COFFEE
Finca El Guayacan is a three-hectare farm located in Acevedo in the Huila region, at an altitude of around 1550 meters above sea level. Its owner is Miriam Quesada Enciso, a second-generation producer who has been running the farm together with her husband, Libardo Enciso, since 2005. Miriam inherited the farm following a land division with her former husband, and since then she has focused on cultivating varieties with exceptional quality potential. The most important of these is Pink Bourbon—long believed to be a cross between Red and Yellow Bourbon, and now identified as a variety originating from Ethiopian landraces, valued for its extraordinarily high cup quality.
Fertile volcanic soils support coffee cultivation, and alongside coffee the farmers also plant plantains and cassava. During harvest, Miriam and Libardo ensure that cherry selection is as precise as possible—only ripe, red cherries are picked. To maintain a high work standard, they use a motivational system for pickers, offering higher wages and free meals. After hand-picking, the cherries are sorted via flotation, which helps remove lighter, lower-quality fruit. Next, the coffee is depulped, undergoes fermentation, and then moves to a separate drying station. There the beans are regularly turned to ensure even drying and avoid defects. The fully washed processing style brings out the full character of Pink Bourbon and preserves the highest clarity of flavor.
