ABOUT THE COFFEE
60% Colombia Sunshine from the Huila region
The municipality of Palestina is a remarkable place: it is called the “factory of water and forests” of Huila. It is characterized by two types of climate—cool and temperate—and the coffees from this area differ from the rest of Huila: they are more acidic and delicate, with noticeable fruity notes. Our coffee comes from a selected group of producers in the upper part of Palestina, located at around 1,700 m.a.s.l. This group of farmers specializes in varieties such as Tabi and Caturra.
The Cooperativa Departamental de Caficultores del Huila Ltda. (CADEFIHUILA) is a non-profit organization and one of the most important coffee cooperatives in Colombia. It covers 27 municipalities, supporting farmers through 45 coffee collection centers, 46 fertilizer shops, 36 agricultural supply stores, 16 permanent cupping labs, one mobile lab, and 7 drying facilities.
CADEFIHUILA runs programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. Developing certification processes for these specialized coffees allows the cooperative to meet the growing market demand for coffee purchased under specific conditions.
40% Ethiopia Suke Quto from the Guji region
Tesfaye Bekele, the founder of the Suke Quto farm, is one of the pioneers of specialty coffee from the Guji region. He says about his work: “Coffee is everything to me. I dedicate all my time and energy to the beans I harvest and process.” He is a true enthusiast, an environmental expert, and a leader in the region. His farm sits on exceptionally fertile volcanic soils. Tesfaye nurtures them using ecological practices, and all Suke Quto coffees are both organic and Rainforest Alliance certified.

Here’s a surprising fusion of coffees from two distant regions: a blend of 60% Colombia Sunshine and 40% Ethiopia Suke Quto—an incredibly subtle, summery combination.
