Sencha czy matcha – czym się różnią?

Popularna w ostatnim czasie matcha jest herbatą bardzo specyficzną. Powstaje w wyniku specjalnej uprawy — w ostatniej fazie wzrostu krzewów herbacianych poddane są one zacienieniu, przez co produkują większą ilość chlorofilu odpowiedzialnego za intensywnie zielony kolor herbaty. Następnie listki są zbierane, suszone i ścierane na drobny proszek.
Sencha jest japońską liściastą herbatą, zwana jest również królową zielonych herbat. Powstaje ona z najwyżej rosnących i najświeższych listków. Podobnie jak w przypadku matchy, wcześniejszy zbiór oznacza wyższą jakość herbaty. Sencha jest klasyczną zieloną herbatą liściastą, która jest niezwykle bogata w kofeinę, i antyoksydanty. Jest jedną z najczystszych form herbaty — powstaje w wyniku suszenia listków, bez żadnej innej obróbki. Jest bogata w witaminę C, spowalnia proces starzenia się i redukuje stres oksydacyjny. Parzy się ją w około 70-80°C od 1 minuty do 3 minut w zależności od preferencji.

Matcha – czym się charakteryzuje?

Proces parzenia matchy wymaga użycia specjalnych narzędzi ponieważ matcha występuje pod postacią sproszkowanych listków, które zaparza się w całości przy użyciu specjalnych akcesoriów do matchy — czarki zwanej matchawanem, mieszadła chasen, łyżeczki do odmierzania chashaku i sitka. Temperatura parzenia matchy powinna oscylować w granicach około 60-80°C. Około 2 gramy proszku zalewamy 40 gramami wody i roztrzepujemy mieszadłem Chasen, zamiatając w kształt litery M.
Dzięki temu, że pijemy całe listki możemy cieszyć się nie tylko ich pełnym smakiem, ale też jej prozdrowotnymi właściwościami. Matcha to taka sencha na sterydach — jedna filiżanka patrzy daje nam tyle co wypicie około trzech filiżanek zwykłej herbaty.

Moya Matcha Chasen - Chasen Matcha Whisk
Traditional bamboo whisk or “chasen” is an indispensable tool of the Japanese matcha tea ceremony. The fine, handmade prongs are carved out in a single piece of bamboo. When using a chasen to whisk matcha it is best to keep a loose and relaxed wrist and make rapid zigzag motions in the shape of letter “W” or “M” – this helps to give matcha the ideal frothy texture.Tips for whipping up matcha:The traditional way to prepare matcha comes from the Japanese Tea Ceremony. It involves using a matcha bowl, a bamboo whisk- chasen and a bamboo spoon- chashaku. Place 2 chashaku spoons of matcha (1,5g) in a matcha bowl and pour 100ml of hot water (80 °C). Chasen in hand, vigorously whisk your matcha from the wrist in m-shaped, not circular, motion. In about 20 seconds your bowl should be filled with a perfect jade-green foam. Moya Matcha Chashaku - Chashaku Matcha Spoon
Chashaku is the traditional spoon for serving matcha and an integral part of the matcha tea ceremony. The curved portion of the spoon is used to scoop a small portion of matcha tea and place in a bowl (matchawan). The mixture is then whisked to uniform consistency using a bamboo whisk (chasen). The amount of matcha served depends on individual preference.Traditionally, thin tea or “usucha” is prepared with 1 chashaku of matcha (one teaspoon) and approximately 75-100ml of hot water.
