Nomad Coffee - Guatemala La Colina Pacamara Washed Filter 250g

FARM

The La Colina farm, named after the elevations of the land, and the hill on which it is located. It was Antonio Medina's father who decided to give this name to the farm. He inherited the plot from his father, who distributed his farm into smaller plots among all of his children. Initially, Antonio only planted corn and beans. But it had always been his dream to have a coffee farm. And from a very young age, when he still had nothing, he started working on different coffee farms to learn and gain experience.

In 1991 he planted the first coffee tree. Slowly but steadily, Tony increased the number of trees and production. After 25 years, Antonio concludes that his dream has come true. He acknowledges that perseverance has paid off.

He wants to plant other varieties to further improve their quality. Another plan he has in mind is to work with African raised beds to improve the drying and overall overall quality of the coffee.


PROCESSING

Antonio planted this famous variety of coffee on his farm even though it requires a lot of attention and care, and this beautiful lot is the result of this care. The coffee is carefully harvested at the peak of maturity and transported the same day to the pulpers in the wet mill. The coffee is pulped and left to dry ferment for 32 hours, a long, slow fermentation that works wonders for this special batch. The coffee is then carefully washed and left to dry on the patio. This coffee remains on the patio for 10 days and is turned frequently to ensure complete and even drying.
