ABOUT THE COFFEE


The cherries for this lot come from the village of Halo Barite in Gedeb, within the Gedeo Zone, an area also known as Yirgacheffe. The Halo washing station works with around 700 smallholder farmers. The surrounding landscape allows cherries to reach the station quickly after harvest, helping preserve freshness and quality.


This is a classic Ethiopian natural. Cherries are carefully sorted and then sun-dried on African raised beds, resulting in a clean, expressive cup that reflects the character of the region.



ROASTER'S OPINION:


Every year during the Ethiopian buying season, we cup countless coffees, always searching for classic natural profiles that are fruity, clean, and expressive. This is exactly one of those cups. We taste blueberry yoghurt, orange, and nougat, with balanced acidity, gentle sweetness, and a light body. It’s an easy, comforting coffee that works just as well for everyday drinking as it does for slow, attentive cups. One we never get tired of.



BREW RECIPE:


Ethiopian coffees are known to produce more fines, which can sometimes clog filters. To avoid this, we recommend less agitation during brewing, with fewer pours and a slower flow rate. We prefer a higher brew ratio, a coarser grind size, and hot water between 96 and 99 °C. This helps keep the cup clean, bright, and balanced.


Recipe: 15 g coffee; 270 ml water


Brewing:


Bloom with: 75 g of water for 1 minute


First pour: up to 170 ml


Second pour: up to 270 ml


Total brew time: 3:30 minutes
