ABOUT COFFEE
Behind this wild creation is Elmer Restrepo, a legend from Chinchiná, Caldas. Nearly four decades ago, he started working at a processing station – grinding, sorting, drying – where he learned the fundamentals of processing. Today, he owns his farm, El Renacer, where every step of processing is perfected to the highest level!
I’ve chosen the Colombian SL28, an incredibly fruity and fresh variety, which already promises an exciting flavor experience on your taste buds. On top of that, we add co-fermentation with ginger – in short: we prepare microbes (Lactobacillus and Saccharomyces), feed them ginger and a little panela (a fancy sugar), toss in freshly picked cherries, and let them sit for 72 hours. After fermentation and pulp removal, the coffee is dried until it reaches the perfect moisture level and stability.
What’s the flavor like, you ask? A total flavor festival. The co-fermentation takes the lead, but in the background, you'll find tangerine, lemongrass, high sweetness, and citrusy notes. No matter if you’re brewing pour-over, espresso, or using a moka pot – it always turns out great.
