Tylko co z tego, jak nie masz młynka lub jest on, powiedzmy to szczerze, badziewny? Ale w takim razie – jakie są najlepsze młynki do kawy? Oto nasz mały ranking.

Rodzaje młynków – co warto o nich wiedzieć?


Młynek żarnowy

Sprawa podstawowa – młynek żarnowy, żaden inny (może kiedyś wymyślą coś innego, jednak jak na razie…). Aby kawa była dobrze zmielona, musi ona trafić między żarna, czyli dwa elementy, które rzeczywiście mielą kawę, a nie siekają. Bo z siekaniem ziaren mamy do czynienia w młynkach ostrzowych, zwanych również udarowymi. Ten typ urządzeń proszę sobie zupełnie odpuścić, jeśli chce się myśleć o dobrej kawie. Żarna mogą przybrać różną postać. Mogą być płaskie lub stożkowe oraz stalowe lub ceramiczne (choć zdarzają się też inne materiały, jednak stosunkowo rzadko). Stożkowe żarna są spotykane w młynkach ręcznych lub budżetowych elektrycznych oraz elektrycznych wysokiej półki. Płaskie to standard w średniej i wysokiej klasie młynków elektrycznych, czyli takie jak Eureka Mignon, Atom, Mazzer Mini bądź Baratza Sette. Które są lepsze? Spór między kawoszami toczy się od zarania dziejów. No dobrze, może krócej, ale wystarczająco długo. Tanie młynki mają żarna stożkowe ze względu na to, że są mniejsze, tańsze w produkcji, łatwiejsze do osadzenia w ręcznych konstrukcjach. A przy drogich, najlepszych młynkach do kawy, cóż, prócz dopasowanych żaren, ostrych, dużych, dochodzą mocne silniki i specjalnie usztywniane konstrukcje. Dzięki temu kawa jest mielona nie dość, że szybko, to z dużą dokładnością. To, na co jeszcze warto zwracać uwagę, to średnica żaren. Zasada jest prosta – im większa, tym lepsza. Przekłada się to, po pierwsze, na szybkość mielenia, po drugie, na jego jakość, czyli mniej pyłu i równe drobinki kawy. Dlaczego to ważne? Pył i nierówne mielenie to gwarancja bardziej gorzkiego smaku, zabicie pysznych niuansów i problemy w stylu zbyt długiego czasu parzenia. Oczywiście ich ostrość też jest bardzo ważna. Na szczęście, w warunkach domowych, wytrzymałość dobrych żaren w młynkach średniej klasy jest liczona w latach, po czym można je z powodzeniem wymienić na nowe.

Młynek ceramiczny

Ceramika najczęściej jest stosowana w młynkach ręcznych. Jest to dość trwały materiał, trudno jednak stworzyć z niego dostatecznie ostre żarna, stąd w młynkach ręcznych ceramicznych następuje bardziej miażdżenie i ścieranie niż faktyczne mielenie. Jednak do podstawowych metod alternatywnych może być to zadowalający poziom. Zdarzają się ceramiczne żarna w młynkach elektrycznych, które oczywiście różnią się od tych z tanich młynków ręcznych, jest to jednak rzadkość.


Młynek stalowy


Młynkiem stalowym potocznie nazywamy urządzenie, w którym znajdują się żarna wykonane ze stali. Są zdecydowanie twardsze, wytrzymalsze i dokładniejsze niż żarna ceramiczne. Dzięki temu, że są również ostrzejsze, Twoja kawa może być mniej pylista i po prostu smaczniejsza. Jeżeli cenisz sobie trwałość i odporność na uszkodzenia, wybierz młynek stalowy.

Młynek do metod alternatywnych

Decydując się na kawowe alternatywy, trzeba się skupić przede wszystkim na tym, aby młynek miał szeroki zakres regulacji mielenia. Alternatywy potrzebują różnych przemiałów – zawsze grubszych niż espresso – od dość drobnego przypominającego bałtycki piasek w Gdańsku, w kawiarce, przez gruby piach w AeroPressie, jeszcze ciut grubiej w dripie, aż po wręcz drobne kamyczki w dużym Chemexie (mowa oczywiście o obrazowej wielkości drobinek kawy). Wszelkie młynki ręczne sprawdzą się do takich metod. Co prawda, im grubiej mielimy, tym większe różnice występują w wielkości frakcji. Taka jest specyfika większości młynków ręcznych. Jest to najtańsze rozwiązanie – niezłej jakości młynek ręczny można kupić za około 100-150 złotych. Są oczywiście modele droższe, jak Comandante, ale idzie też za tym poprawa jakości mielenia. Jest to dobra propozycja dla początkujących, pijących niewielkie ilości kawy oraz podróżujących. Mielenie ręczne wymaga jednak nieco czasu i siły.

