Specialty beans from Guatemala roasted at Heresy by the 2020 Polish Roasting Vice-Champion. Light roast, designed for filter or cup brewing. A profile featuring high articulation and sweetness, clear floral notes and intense fruitiness.

PROCESSING
The harvested fruit ferments for up to 40 hours after picking and only then is it depulped. Drying in style - on African beds! As a result of years of experimentation, Raul always keeps a thick layer of beans, which he mixes every 40-60 minutes, depending on the sunlight at the time. The entire drying process takes 12-14 days.
THE FARM
El LLano is a boutique farm whose grounds start literally a few meters from the front door of Raul's house. Located in the beautiful Acatenango region, it is the little sister of the more popular La Soledad.
ROASTER'S COMMENT
This lot shows how a botanical variety and the right approach in the process can change the profile of a coffee that grows a few dozen metres next to a more classic caturra. Yellow catuai offers much more fruitiness, complexity and floral notes! I've been cupping this lot from Raul year after year for the last four years, and every time it's my favourite coffee from El Llano. Clean as a teardrop and sweet as a mirabelle from a country roadside.
PACKAGING
The coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! A plastic jar turns out to be pretty eco-friendly, just remember to put it in the right container, or find a creative way to reuse it at home.
