ABOUT THE COFFEE
Fermented anaerobically for 40 hours, this Catuai brings delicious complex fruitiness, while fragrant chamomile and oolong add a refined, aromatic quality. In the cup, expect sweet strawberry, cherry, and guava. The lactic note is reminiscent of a fresh fruit yogurt or strawberry gelato!
ABOUT THE FARM
Vanessa Moreno and her family have been farming for several generations. Their farm, Fazenda São Felipe is located close to the city of Franca, in the Alta Mogiana region. Following her studies and time in the city, Vanessa returned to the family farm 5 years ago, with a desire to reconnect with nature and have a lasting impact on the environment and how things are done at the estate. Alongside her mother, Vanessa is leading all agricultural practices at the farm. Together, they have invested heavily in regenerative technologies. They have focused on reforestation at the estate and conserving water, bringing back the biodiversity that would have existed before the land was intensively farmed. During cultivation, all inputs with negative impact are decreased to a minimum and soil and plant health are actively restored.
ABOUT THE PROCESS
This lot underwent fermentation for 40 hours: the whole cherries are sorted and cleaned, before being placed in a sealed anaerobic environment. The fermented cherries were then dried on patios with the whole outside cherry intact. The anaerobic process is a great match for the terroir of Brazil, bringing superb depth to the profile.