Młynki elektryczne to już wyższa półka cenowa, ale gwarantujące wygodę i w większości przypadków dużo lepszą jakość mielenia. Te najpopularniejsze to Wilfa Svart i Baratza Encore, o których pisaliśmy tu, proponujące dobry stosunek jakości do ceny. Szukając czegoś mocniejszego, z większymi żarnami, mielącego równiej, z mniejszą ilością pyłu (co przekłada się na czystszy smak kawy i bardziej wyczuwalne niuanse w niej zawarte), warto zainteresować się takimi modelami jak Fellow ODE i OPUS, Baratza Forte, Vario czy Eureka Atom.

Młynek do espresso

Jak wspomniałem już wcześniej, espresso jest bardzo wymagającą metodą parzenia kawy. Wymaga największych nakładów finansowych i największej uwagi oraz wiedzy. Przyzwoity ekspres ciśnieniowy do domu to koszt przynajmniej 1500-2000 złotych. Młynki do espresso to też wydatek przynajmniej kilkuset złotych. Minimum. Jak przy Baratzie Virtuoso. Warto jednak nie oszczędzać na tym elemencie zestawu (przy alternatywach też nie warto oszczędzać na młynku, ale jest to ciut mniej restrykcyjny punkt) i zainwestować więcej, nawet kosztem słabszego modelu ekspresu! To właśnie młynek decyduje w największym stopniu o tym, jak będzie smakować kawa, którą do niego wsypiemy i zaparzymy w ekspresie. Jeśli kawa będzie prawidłowo zmielona, drobno, ale bez pyłu, nagle, nawet z tańszego ekspresu, popłynie piękny, gęsty, naturalnie słodki nektar, którego tak bardzo pożądamy!

Młynek do kawy to podstawa

Nie ma innej opcji, tego punktu programu nie da się przeskoczyć – chcąc inwestować w dobrą kawę, młynek do kawy trzeba uwzględnić w swoim budżecie na pierwszym miejscu. Teraz oczywiście powstaje pytanie, co kryje się pod słowem budżet i dlaczego to tak dużo (wydawać by się mogło). Niezależnie od tego, czy chce się esencjonalnego espresso z ekspresu ciśnieniowego, pobudzającej kawy z kawiarki bądź pół litra naparu z Chemexa, w całej tej układance młynek do kawy musi się pojawić. Jaki? Niestety, sprawa jest trochę bardziej złożona, jeśli chodzi o to, który model wybrać i dlaczego.

Czy NAPRAWDĘ potrzebuję młynka?

Tak. Po pierwsze, kawa mielona fabrycznie jest tylko pod ograniczoną liczbę metod – zwykłe zalewanie gorącą wodą albo pod kawiarkę. Nie nadaje się ona ani do espresso – zbyt grubo mielona, kawa wychodzi wodnista, nie można uzyskać esencjonalnego, gęstego naparu. Natomiast do ekspresu przelewowego, dripa czy chemeksa jest zmielona zbyt drobno. Będzie ona zatykać filtr, a czas parzenia wydłuży się zbyt mocno (gorzka kawa!).

Po drugie, kawa po zmieleniu w ciągu kilkunastu minut traci ponad połowę swoich właściwości smakowych i zapachowych (mówi się nawet o 75%!). Żadne opakowania próżniowe, szczelne zamykanie opakowań gumką czy klipsami bądź chowanie jej do lodówki pod cebulę na nic się nie zda.


Po trzecie, zauważcie, że kawy dobrej jakości nigdy nie są mielone, można je kupić tylko w całych ziarnach. Do mielonki idą tylko kawy słabej jakości (zawsze istnieje ryzyko, że prócz kawy może być coś jeszcze. Spotkałem się z opinią, że zdarzało się znaleźć przy testach laboratoryjnych, na przykład… cykorię. Ta kawą raczej nie jest…).


Po czwarte, można znaleźć tymczasowe rozwiązanie – mielenie u znajomego lub w sąsiedzkiej kawiarni. Czytałem ostatnio test, w którym udowadniają, że czasami lepiej zmielić kawę w bardzo dobrym młynku na zapas (tzn. na dwa, trzy dni), niż na świeżo w słabym. Trudno jednak co chwilę zawracać głowę nawet najlepszemu znajomemu bariście…

Podsumowanie

Kończąc powoli – młynki nie są wymagającym sprzętem, jeśli chodzi o konserwację. Wystarczy nie pakować do nich żadnych kaw smakowych, które niszczą żarna, oblepiając je olejkami, którymi są naszpikowane te ziarna. Gwarantuję Wam, że potem każda następna kawa, przez długi, długi czas będzie smakować Waszą śmietankową fantazją czy truskawką z czekoladą. Do tego dojdzie cudowny posmak zjełczenia tychże delicji. Ponadto, od czasu do czasu warto przedmuchać go sprężonym powietrzem oraz wyciągnąć żarna i oczyścić jakąś bardziej ostrą szczotką oraz odtłuścić, na przykład czystym alkoholem. I, raz jeszcze, ale nie zaszkodzi – młynek to inwestycja na lata. Najczęściej, jeśli kupi się sprzęt dobrej jakości, pozostaje on już z nami do końca lub do momentu, gdy dojrzejemy do decyzji o zakupie jeszcze lepszego modelu. Zatem, jaki młynek do kawy wybrać? Taki, który najbardziej odpowiada naszym potrzebom.
