ABOUT THE COFFEE
Finca El Mirador is the place where Alonso Bustos, a second-generation coffee producer, brings his lifelong passion to life. For over five decades, Alonso has cultivated coffee with the goal of improving something every single day. Today, on his 4-hectare farm located in the Bolívar subregion of Huila, at 1600 meters above sea level, he lives with his three children and two grandchildren. It was his children who inspired him to begin producing specialty coffee in 2017, and now his grandchildren are already showing interest in continuing the family tradition.
For a long time, the Pink Bourbon variety was believed to be a hybrid of Yellow and Red Bourbon, but recent genetic research has revealed that Pink Bourbon is not a Bourbon at all. This exceptional variety most likely descends from Ethiopian coffee cultivars, placing it among the relatives of the legendary Geisha. Pink Bourbon is known for its larger cherries, ability to thrive at higher altitudes, and — importantly for farmers — greater resistance to disease than traditional Bourbons. Its genetic richness translates into an astounding flavor potential, admired by both coffee professionals and enthusiasts alike.
Alonso approaches cultivation with full awareness and dedication — he wants everyone who drinks his coffee to understand how much time and care he invests in it. During harvest, he works with hired pickers who carefully select only fully ripe cherries. The natural processing method involves drying the whole cherries on raised platforms called marquesinas. The cherries are turned regularly to ensure even drying, allowing them to ferment slowly and fully, giving the beans their rich, sweet flavor profile.
In the cup, this coffee reveals a multi-layered composition that combines the jammy sweetness of blackcurrant with the delicate florality of violet. A touch of blackberry liqueur adds depth and intensity, while a pomegranate note introduces a bright, juicy fruitiness. This combination makes Pink Bourbon from El Mirador not just a beverage, but a story of Ethiopian genetic heritage, Colombian soil, and a family tradition that evolves with every generation. Alonso plans to spend the rest of his life on his farm, perfecting it day by day — and you can taste the result of that devotion in every sip.
