ABOUT THE COFFEE
This coffee comes from two farms in the Huila region: Finca El Diviso, run by Nestor Lasso and his family, and Finca Las Flores, managed by Johan Vergara and the Vergara family. El Diviso sits at an elevation of 1,780–1,900 m a.s.l., while Las Flores is located at 1,700–1,790 m a.s.l. Both farms focus on experimental processing methods and cultivate a wide range of botanical varieties.
This lot is a blend of the Tabi and Yellow Colombia varieties. The coffee undergoes double fermentation: first an aerobic stage, followed by anaerobic submerged fermentation aimed at enhancing stone-fruit notes. After fermentation, the coffee is subjected to a “thermal shock” using hot and cold water to minimize aroma loss and preserve the desired sensory profile. Drying begins naturally under cover, after which the coffee is finished mechanically in a silo. It then rests for at least 10 days before final milling.
Coffees from Las Flores and El Diviso regularly appear in winning routines at Barista Championships—on the World Barista Championship stage (including the 2025 World Barista Champion) as well as in the Polish Barista Championship—further confirming their exceptional potential.

Nestor Lasso and Johan Vergara are pioneers of the new wave of Colombian coffee producers. Both farms (El Diviso and Las Flores) are truly impressive, and although I have visited them several times, each visit brought new solutions and innovations. When the result of their collaboration—Carambolo Estate—appeared on our cupping table, it was immediately clear that these beans would become this year’s filter coffee of December. No need to elaborate: it’s going to be fruity and sweet!
