conditions. The result? Ultra-ripe cherries gave this gem high sweetness. Clear fruitiness, on the other hand, is typical for the high-elevation caturra from this region. And the clarity of flavor is mainly due to Mauricio's many years of experience in coffee processing.
THE FARM
La Maravilla means "the wonderland" in Spanish. The farm is located in the spectacular, high mountains of Huehuetenango. Despite the fact that not so long ago it could only be reached on horseback, thanks to Mauricio's hard work we’re driving a 4x4 to get there. With tinted windows, naturally. Until today you won't post anything on Instagram at La Maravilla though. What a tragedy! There's no signal on the farm. No electricity neither. But Mauricio's wife, Amavilia, makes the best tacos ever! Pure consolation.

An elegant, well-structured and round coffee. No aggressive strokes or unforeseen twists. Yet there's a lot of stuff going on! High, chocolaty-caramely sweetness with a clear fruity twist. There's a reason Mauricio was a Cup of Excellence finalist last year - his coffees are always in a class of their own!
