This tea, with its charmingly mild nutty-honey flavor, umami notes, and a light-colored infusion, originated in the Uji region. There, after selling the more valuable leaves and buds, farmers brewed their own tea from the remaining twigs and stems, creating a tea unlike any other: kukicha. In Japanese, “kuki” means twig and “cha” means tea. Kukicha works exceptionally well when cold-brewed using the cold brew method. Moya Kukicha comes from organic plantations on the island of Kyushu and is lightly roasted, giving it a more pronounced aroma.
Because the photosynthesis process that converts L-theanine into catechins does not occur in stems, kukicha has a high content of this relaxing compound and an exceptionally low caffeine level. It is recommended in the macrobiotic diet as an alkalizing beverage rich in calcium. It can be consumed by children, pregnant women, and the elderly. Alongside other Japanese green teas, it is a rich source of catechins and antioxidants.
