ABOUT COFFEE
A Colombian Gesha from Nariño, grown at elevations reaching 1950 meters above sea level on the volcanic soils of the Buesaco region. Huver Castillo, a former mathematics teacher turned specialty coffee producer, runs the family farm El Paseo, where he focuses on precise fermentation and strict quality control.
The coffee undergoes a 20-hour pre-fermentation, followed by 210 hours of anaerobic fermentation in stainless steel tanks with the addition of sugarcane juice and hops. Drying on patios and a 30-day stabilization period in GrainPro bags help achieve a clean and complex profile.
In the cup, you’ll find dominant notes of jasmine, lychee, and ripe peach, supported by bright citrus acidity and a long, floral finish. An ideal coffee for pour-over methods (V60, Kalita, Origami), especially for those who appreciate refined Geshas and anaerobic fermentations.
